An easy, excellent (5-minute) Avocado Cucumber Salad with the easiest lime dressing. This cucumber salad disappeared so fast and we all wished there was more of it.

Avocado Cucumber Salad Recipe

cucumbers

avocado

green onion (half of a bunch, chopped)

Tbsp lime juice (from 1 medium lime)

Tbsp extra virgin olive oil

salt

tsp black pepper

In a medium salad bowl, combine sliced cucumbers, avocado and chopped green onion.

Drizzle with 2 lime juice, 2 Tbsp olive oil and season with 1 tsp sea salt and 1/8 tsp black pepper or season to taste. Toss salad to coat with dressing and serve.

This healthy Avocado Cucumber Salad has a citrus dressing with cilantro and garlic. This salad is a great side dish to any meal! 

Cucumber and Avocado Salad

In a large bowl, combine cucumbers, avocados, and cilantro.&nbsp;

In a small bowl, whisk together garlic, salt, pepper, lemon and lime juice. Pour over cucumbers and avocados.

Chill for 30 minutes before serving.

Recipe video above. This is my favourite avocado salad. Cooling cucumber with creamy avocado, tangy lime juice, optional fresh herbs and my secret ingredient - a pinch of red pepper flakes which keeps things interesting! Doesn&#39;t make it spicy, more of a slight cooling hum of earthy warmth.

tsp chilli flakes / red pepper flakes

tsp cooking / kosher salt

Put all the salad ingredients in large bowl. Drizzle over lime juice and oil, sprinkle with salt, pepper and red chilli flakes.

Toss gently using your hands, gently separating the avocado slices as you go. Taste and add more lime if you want.

Tumble into a bowl and serve!

This avocado salad recipe is a quick, healthy side dish! It has a delicious combination of textures—creamy avocado plays off juicy tomatoes, crisp cucumber, and crunchy red onion and peppers. A bright lime dressing ties it all together.

Avocado Salad

jalapeño pepper (diced*)

red onion

cucumber

cherry tomatoes (halved)

Flaky sea salt (optional)

avocado oil

honey

garlic (grated)

sea salt

cumin

black pepper

Make the dressing: In a small bowl, whisk together the lime juice, avocado oil, honey, garlic, salt, cumin, and several grinds of pepper.

Set aside a little of the jalapeño, red onion, and cilantro for garnish.

Add the avocado to a medium bowl. Evenly arrange the cucumber, tomatoes, and remaining jalapeño, red onion, and cilantro on top. Drizzle with most of the dressing and gently stir. Be careful not to overmix. With too much stirring, the avocado will coat the other ingredients (think guacamole).

Top the salad with the reserved jalapeño, red onion, and cilantro and a little more of the dressing. Season to taste, adding more dressing or pinches of flaky sea salt as desired.

Serve immediately.
