Step 1

Arrange a rack in the middle of the oven and heat the oven to 400ºF. Line a rimmed baking sheet with aluminum foil. Arrange 8 bacon slices in a single layer on the foil. Bake until browned and crisp, 19 to 20  minutes.

Step 2

Meanwhile, prepare the toppings and cook the burger patties. Place 1/4 cup mayonnaise, 1 tablespoon ketchup, and 2  teaspoons sweet pickle relish in a small bowl and stir to combine. 

Step 3

Remove the leaves from 1/2 medium head iceberg lettuce until you have 8 burger-sized leaves. Using a serrated knife, slice 1 beefsteak tomato crosswise into 4 slices. Split 4 hamburger buns and spread 2 tablespoons yellow mustard on the cut sides of the top buns, evenly spreading it to the edges.

Step 4

Divide 1 pound ground chuck into 4 portions, then form each portion into a ball. Press each ball into a patty about 1/2-inch wider than the hamburger buns. Sprinkle the patties all over with 1 1/2 teaspoons kosher salt and 1 teaspoon black pepper.

Step 5

Heat 1 tablespoon of the vegetable oil in a large cast iron skillet (at least 12 inches wide) or griddle over medium-high heat until shimmering. (If using a smaller skillet, cook the buns and burgers in 2 batches.) Tilt the pan so the oil coats the bottom. Place the mustard buns in the pan mustard-side down, gently press down on them, and cook until toasty and browned in spots, 2 minutes. Transfer to a plate.

Step 6

Place the bottom buns cut-side down in the pan and cook until golden brown and toasted, 45 seconds to 1 minute. Transfer to the plate with the mustard buns. Reserve the pan.

Step 7

When the bacon is ready, transfer to a paper towel-lined plate and cut or tear in half crosswise.

Step 8

Heat the remaining 1 tablespoon vegetable oil in the pan over medium-high heat until shimmering. Tilt the pan to coat the bottom with oil. Add the burger patties (cook in 2 batches if needed) and press on each patty with the back of a flat spatula. Cook until the bottoms are deeply browned  and the patty is halfway cooked,  about 2 1/2 minutes. Flip the burgers and place 1 slice of cheese on each patty. Cook for 2 to 2 1/2 minutes more, depending on desired burger doneness.

Step 9

Transfer to a plate and let rest for 5 minutes. Meanwhile, spread  the mayonnaise mixture on the cut sides of the bottom buns, spreading to the edges. 

Step 10

Assemble the burgers: Place a patty on each bottom bun. Top each patty with 4 bacon pieces, 1 tomato slice, 2 lettuce leaves, and the top bun.

Slice the onions into ¼ inch rounds discarding the roots and outer skin. Separate the rings and set aside.

Place a large skillet over medium heat. Once hot, add the olive oil, onions, salt, and pepper, stir to coat the onions in the oil and seasonings. Cook, stirring occasionally for 15 minutes until the onions are translucent and starting to soften.

Pour the Coca-Cola into the skillet and stir to combine. Continue to cook the onions until they are caramelized, browned, soft, and almost all of the liquid is cooked out, about 15-20 minutes. Remove from the heat and set aside.

Make The Coca Cola Caramelized Onions

While you are cooking the onions, make the burgers. Mix the ground beef, bbq sauce, garlic powder, onion powder, salt, and pepper in a large bowl until combined. I feel using my hands makes it easier to mix.

Divide the meat into 6 even portions and make them into patties, make an indention in the middle of the burgers so they don’t plump in the center while grilling,  place on a sheet tray until ready to grill.

Preheat the grill over medium-high heat. Once hot, add the burgers, cook for about 5-8 minutes on the first side, flip them over and continue to cook until your desired temperature is reached. Do not overcook, at 165°F they are well done. Take off the heat and add a slice of cheese to each burger to melt.

Make The Hamburger Patties

Place a bottom of a brioche bun on your serving plate. Top with lettuce and a slice of tomato. Add a burger patty followed by a piece of bacon broken in half so it will fit. Top with the Coca-Cola onions and add the top bun. Serve immediately.

Preheat grill to medium high heat, approximately 375-400 degrees F.

Form ground bison meat into four 1/4 lb. patties.

Season with salt and pepper on both sides.

Clean grill grates and spray with cooking spray or rub with olive oil soaked rag.

Place burgers on the grill. Grill the first side for 4 minutes, with closed grill. Flip burger and grill the other side for 3 minutes with closed grill.

Then, place a slice of cheese on each burger and close the grill. Let the burgers cook and cheese melt for 1 minute and remove from grill.

The Cheeseburgers (Bison Burger)

To a plate add a wedge of lettuce, then bison cheeseburger, top with cooked bacon (I slice mine in half and criss cross them), a slice of tomato, red onion, pickles and a condiment of your choosing.

Bacon Cheeseburger with Secret Sauce

lb turkey ((I use organic Fulton Farms*))

white onion, sliced thin

olive oil spray

Tbsp non-fat Greek yogurt ((45 g))

Tbsp pickle juice ((45 g))

Tbsp sweet relish ((30 grams, or dill if you hate it!)*)

Tbsp honey mustard ((7 g, feel free to use yellow mustard instead*))

Tbsp ketchup ((7 g))

brioche hamburger bun*

Tbsp burger sauce ((30 grams))

turkey burger

cheddar ((14 g))

Tbsp Caramelized onions ((15 g))

bacon, cooked*

tomato slices ((50 g))

sliced pickles

Weigh and season the meat.

Weigh the meat into 4 oz balls and place them on a plate or sheet pan. Season the balls liberally with a thick pinch of kosher salt, a good sprinkle of garlic powder, and a few cracks of pepper.

Cook the patties.

Heat a heavy-bottomed pan to high heat. Spray with a light mist of avocado oil spray. Carefully smash the meat flat, then add the patties to the pan, seasoned-side down. Season the uncooked tops while they cook for about 2-3 minutes, then flip, add sliced cheese, and cook the other side for a couple of minutes to cook through.

Caramelize the onions.

To caramelize the onions, add sliced onion to a hot pan, spray with a mist of olive oil spray, and sprinkle with kosher salt. Cook hot for a minute or two and then turn it down to medium and cook for 15-20 minutes stirring occasionally until soft and sweet.

Make the burger sauce.

Make the burger sauce by stirring together your Greek yogurt (reduced fat mayo is great too for just a few more fats), pickle juice, relish, honey mustard, and ketchup. Set aside.

Assemble and enjoy.

Spray the buns with olive oil spray and toast on a skillet. Top the bottom bun with 2 Tbsp of the burger sauce, then build your burger topped with lettuce, tomato, 1 slice of bacon, caramelized onions, and sliced pickles. Dig in!
