Avocado corn salad with fresh basil, tomatoes and feta is a refreshing summer salad. 

Avocado Corn Salad

corn (shucked)

olive oil

tbsp white wine vinegar

garlic (grated)

jalapeno

avocados (diced)

cherry tomatoes (halved)

red onion (finely diced)

feta

tbsp thinly sliced fresh basil

tsp salt

Bring a large pot of salted water to a rolling boil, drop shucked ears of corn into the boiling water and cook for 2-3 minutes. Remove corn from water and run immediately under cold water (or place into an ice bath). Cut kernels off the cob.

In a large bow, whisk olive oil with vinegar, garlic and jalapeno. Add corn kernels, avocados, cherry tomatoes, red onion and crumbled feta. Toss to coat in dressing. Sprinkle with basil and salt, toss again and serve.

Grilled Scallops with Avocado Corn Salad

corn,

chili powder

avocado, peeled, pitted and diced

red onion

cilantro

chives

coriander

cumin

red pepper flakes

lime juice, plus more as needed

salt and freshly cracked black pepper

sea scallops, cleaned

Prepare grill for medium-high heat. Brush corn with 1 tablespoons of olive oil and season with salt, pepper and a sprinkle with chili powder. Grill, turning occasionally, until tender and lightly charred in spots, 6–8 minutes. Transfer to a cutting board and let cool, then cut kernels from cobs. Combine all the remaining ingredients in bowl and season with salt and pepper to taste.

Preheat grill. Brush scallops with oil and season with salt and pepper to taste. Grill the scallops for 2 minutes on each side until grill marks appear.

Arrange the corn salad on a large serving platter and nestle the cook scallops on top. Garnish with extra cilantro and/or chives.

Grill the corn on an indoor or outdoor grill until lightly charred. Remove kernels from the cob.

In a large skillet, heat the oil over medium high heat. Add the onion and poblano and sauté for 5-7 minutes until translucent. Add the green onions, and garlic and sauté for 60 seconds. Add corn and season with salt and pepper.

Remove from heat and taste and adjust as needed. Transfer to a serving bowl and let cool slightly. Add the herbs, lime, avocado, salt and pepper to toss to combine. Serve with extra limes if desired.

black beans

lime juice

In a small bowl, whisk together dressing ingredients and set aside.&nbsp;

Brush&nbsp;corn with oil and season with salt to taste. Grill over medium-high heat for 5-10 minutes, turning throughout, until kernels begin to char. Allow to cool slightly before using a sharp knife to cut kernels from the cobs.&nbsp;

In a large bowl combine spinach, chicken, pasta, grilled corn, avocados, black beans, cilantro, onions, and cheese. Pour dressing over the top and toss to combine. Serve immediately.
