baked chicken enchiladas

These Easy Chicken Enchiladas are made with shredded rotisserie chicken for a hearty and flavorful meal. Shredded Chicken Enchiladas are cheesy, creamy and delicious, and the enchilada sauce is to die for! A perfect dish to feed a crowd on a busy weeknight!

Easy Chicken Enchiladas Recipe

butter

flour

red enchilada sauce

chicken broth

canola oil

yellow onions (diced)

green chiles

rotisserie chicken shredded ((about ½ rotisserie chicken))

cumin

chili powder

salt

black pepper

oz queso fresco (crumbled)

sour cream

Monterey Jack (shredded and divided)

flour tortillas

cilantro (chopped)

Preheat

Melt

In a small pan over medium heat, melt butter and add flour. Stir constantly and cook. Add enchiladas sauce, broth, salt, and pepper and stir. Bring to boil; reduce heat and simmer, stirring occasionally,  while preparing the other ingredients.

Heat

In a large pan, heat oil until shimmering. Add onions cook, stirring, 5 to 7 minutes until translucent.

Stir

Stir in the full can of diced green chilies, cumin, and chili powder and chicken.

Turn off the heat and add sour cream, queso fresco, and 2 cups of shredded Monteray Jack cheese. Stir until well combined and the cheese is melted.

Fill

Remove enchilada sauce mixture from heat. Spread 1/2 cup of the sauce in the bottom of an 9x13-inch baking dish. Working with 1 tortilla at a time, fill with 1/3 cup of chicken filling, roll tightly, and place seam-side down in baking dish.

Repeat

Pour

Pour remaining sauce over rolled enchiladas and sprinkle with remaining Monterey Jack.

Bake

Bake until cheese is fully melted and bubbly, 25 to 30 minutes. Remove from oven and let rest 5 minutes. Top with cilantro and serve.

Easy Chicken Enchiladas

Chicken Enchiladas

onion,

chicken breasts (1 lb.), boneless and skinless, diced into 1/2-inch cubes

jalapeño peppers, finely chopped

salt (or

black pepper (or

red enchilada sauce (homemade

fresh cilantro, finely chopped (for serving)

sour cream (for serving)

Heat oil in a large skillet for 2 minutes over medium high heat until sizzling hot. Add onion and sauté until tender, about 2 minutes.

Add diced chicken and stir well to cook evenly until fully cooked through, about 6-8 minutes.

Add jalapeño, salt, pepper and 2 tablespoons enchilada sauce. Stir well until evenly combined. Set it aside.

Prepare the Chicken:

Add and evenly spread 2 tablespoons enchilada sauce on the bottom of a 9x13 baking pan. 

Evenly spread 1-2 tablespoons enchilada sauce on each tortilla wrap.

Sprinkle 1/4 cup shredded cheese across the centre, and add 2 tablespoons of the chicken mixture on top.

Carefully roll up each tortilla wrap with chicken filling and arrange them in the baking pan with the seam side down.

Pour and spread the remaining sauce evenly over top, and sprinkle the remaining cheese on top. 

Assemble the Enchiladas:

Bake at 350°F for 15-20 minutes until the melted cheese turns golden brown. Let rest for 5 minutes.

Serve warm with cilantro and sour cream, if desired.

The recipe is great except it definitely needs more sauce!

Used thighs instead of breasts, seasoned those with salt, pepper, garlic powder, cumin and chili powder. Cut the recipe down because there's only two of us, and upped the sauce to suit our saucy desires. Store bought sauce and tortillas, but babe never minds. I should have made more filling, but my wrap game is terrible and I hesitated, causing them to be slightly underfilled, but this isn't a recipe issue, it's a me issue. The heat in the enchilada itself was just enough, and this very well may become my go to (after lazy enchiladas, of course, which is a few steps shorter than this). Nice.
