aviyal

Avial or aviyal is a traditional Kerala recipe made from mix vegetables, coconut and curd.

Firstly rinse and then drain all the veggies.&nbsp;

Then peel and chop them in medium to long thick sticks or batons. Keep aside.

For chopped unripe banana, keep them immersed in water so that they do not darken.

Beat 1 cup fresh curd and keep aside.

In a grinder take 1 cup grated coconut, 1 teaspoon cumin seeds and 2 to 3 green chilies (chopped).

Add ⅓ to ½ cup water and grind to a coarse paste. Keep this coconut paste aside.

Take the vegetables which take a longer time to cook in a pan or pot. I have added carrots, drumsticks and green beans (french beans) first.

Sprinkle ½ teaspoon turmeric powder and salt as per taste.

Add 1 cup water and&nbsp;stir well.

Cover the pan and keep it on a stove top on medium-low to medium flame.

Simmer till the vegetables are half cooked.

Then add the remaining vegetables which take less time to cook. At this step I have added plantain, mangalore cucumber (field marrow), ash gourd and pumpkin.

Mix it with the remaining half cooked vegetables.

Cover and continue to cook on medium-low to medium flame.

In between do check and if the water dries, you can always add more water.

Simmer till the vegetables are almost cooked.

Add the ground coconut paste.

Mix gently but well.

Let the mixture simmer for some 5 to 7 minutes or till the veggies are completely cooked. They should hold shape. So do not cook them too much. If the mixture becomes dry, then add some water.

When all the veggies are cooked, then reduce the flame to a low. Add the whisked curd.

Stir. And simmer for a minute and switch off the flame.

Add 1 to 2 tablespoons coconut oil.

Also add 12 to 15 curry leaves. Mix well. Then cover and let the flavors infuse for 5 minutes.

Serve avial with rice, kerala sambar and some papadums.

Avial is a mixed vegetable stew or curry cooked in a coconut and yogurt gravy. Seasoned with coconut oil and curry leaves, this gluten free side dish, made particularly during Vishu and Sadya meals is served with Sambar and Rice.

250 gms Ash Gourd (Poosanikai, Winter Melon)

250 gms Pumpkin (Kaddu, Parangikkai)

nos Avarakkai (Flat beans, Papdi)

250 gms Chena (Elephant Foot Yam, Suran, Jimikand)

nos Raw Banana (Plantain, Vazhakkai)

nos Carrots

nos Drumstick

Turmeric powder

½ cups Water to cook the vegetables (approx)

Salt

Curd (fresh and thick)

tsp Jeera or cumin seeds

6-7 nos. green chillies

Water

In a heavy bottom vessel, add all the vegetables. Try to place the drumstick, suran and vazhakkai at the bottom and the pumpkin, melon on the top as they cook faster.

Add water, just enough so that the vegetables partially sink. Now add turmeric powder and salt to taste.

Do not leave the avial unattended. You will need to mix at intervals to ensure even cooking. Carefully mix so that the vegetables do not break.

In a mixer jar, add freshly grated coconut, green chillies and cumin. Mince it just 1 or 2 tablespoons of water. It should resemble a thick paste. Keep this aside.

In a bowl, measure and add ¾ cup of thick curd. Whisk it well and keep aside.

Check the vegetables. It should be tender and easily cut with a knife. Always check the tougher vegetables like suran, vazhakkai and drumstick.

Once vegetables have cooked, add the coconut mix, followed by the curd. Add lots of curry leaves, mix gently, check salt and add some, if required. Switch off the flame. Do not boil or simmer after the curd is added.

Drizzle coconut oil and add some more curry leaves, as required and serve.
