Cut the chicken into small bite sized pieces.

Put the olive oil in one bowl and the breadcrumbs, panko and parmesan cheese in another.

Season chicken with salt and pepper, then put in the bowl with the olive oil and mix well so the olive oil evenly coats all of the chicken.

Put a few chunks of chicken at a time into the breadcrumb mixture to coat, then on the baking sheet.

Lightly spray the top with olive oil spray then bake 8 - 10 minutes. Turn over then cook another 4 - 5 minutes or until cooked through.

We love these! Especially good when chicken is marinated in pickle juice overnight and then prepared accordingly to directions.

So good! Easy to make! My pucky daughters loved it!

I made these last night for the first time and they were absolutely delicious. Thanks for sharing.

Absolutely amazing!!! My daughter's favorite meal is Chick-fil-A nuggets, but she thought these nuggets were just as good! So much healthier for her, cheaper, and easy to make.

Love these! Do you think these would freeze well? Would you freeze before or after baking?

The best. And easy. I add some cayenne as I like some spice.

Kids and adults alike will love these! I appreciate that you don't have to dip them in an egg mixture first, it really streamlines the process and makes for less of a mess!

My son adored these! He just turned 4 and helped me pick a ton of recipes from Pinterest. These are the best looking and best tasting breaded chicken I have ever made!

I did not find them soggy at all. Mine were wonderful and juicy on the inside, and quite crunchy on the outside.

I misread the recipe and was dunking each piece of chicken (we had grabbed organic thighs) in the oil, and then coating. So we went through a lot more oil, and I think thus ended up with a lot more coating on each nugget, no complaints here ;)

I had a dark cooking tray, with parchment paper laid down. I also did not have an oil spray, so we skipped that step.

I just made these and they were absolutely delicious! Thanks for all of your great recipes that have helped me eat healthier and enjoy some of my favourite foods while lowering calories.

After 18 minutes... these were still soggy and not browned for me. I'm sure it's just me, but is there anything i should try to prevent that next time?

These healthy chicken nuggets are by far the best we have ever tasted! They are way better than any frozen nuggets you might find at the supermarket and they have no questionable ingredients! I used Trader Joe's All Natural Boneless Skinless Chicken Breasts, which we love, and we have made them three times already! I'm sure they would taste great with good quality chicken breasts from any source, Not only are they perfect for kids but adults love them too! While I would never have eaten a fast food or
a packaged frozen chicken nugget, I love these and they taste amazing!

These nuggets are made with real chicken breast meat and baked, so you don't get all of that excess oil—they really are the best ever!

The Best Baked Chicken Nuggets

chicken breast (cubed)

bread crumbs

Parmesan cheese

basil

oregano

salt

butter

Preheat oven to 400°F (205℃). Lightly grease one to two baking sheets.

Cube 2 pounds boneless skinless chicken breasts into bite-size nugget pieces.

In a small mixing bowl, stir together 1 cup plain bread crumbs, 1/2 cup grated Parmesan cheese, 2 tablespoons dried basil, 1 tablespoon dried oregano, and 1 teaspoon salt.

Melt 1/2 cup salted butter in a microwave on medium power in 30-second increments until fully melted.

Working one at a time, or in small batches, dip chicken pieces in melted butter to coat, then transfer to bread crumb mixture to coat. Place on the prepared baking sheet, leaving at least 1 inch between each piece.

Bake in the preheated oven for 20 to 25 minutes until cooked through and chicken is no longer pink in the middle, or until the chicken reaches an internal temperature of 165°F.

These are amazing! Excellent taste, easy to make and my dad loved them!

I just made these tonight and everybody loves them. So easy. Cubing the chicken was the hardest part. Easy and delicious. You can’t ask for better than that. Will definitely make these again.

So easy and delicious!

Glad you are doing better and enjoying your garden!

I made these a few days ago for my very picky grandsons. First of all, they loved them as I did and wanted me to make these again. I saw the video and saw how easy it was to make. Rachel, Thank you for sharing your endowed talents of cooking. These chicky nuggets are a hit with my nephews and nieces. The cheese element is a win. These cook up quick and tasty in my book , free of the mystery Frankenstein chemicals mass production nugget factories use to enable perceived freshness in the lengthy the mass distribution pipeline. Your recipe is fresh chicken breast and seals the flavor in with your recipe. Love them!
