Avocado Dressing

avocado

olive oil

water (or more for thinner consistency)

cilantro, basil or parsley leaves

lime (juiced)

garlic (minced)

salt and pepper (to taste)

Blend

Add all of the ingredients to a food processor. Blend until creamy and feel free to add more water for a thinner consistency.

Basil pesto is a fresh, aromatic, insanely flavorful sauce. It's light, refreshing, summery and couldn't be easier to make with a handful of fresh ingredients.

This zesty homemade Spicy Avocado Dressing takes the natural creaminess of avocado and blends it with lime, jalapeños, cashews, and garlic. Naturally gluten and dairy-free, you can use it on salads, as a dip, or for a finishing touch on all of your favorite Mexican dishes.

Spicy Avocado Dressing

raw cashews (soaked)

cilantro

garlic

jalapeño pepper (diced)

lime juice

water

tsp salt

If you haven&#39;t already soaked the cashews, you can boil them instead: bring a pot of water to a boil, then add the cashews and boil them for 15 minutes, which will soften them. Drain and rinse them under cool water.

Add all of the ingredients to a small blender or food processor and pulse until smooth, adding more water 1 tbsp at a time as needed. Enjoy!

Add the avocado, sour cream, minced garlic, salt, lime juice, and cilantro to a food processor or blender. Puré until smooth.

Add water, 1-2 Tbsp at a time, and purée again until it reaches your desired consistency (leave thicker for a dip, add more water for a pourable dressing).

This avocado sauce is creamy, delicious, and easy to make.

This creamy avocado dressing is delicious on salads, grilled or roasted veggies, and grain bowls. Stored in an airtight container in the fridge, it will keep for up to 2 days.

Combine the avocado, water, olive oil, lemon juice, dill, garlic, salt, and several grinds of fresh pepper in a blender. Blend until creamy, then transfer to a jar.

If the dressing is too thick, stir in a little more water to reach a drizzelable consistency, if desired.

This healthy Spicy Southwestern Salad recipe has roasted sweet potatoes, black beans, corn, lettuce, and creamy avocado dressing!

Spicy Southwestern Salad with Avocado Dressing

Preheat the oven to 400 degrees. Peel the sweet potatoes and chop into bite-sized pieces. Mix the olive oil, cumin, and chili powder together in a small bowl. Brush mixture on sweet potatoes. Roast for 10 minutes. Stir or shake the pan. Turn heat up to 425, and roast for another 10-15 minutes. Check, stir, and bake until the sweet potatoes are just barely roasty-brown on the outside. Season with salt and pepper.

Meanwhile, pulse all the dressing ingredients in a food processor until mostly smooth.

Toss the beans, corn, lettuce, and sweet potatoes with the dressing. Serve with chips and/or the other half of the avocado for extra yum!

Oh my goodness.  Saw this and had to run out and get some sweet potatoes.  I have all the other ingredients.  I don't like cilantro, so I substituted with Italian parsley.  This was a big hit with me and my husband.  Hubby likes side salads, but wants meat . . . with this salad he didn't need the meat or want the meat.  A delicious and fabulous salad.
