authentic philly cheesesteak

These Philly Cheesesteaks on the griddle are as close to authentic as you can get!  With Amoroso rolls, thinly sliced ribeye steak, and your choice of cheese, these Blackstone Philly Cheesesteaks are sure to be a new favorite griddle sandwich!

Blackstone Philly Cheesesteaks

hoagie-style rolls, about 9" long (Amoroso rolls are recommended)

onions (optional)

salt and pepper

American cheese (per sandwich)

provolone cheese (per sandwich)

Cheez Whiz

Add a small amount of your favorite cooking oil to the heated griddle surface and spread it around with your spatula.  Add the diced onions to the oiled griddle and sauté until translucent.  Season onions with salt and pepper, and move them to the cooler zone on your griddle to keep warm while the steak cooks.

Add the thinly sliced ribeye steak to the griddle in a thin even layer.  Using your spatula with one hand, hold a few pieces of steak in place as you use the bench scraper in the other hand to &quot;chop&quot; the steak slices.  As you&#39;re chopping the meat, you will use the scraper to kind of pull the steak away from the spatula in one fluid motion.  *If you&#39;re making cheesesteaks in a stovetop skillet, I recommend cutting the sliced ribeye into bite-sized pieces before adding it to the skillet.

When the steak is all chopped, continue to cook on the griddle stirring often, just until all of the pink is gone from the meat.  Do not overcook.

Season the steak with salt and pepper or your favorite all purpose seasoning.  Add some of the diced onions.  Mix together briefly.

Portion the steak into 3 even piles on the griddle that are each about the same length of your hoagie rolls.  Place cheese slices on top of each meat pile.  (Recommend 3 slices of cheese per sandwich - If using Cheez Whiz, you will add that later).

Immediately after adding the sliced cheese, place the hoagie rolls upside down and opened on top of the meat and cheese.  Allow the rolls to steam and the cheese to melt for about 2-3 minutes.  Then, use your spatula and transfer the cheesesteak to the rolls.  *Alternately - If using Cheez Whiz, place the rolls on top of the steak piles for about 2 minutes for the rolls to steam.  Then, add the steak to the rolls and top with warm melted Cheez Whiz.

Allow cheesesteaks to cool for a few minutes before serving.

Philly Cheesesteak Recipe

ribeye steak, (trimmed and sliced very thin)

coarse Kosher salt, (or to taste)

black pepper, (or to taste)

yellow onion, (chopped)

Tablespoons vegetable oil or canola oil, (divided)

hoagie rolls, (sliced 3/4 way through)

Tablespoons salted butter, (softened)

garlic clove, (finely minced)

mayonnaise

Freeze steak for 30 minutes so it is firm enough to be sliced into very thin strips using a sharp knife. Trim away any excess fat before slicing and be sure to slice as thin as you possibly can. Season with salt and pepper. Set aside.

Chop onions and set aside. Carefully split the hoagie rolls lengthwise approximately 3/4 of the way through with a serrated knife.

Combine softened butter and minced garlic in a bowl, mixing well. Spread the cut sides of the hoagie rolls with the garlic butter and toast on a griddle or skillet over medium heat until toasty and golden brown. Set aside.

Heat 1 tablespoon of oil in a large skillet or griddle over medium heat. Saute onions for 8-10 minutes until they begin to caramelize slightly. Transfer sauteed onions to a bowl and set aside.

Increase the heat to medium-high and add remaining tablespoon of oil to the same pan. Once hot, add the thinly sliced steak in an even layer. Cook for 2-3 minutes without moving or touching the meat in the pan to get a nice sear. Then  turn the steak slices over with a large spatula to cook on the other side until done. Add the sauteed onions back to the pan with the meat and stir together.

Use the spatula to separate the meat and onions into 4 portions in the pan. Cover each portion with 2 slices of provolone cheese and turn off the heat.

Spread a thin layer of mayo on the cut sides of the toasted hoagie rolls, then place one roll over a portion of the meat, onions, and cheese. Use a spatula to help flip the meat onto the roll to finish your Philly cheesesteak. Serve immediately.
