Savory Bacon Cheddar Muffins

bacon

bacon drippings

milk

all-purpose flour

brown sugar

baking powder

cheddar cheese

Bake and crumble bacon

Lay bacon out on a baking sheet in an even layer. Place the baking sheet into a cold oven. Set the temperature to 400 degrees and set a timer for 20 minutes. After 20 minutes check the bacon and remove when crispy. Transfer to a paper towel lined plate to drain. Reserve the drippings and measure out 1/3 cup. Once the bacon is cool, crumble it.

Make muffin batter

In a medium mixing bowl, combine the egg, milk, flour, sugar, baking powder, and bacon drippings. Stir until combined. There will still be some lumps. Stir in the bacon and cheese until evenly distributed.

Bake muffins. Serve

Divide the batter among a lightly greased muffin tin. Bake at 400 degrees for about 15 minutes, until golden brown. Remove from the pan and cool or eat warm.

Cheese and bacon muffins are the best savory muffin out there! Simple to whip up, they’re studded with real bacon, tasty cheese and scallions.

Cheese and Bacon Muffins

all-purpose flour (plain flour)

½ tsp kosher salt

½ tsp ground black pepper

tsp baking powder

tsp baking soda (bicarbonate soda)

buttermilk (regular

vegetable oil

bacon (diced)

cheese cheese

scallions (finely sliced)

Set oven to 400ºF/200ºC. Line or lightly grease a 12-cup standard sized muffin pan and set aside.

Put all the dry ingredients into a bowl and stir to combine.

Put the buttermilk, oil and egg into another bowl and whisk to break up the egg. Pour this wet mix into the dry ingredients and stir gently until it’s about halfway mixed, with clumps of flour still visible.

Add the bacon, cheese and scallions and stir until everything is just mixed together. A little lumpy is ok - if you overmix the finished muffins will be too tough.

Divide the mixture between the muffin cups and bake until the muffins are puffed, just cooked through and golden brown, about 15-20 minutes.

Remove the muffin pan from the oven. Let the muffins cool for 5 minutes before turning out onto a cooling rack. Serve warm or at room temperature.

Regular Oven

Set oven to Combi Steam, 350ºF/180ºC. If your oven has variable steam settings, select 30% humidity. If not, don&#39;t worry! Just set to combi steam at the correct temperature and the oven will work out the humidity for you. Line or lightly grease a 12-cup standard sized muffin pan and set aside.

Divide the mixture between the muffin cups and bake until the muffins are puffed, just cooked through and golden brown, about 12-15 minutes.

These bite sized savory cheese and bacon muffins are packed with flavor. Perfect for breakfast, brunch, or snacking in between.

Bacon Cheddar Muffins

bacon chopped ((or 1-2.5 ounce bag of store-bought real bacon bits))

chives

salt

cayenne pepper

unsalted butter, melted

sour cream

Preheat oven to 375 degrees.

In a large mixing bowl, combine flour, baking powder, cheese, bacon, chives, salt and pepper.

In a separate bowl, combine melted butter, sour cream, and milk.

Combine wet ingredients with dry ingredients. Batter will be thick.

Spoon batter into a greased mini muffin pan.

Bake for 15-20 minutes until muffins are golden and a toothpick inserted near the center comes out clean.

Can I add an egg to the mix, and can I add ricotta cheese to the cupcakes?

Yum! These look awesome! I can't wait to try them out - I like that they are different than most "muffins" and I know my kids will love them, which of course is a priority with my picky ones!
