Baileys Chocolate Cupcakes made with chocolate cupcake, Baileys chocolate ganache filling &amp; Baileys frosting! These cupcakes are delicious!

Baileys Chocolate Cupcakes

unsalted butter

(207 grams) sugar

eggs

tsp vanilla extract

tbsp (90 milliliters) water

tbsp (43 grams) Hershey’s Dark Cocoa Blend

(130 grams) all-purpose flour

tsp baking soda

tsp salt

tbsp (90 milliliters) milk

(112 grams) salted butter

(95 grams) shortening

(460 grams) powdered sugar

tbsp (14 grams) cocoa

4-5 tbsp (60-75 milliliters) Baileys

Chocolate sprinkles

oz semi sweet chocolate chips

tbsp (75 milliliters) Baileys Irish Cream

Preheat oven to 350°F (176°C) and line cupcake pan with cupcake liners.

. Beat butter and sugar until light in color and fluffy, about 3-4 minutes.

. Add eggs one at a time, beating just until blended.

. Add vanilla, water and cocoa powder to another bowl and whisk until smooth. Mixture will be thick.

. Add chocolate mixture to batter and mix until combined. Scrape down the sides of the bowl as needed to make sure everything is well combined.

. Combine flour, baking soda and salt in a separate bowl.

. Alternate adding the flour mixture and milk to the batter. Begin by adding half of the dry mix, then mix well. Add the milk and mix well, scraping down the sides as needed. Add the remaining flour mixture and mix until smooth.

. Fill cupcake liners about 3/4 way. Bake for 15-17 minutes, or until a toothpick inserted comes out with a few crumbs.

. Allow cupcakes to cool about 2-3 minutes, then remove to a cooling rack to finish cooling.

0. To make the frosting, combine the butter and shortening in a large bowl and mix until smooth.

1. Add 2 cups of powdered sugar and mix until smooth.

2. Add the cocoa, vanilla extract and 4 tablespoons of Baileys and mix until smooth.

3. Add remaining powdered sugar and mix until smooth.

4. Add remaining Baileys as needed and mix until smooth, keeping an eye on the consistency of the frosting so it doesn’t get too thin. Set aside.

When the cupcakes are cooled, make the chocolate ganache. Put the chocolate chips in a heat-proof bowl.

Combine the Baileys and heavy whipping cream in a microwave safe bowl or measuring cup and heat in the microwave until it just begins to boil.

Pour the hot cream over the chocolate chips and whisk until smooth.

Cut out the centers of the cupcakes. You can use a cupcake corer or a knife.

Fill the centers of the cupcakes with chocolate ganache.

Pipe the frosting onto the cupcakes. I used Ateco tip 808, a large round tip.

Use the remaining chocolate ganache to pipe onto the cupcakes for decoration, then add sprinkles if using.

Refrigerate cupcakes until ready to serve. Serve at room temperature. Cupcakes are best for 2-3 days.

I did this Brooke! I made an alcohol free batch and then a 21+ batch and it is hard to tell the difference. The flavor is a little stronger in the real Baileys batch, but it is still there in the creamer one! Great tip! Thanks!

I made these cupcakes for my family and they were a big hit!!! I used a Godiva chocolate liquor instead of the Bailey's and used it in the batter.  I also chose not to use the ganache in the center - only on the top over the frosting.

These Baileys Chocolate Cupcakes are made with a moist chocolate cupcake, Baileys chocolate ganache filling and Baileys frosting!

Baileys Cheesecake

Oreo cookies

tbsp. butter, melted,

kosher salt

(8-oz.) bars cream cheese,

c. sugar

cornstarch

c. Baileys Irish Cream

pure vanilla extract

heavy cream

c. semisweet chocolate chips

Preheat oven to 325º and butter an 8" or 9" springform pan. Make crust: In a food processor, blend Oreos with melted butter and salt. Pat into a springform pan and set aside while you make filling.

Make cheesecake: In a large bowl using a hand mixer, beat cream cheese and sugar until completely smooth and fluffy. Add cornstarch, then add eggs. Add Baileys and vanilla.

Pour batter into crust and place on a large baking sheet.

Bake until center of cheesecake is only slightly jiggly, 1 hour 20 minutes to 1 hour 30 minutes. Let cheesecake cool in oven, 1 hour, then refrigerate until completely cool, 4 hours or up to overnight. (If you'd like to use a water bath, tightly wrap outside of springform pan with two layers of aluminum foil. Transfer to a deep roasting pan and pour in enough boiling water to reach halfway up the cheesecake pan. Bake as directed.)

When ready to serve, make ganache: In a small saucepan over low heat, heat heavy cream. Place chocolate in a heatproof bowl and pour hot cream on top. Let sit 3 minutes, then stir until creamy, until no lumps remain. Refrigerate ganache until slightly thick, 15 minutes, and spread all over cheesecake. Let set 10 minutes, then serve.

Cooked cheesecake at temperature for time listed & then turned oven off and left to cool for one hour. 
It was so brunt tasting 🤮 No Baileys taste, just burnt.. Waste of time and ingredients.

I'm making this for family dinner on St Patrick's Day. I'm only serving 4 people and I don't want too many left overs. I was also a bit alarmed by the high fat & high carbs but I didn't want to lose the flavor so I subbed the full fat  cream cheese with a 1/3rd fat version, halved the quantities of all ingredients and baked it in an 8" cake pan. The filling  still came up to the top of the pan. I checked it after 1hr 10mins in case it cooked quicker but it took the full 1hr 20m.
I think it will still be delicious and it'll only be 400 calories per slice (1/10th of the cake) instead of 800 😱😱
