This easy bacon grease gravy recipe is full of rich flavor from cooked bacon and caramelized onions. It&#39;s perfect for drizzling on mashed potatoes, biscuits, Thanksgiving turkey, and so much more!

Bacon Grease Gravy

unsalted butter

sweet yellow onion

thick-sliced smoked bacon, (chopped)

all-purpose flour

turkey, chicken, beef, pork

salt and black pepper, (to taste)

In a large skillet over medium heat, cook the chopped bacon until browned. Transfer the bacon pieces with a slotted spoon to paper towels to drain. Pour out any drippings in excess of 2 tablespoons.

In a large measuring cup or bowl, combine the cooked bacon with the stock. Allow the bacon to soak in the stock for 15 minutes. This will soften the bacon and infuse the stock with flavor.

Pour out any drippings in excess of 2 tablespoons. Add the butter and heat the mixture over medium heat until butter melts.

Cook the onions in the butter until golden brown and starting to caramelize.

Sprinkle the flour over the mixture and whisk it to blend. Cook, whisking constantly, until the flour becomes a light golden color, about 2 minutes.

Still stirring, slowly add the stock-bacon mixture to the skillet. Bring to a boil and cook, whisking constantly, until the gravy thickens slightly.

Transfer the mixture in batches to a blender or food processor. Process on high until the bacon breaks down and is pureed into the broth, about 3 minutes.

Pour through a metal strainer, pressing on solids, back into the skillet and continue cooking over medium heat, whisking constantly, until mixture bubbles. If it&#39;s too thick, add a little more stock until it&#39;s the consistency you like. If it&#39;s too thin, cook for 5 to 10 minutes until it reduces slightly and thickens.

Season the gravy with salt and pepper to taste. Serve immediately. Makes about 3 cups.

Southern Bacon Gravy (For Biscuits)

milk

Tablespoons flour

bacon

biscuits ((pre-cooked, or bake them while cooking bacon))

Cook bacon in large skillet until crispy. Remove cooked bacon to paper towels to absorb grease. When cool, crumble bacon into small pieces. Set aside.

Do NOT clean skillet. Leave 2 Tablespoons bacon grease in skillet. Discard the rest.

In separate bowl or container, whisk together milk, flour, salt and pepper, until lump-free. Pour the milk/flour mixture into skillet with remaining bacon grease. Add crumbled bacon pieces. Heat mixture on medium (whisking/stirring constantly) until it comes to a boil; reduce heat a bit, and continue cooking and stirring, until gravy has thickened (5-6 minutes). Give it a taste test.

Add additional salt and pepper, to taste (I ALWAYS add more). Once gravy has thickened, add 1-2 Tablespoons cold butter. Stir until butter is melted, incorporated into gravy, and mixture is heated through.

Slice warm biscuits in half horizontally. Place biscuit halves onto serving plate. Spoon hot gravy over each half. Serve and enjoy!

Creamy Bacon Gravy is a hearty, delicious gravy made with just 5 simple ingredients. Serve over biscuits for a satisfying country breakfast, brunch or dinner! 

Creamy Bacon Gravy

Slices Bacon (thick cut works best)

Tablespoons All Purpose Flour

Salt

-1 teaspoon Black Pepper (to taste)

Optional additional seasonings to taste: Seasoned salt (garlic powder, cayenne pepper, dried sage)

Cook the bacon according to the instructions on the package.

Remove from the pan and pour out half of the bacon grease. (You should have about 3 tablespoons of bacon grease in the pan.)

Once the bacon has cooled slightly, cut the slices into small pieces. Set aside

Place the pan back on the stove over medium heat and sprinkle in the flour.

Whisk continuously until the flour starts to bubble and turns a light brown color.

Whisk in the salt and pepper and let the mixture thicken for another 30-45 seconds.

Pour in the milk and whisk the entire time.

Continue whisking and cooking until the gravy starts to simmer.

Reduce the heat to low medium and whisk until the gravy thickens (about 5 minutes).

Mix in the bacon pieces and remove from the heat.

Let it cool for 3-4 minutes to allow it to thicken more before serving over biscuits.

Store leftover gravy in an airtight container in the refrigerator for up to 3 days.

I happened on your recipe by accident but I am so glad I did. I have never been able to make gravy that tasted just like my mom's and thanks to you I just found out how she made it. oh, it was sooooooo, delish,  made 2 batches, great to freeze for the following weekend, tried and true recip, I added garlic, cayenne and a bit of sage,  oh my !!!
