Gulyás or goulash is the defining dish of Hungarian cuisine... But it is not a single dish but a &#x27;spectrum&#x27; of simple and hearty soups flavoured with lots of paprika. This version is a Hungarian bean goulash and as you would expect it is a real hearty treat!

Babgulyas Recipe a Hungarian Bean Goulash

(3.5 ounces) Streaky Bacon

(~1 Cup) Onion

(~1/2 Cup) Celery

(~1 Cup) Carrot

(~1 Cup) Parsnip

Garlic Cloves

300 g Beef Shin

Tbsp Caraway Seeds

Tbsp Sweet Hungarian Paprika

Tbsp Tomato Concentrate

Bay Leaves

Thyme

Litre Beef Stock

Tin Kidney beans

Tin Cannelini beans

Cut the bacon into a 1cm (1/2") dice.

Cut the onion, celery, carrot, parsnip

Peel and slice the garlic cloves into slices...

Peel and slice the garlic cloves into slices as thinly as you can.

Cut the beef into a 1.5cm dice.

Heat a 20cm (8") saucepan over a medium...

Heat a 20cm (8") saucepan over a medium heat.

Add the bacon and gently cook for 10...

Add the bacon and gently cook for 10 minutes or until the bacon is golden and has released some fat.

Add the carrot, celery, carrot, parsnip, and garlic...

Add the carrot, celery, carrot, parsnip, and garlic to the pan and cook for 10 minutes stirring occasionally.

Turn the heat down to low.

Add the beef, sprinkle over the paprika, caraway...

Add the beef, sprinkle over the paprika, caraway seeds and add the tomato puree, then stir to combine.

Pour in the beef stock, add the bay...

Pour in the beef stock, add the bay leaves and sprigs of thyme.

Finally stir in the beans, taste, and add...

Finally stir in the beans, taste, and add salt as required, then simmer on low for 2½-3 hours.

Set your InstantPot to saute mode and when...

Set your InstantPot to saute mode and when warm add in the bacon stirring continually.

When it has created a nice layer of...

When it has created a nice layer of bacon fat add in the onion and celery and saute for 5 minutes.

Now add in the garlic, caraway seeds and...

Now add in the garlic, caraway seeds and thyme and stir for 1 minute.

Then add in the beef and stir and...

Then add in the beef and stir and saute for another 5 minutes before turning off the saute mode.

Now sprinkle over the paprika and stir before...

Now sprinkle over the paprika and stir before adding the tomato puree, beef stock and bay leaves, once all combined have a quick test for seasoning and add salt and pepper as required.

Place on the lid and cook on manual...

Place on the lid and cook on manual high pressure for 8 minutes.

Then quick release the lid and add in...

Then quick release the lid and add in the diced parsnip, carrot and beans, again replace the lid and cook on manual under high pressure for 5 minutes, now is also a good time to check that seasoning again adding salt as required.

Allow a 10 minute natural pressure release and...

Allow a 10 minute natural pressure release and serve steaming hot.

This traditional bean goulash has a deliciously rich and smoky flavor profile and is packed with wholesome ingredients.  It&#039;s Hungarian comfort food at its best!

Hungarian Bean Goulash (Babgulyás)

pinto beans

lard, bacon grease

kolbasz, kielbasa

onions

celery

garlic (, minced)

carrots (, diced)

green bell pepper

Roma tomatoes (, diced)

potatoes

turnip (, (optional) peeled and diced)

tomato paste

genuine Hungarian paprika ((strongly recommended for the BEST flavor))

thyme

marjoram ((highly recommended

caraway seeds

bay leaves

black pepper

Aneto Chicken Broth

Heat the lard, bacon grease or oil in a heavy pot or Dutch oven and cook the onions until soft and translucent, 5-7 minutes.  Add the smoked sausage and cook for another 3-4 minutes.  Add the veggies and garlic and cook for another 5 minutes. Add the tomato paste and seasonings.  Stir to combine and cook for another minute or two.  Add the beans and stir to combine, followed by the smoked ham hock/neck bone and pour over the broth.  Bring everything to a boil, reduce the heat to low, cover, and simmer for 90-120 minutes.If using a smoked ham hock, shred the meat off the bone and return the meat to the pot.Serve as is or with some crusty bread, or ladled over Spätzle if you&#39;d like some more bulk, and/or with a green salad or cucumber salad.  If you like you can serve the babgulyas with a dollop of sour cream.  

This is a soup I come back to time and time again! It is packed with hearty flavours and so easy to make. Perfect on a cold winter day but works all year round if you ask me. Smoked hock is difficult to come by here in Sweden  so I usually swap it with a piece of ham. It is a bit leaner but does the trick. I also reduce the bean content as it would not fit in my trusty Dutch oven otherwise

Wow, my grandfather is from Hungary, I grew up on hungarian food and homeade Kolbasz. 

It’s winter here in Canada now and we finally got snow, that means bringing the kids outside for outdoor fun and coming back home to warm up, which is what makes this season my favorite. This is when I get to really dive into some of the Hungarian specialities I know and love. Soups and stews being my fav food. This recipe however, I have never had or tried, but any chance to use my soup cauldron is a blessing. and so is this dish! Right off the hop I went with the 3x option for infredients and it filled my cauldron to the brim perfectly.

Whether on accident or on purpose and whether it's better or worse than intended I made these changes:
My Carrots were thin so I used 2 more.
Only had 2 Turnips so I added 2 Parsnips. I couldn't find any Caraway locally but I was able to find Majoram, the issue is I read the substitution wrong. So instead of using Caraway, I used the Caraway portion worth of Oregano AND then also used Majoram. Oops! I also did not read the part about the Ham Hock being smoked. Bought 2 raw pieces then realized I had to prepare them. A seperate recipe called for them to be brought to a boil then simmered in 2qtz of water and 2 tablespoons of Herbs de provence and 1 tablespoon of italian seasoning (or just 3 of one or the other). I prepared other ingredients while this simmered for about 1.5 hours. I was spooning impurities as it cooked and I let the liquid slowly reduce. I then used the remaining broth in the stew when it was ready to add broth, as well as 11 cups of chicken broth. Finally, I went with Canned Beans and canned diced tomatoes which were added in the last 30 min of simmering. I may have used a bit more beans then the recipe called for as well to fill out the rest of the broth. 2 Large cans Diced Tomatoes, 2 Large cans Black Beans, 1 Small can Lentils,  1 Large can White, 2 Large cans Red Kidney Beans, and  2 Small cans Cannellini Beans. (Writing this at work from memory, can't recall exact measurements of cans).

P.S. Sorry for the novel but I wanted to be clear with the OP that finding this recipe and enjoying it as part of my top 3 personal dishes now was an incredible discovery. Even coming from the background and experiencing my great grandmother's Hungarian cooking. As well as how the recipe turned out on the first try even with the 3x amount. And then for anyone else reading this and coming across some of the issues I did on my own end and/or using canned ingredients to maybe save some time.

This was excellent!  For a stew that is largely meatless this has such a wealth of flavor and depth, our whole family loved it.  I made it a second time, doubling the batch for leftovers, and it was even better the next day.  Thank you for this new-found favorite!

Delicious!  I used Navy Beans and they turned out perfectly creamy after 90 minutes.  Next time I’m going to cut the potatoes into 1/2 chunks as the smaller slices I used disintegrated after 90 minutes.  Started off preparing in my Dutch oven, but had to switch to my 7qt Soup pot to fit it all.

1. lépés

A babgulyás elkészítéséhez forró zsiradékon megpirítjuk a finomra aprított vöröshagymát, rajta megfuttatjuk a zúzott fokhagymát és a köményt. Rátesszük a felkockázott marhahúst, pár percig dinszteljük, amíg a hús kifehéredik. A tűzről lehúzzuk, megszórjuk pirospaprikával elkeverjük, és felengedjük annyi vízzel, amennyi bőven ellepi.

2. lépés

Amíg a leves felforr, az előzőleg beáztatott babot előfőzzük: bő vízben, a forrástól számított 5 perc múlva a puffasztó levét leöntjük, a forró babot a forró leveshez adjuk. (Hideg vízhez ne adjuk, mert a forró bab megedződik, és nehezebben puhul meg.) Ha kell, vizet öntünk rá, hogy bőven ellepje.

3. lépés

A levest fűszerezzük sóval, borssal, majoránnával, babérral, és takarékon főzzük tovább. Amikor félpuha a hús, belerakjuk a zöldséget, a zöldséglevél-csokrot, az egész paprikát, a paradicsomot, és további vizet adunk hozzá, sóval, fűszerekkel utánaízesítjük, majd takarékon puhára főzzük.

4. lépés

A főzés ideje alatt a tojásból, a lisztből, egy csipet sóval, egy kis tálban kemény (levestészta keménységű) csipetke tésztát gyúrunk, kicsit pihentetjük, majd enyhén lisztezett tálcára csipegetjük.

5. lépés

Amikor a hús és a bab puha, a csipetkét is beleadjuk, és pár perc alatt készre főzzük.

6. lépés

Tálalás előtt a főtt zöldséglevél-csokrot, zöldpaprikát, paradicsomot eltávolít juk a bablevesből .
