This Avocado Smothered Chicken is EVERYTHING you love about delicious avocado egg rolls, all smothered on top of a tender chicken breast and baked to perfection.&nbsp; Inspired by one of my favorite appetizers this brings the flavors into a wholesome and filling dinner. Made easy with just a handful of ingredients and one dish, you will love how fast this meal can be prepped and into the oven.

Avocado Smothered Chicken

lbs chicken breast (boneless, skinless, thinly cut)

avocados (large)

tomatoes

tbsp red onion (finely diced)

tbsp cilantro (finely chopped)

salt (divided

tsp black pepper

monterey jack cheese (shredded)

chili sauce

tbsp honey

tbsp rice wine vinegar

tsp sesame oil

cilantro (chopped)

Lay the chicken breast flat in a large baking dish. Season with half the salt and the pepper.

In a bowl, combine the avocado, sun dried tomatoes, red onion, cilantro, and the remaining salt. Stir, mashing the avocado and mixing everything together, until combined with chunks of avocado remaining.

Spread the avocado mixture on top of each chicken breast to cover. Top with the shredded cheese. Bake covered with foil at 375˚F for 25-35 minutes, or until the chicken is cooked through. Optional: remove the foil for the last 3-5 minutes and set the oven to broil to brown the cheese.

Garnish with extra cilantro and sun dried tomato if desired. Serve over rice or sautéed spinach and drizzle each chicken breast with sauce. Enjoy!

In a small bowl, whisk together all ingredients.&nbsp; Use 1 tbsp of chili sauce for a milder sauce and 2 tbsp for a spicier sauce.

These irresistible Crispy Avocado Egg Rolls with Avocado Ranch Dipping Sauce feature egg roll wrappers filled with diced ripe, Fresh California Avocados, sun dried tomatoes and fire-roasted corn kernels that are pan-fried until golden.

Crispy Avocado Egg Rolls with Avocado Ranch Dipping Sauce

ripe,

corn kernels (drained)

vegetable oil (for frying)

egg roll wrappers (not spring roll wrappers)

salt

½ large ripe, Fresh California Avocado (peeled and pitted)

ranch dressing

Add diced onion, sun-dried tomatoes, corn kernels, cilantro, avocado and salt to a large bowl. Gently toss ingredients with a spoon to combine.

Heat oil in a large, deep skillet over medium-high heat until hot but not smoking. You want enough oil to cover the egg rolls halfway.

Lay an egg roll wrapper on a cutting board with the corner facing you and brush egg onto edges of egg roll wrapper. Spoon about a tablespoon and a half of avocado mixture onto wrapper closer to the bottom.

Tuck the outer edges of the wrapper in over filling, then bottom edge and roll wrapper to encase filling. Repeat this process until all filling has been used. You should end up with around 10 egg rolls.

Working in two batches, use tongs to place egg rolls in hot oil, sealed side down. Cook for about 15-20 seconds, or until golden and crispy. Cook for another 15-20 seconds on the other side then use tongs to place egg rolls on a paper towel-lined plate.

Repeat this process with the second batch of egg rolls and set egg rolls aside while you prepare the avocado ranch dipping sauce.

Transfer the flesh of half an avocado to a small bowl and mash with a fork. Add ranch dressing and whisk ingredients to combine. Your sauce should have a thick, creamy consistency. Some small chunks of avocado will remain.

Transfer dipping sauce to a small bowl and place in the center of a large plate. Slice avocados in half on the diagonal and arrange around the dipping sauce cup. Enjoy!

Cheesecake Factory Avocado Egg Roll Recipe

Egg Roll wrappers

Large Avocado

tbsp Sun-Dried Tomatoes packed in oil

tsp Fresh Chopped Cilantro

tsp garlic salt (with parsley flakes)

tsp White Vinegar

tsp Balsamic Vinegar

Honey

Powdered Saffron

Chopped Cashews

Fresh Cilantro

garlic

Sugar

Pepper

tsp Ground Cumin

Olive Oil

In a bowl, stir together vinegars, honey, and saffron. Heat for one minute in the microwave

Puree this mixture in a blender adding cashews, 2/3 cup cilantro, garlic, sugar, pepper, and cumin. Pour into a bowl and add the oil. Stir and refrigerate.

Dipping Sauce

In a bowl, stir together avocado, tomatoes, 1 tsp cilantro, and salt. Add 1/3 of the mixture onto the center of each egg roll wrapper.

Position the wrapper so the corner is pointing towards you. Fold the bottom corner up over the filling. Fold the remaining corners up over the filling and brush the corners with egg to secure them in place. Roll up from the bottom folding the top corner over all. Seal with egg and repeat for remaining wrappers.

Fry egg rolls for 3-5 minutes or until golden brown.

Serve with dipping sauce.

These Avocado Egg Rolls are inspired by the Cheesecake Factory egg rolls, only healthier because they are not fried. An easy air fryer recipe or bake them in the oven!

Avocado Egg Rolls with Sweet and Spicy Dipping Sauce

The avocado (Persea americana) is a tree that is native to South Central Mexico, classified as a member of the flowering plant family Lauraceae. Avocado (also alligator pear) also refers to the tree's fruit, which is botanically a large berry containing a single seed.

In a medium bowl, combine avocado, lime juice, sundried tomatoes, onion, cilantro, salt and pepper, to taste. Gently toss to combine.

One at a time, place egg roll wrapper on a clean surface, points facing top and bottom like a diamond.

Spoon ¼ cup mixture onto the bottom third of the wrapper.

Dip your finger in a small bowl of water and run it along the edges of the wrapper.

Lift the point nearest you and wrap it around the filling.  Fold the left and right corners in toward the center and continue to roll into a tight cylinder.

Set aside and repeat with remaining wrappers and filling.

Spray all sides of the egg rolls with oil.

Preheat the air fryer to 400F. In batches, cook 400F for 6 minutes, turning halfway through, or until golden.

Meanwhile, in a small bowl, combine mayonnaise, sweet chili sauce and sriracha and serve on the side for dipping.

Air Fryer Directions:

Preheat the oven to 400F. Spray a sheet pan with oil.

Transfer the egg rolls to the baking sheet and cook until browned and crisp, about 16 to 18 minutes, turning halfway.

To Bake In The Oven:

Love these!  Great recipe for parties and very easy to make! Swapped fat fee Greek yogurt for Mayo.

I just made these tonight.  Definitely agree that it is like eating hot guacamole.  That could easily be solved by adding shredded chicken or some shrimp.  I’d personally add a sprinkle of salt to the egg rolls when they finish cooking.  The dipping sauce was ok, not great in my opinion. 

These were easy to make and delicious! I used my air fryer took about 7 minutes total.

Me and my husband really hated these, hot avocado is not a good flavor. We took one bite and threw the rest awah

The avocado mixture was delicious before I put in the egg roll wrapper and cooked it. I can’t deal with hot guacamole and that’s what this was. 

The texture of the warm avocado was not very appealing, the lime juice made it taste bitter, the ingredients on their own served cold tase delicious but too much avocado for it to be a hot food.  I would add some protein and a lot less avocado and no lime next time.  Unfortunately they ended up in the trash.

These egg rolls are a great alternative to the Cheesecake Factory ones. So tasty with less calories! I’m making these again. 

I Love this recipe. What could be substituted for the sun dried tomatoes? My daughter is allergic to tomatoes!

Super yummy!  If I freeze the extra egg rolls, how should I re-heat them?  Can I put frozen ones in the air-fryer or do I need to thaw?

I used wonton wrappers by mistake. Only 1/2 of the amount of filling fit and I was wondering why. I laughed when I realized my mistake. However, they were great. I cooked them in the air fryer for less than the recommended time since they were so small. Overall, it was a great mistake because I made them as appetizers along with some other varieties at the same time and was able to eat more of each variety since they were so small.
