Cinnamon Kugel

eggs

milk

cottage cheese (16 oz)

sour cream

white granulated sugar

butter (one stick), melted

oz cream cheese, room temperature

salt

vanilla

Grease a 9x13 baking dish and preheat oven to 350 degrees F.

In a large bowl, beat together the eggs, milk, cottage cheese, sour cream, white sugar, melted butter, cream cheese, salt, and vanilla.

Once the mixture is thoroughly combined, stir in the cooked noodles and transfer to the prepared baking dish.

In a small bowl, mix together the remaining white sugar, brown sugar, and cinnamon. Evenly sprinkle sugar mixture on the top of the noodles.

Bake for 1 hour or until top begins to brown.

Bread pudding is a classic recipe that can be served as a dessert or even for Christmas brunch!  It has a delicious rich custard that soaks into the bread with a decadent cinnamon bourbon sauce drizzled over top!  You will love the warm cinnamon flavors in this delicious bread pudding recipe! 

Cinnamon Bread Pudding {with Cinnamon Bourbon Sauce}

Cut loaf of bread into small pieces.  This should be around 10 cups once cubed.  Lay bread on a rim lined baking sheet and place in oven.  Preheat oven to 350 degrees.  While oven preheats dry bread, stir once and remove from oven when bread is slightly dry.

While bread is in oven, make the custard by whisking together the egg, milk, cream. melted butter cinnamon, vanilla extract and sugar.

Once bread is dried, place into a greased casserole dish.  Pour custard mixture over bread.  Stir gently to cover all pieces.  Allow bread to soak for 15 minutes before placing in oven.

Bake in preheated 350 degree oven for 50-55 minutes or until the custard is set.  The bread pudding will puff up and no longer be giggly in center.  Set aside to cool.  Pudding will sink as it cools which is completely normal.

Bread Pudding

While bread pudding is cooling, melt butter on a sauce pan over medium heat.  Add brown sugar and cinnamon to the butter and stir with a whisk until the sugar dissolves (about 5 minutes).  Remove from heat and stir in bourbon.

To serve, cut bread pudding into squares.  Plate and pour cinnamon sauce over top.  Serve immediately.

Cinnamon Bourbon Sauce

This keeps up to 4 days chilled, and spiced quinces can be kept refrigerated in an airtight container for up to 2 months. You can also keep the polenta crust refrigerated for 3 days, or frozen for up to 3 months. Begin this recipe 1 day ahead. Half Batch Apple Cider Donut

all-purpose flour

¾ tsp baking powder

tbsp apple cider

buttermilk

maple syrup

tbsp unsalted butter,

tbsp butter, melted

Step 1

Pre-heat oven to 350°F. Lightly grease a 6-cavity doughnut pan with nonstick spray. In a small bowl whisk the flour, baking powder, salt, cinnamon and cloves until it looks uniformed.

Step 2

In another small bowl or large measuring cup, combine the egg , cider, buttermilk, vanilla and maple syrup.

Step 3

In a large bowl cream the butter using a hand or stand mixer fitted with a paddle attachment on medium speed, add , brown and granulated sugar, mix until light and fluffy, 3-4 minutes.

Step 4

Turn the mixture down to low speed and slowly alternate adding the flour mixture and the cider mixture. Continue alternating until all the batter is mixed.  (scrapping the sides and bottom halfway through to make sure its all incorporated).

Step 5

Once dough is all mixed, transfer to a piping bag or plastic bag (like Ziplock) with corner snipped off (about half inch hole). pipe into donut pans and bake for 15-20 min and when poked with a toothpick, the toothpick comes out clean.

Step 6

Let donuts cool in pan for 5 minutes or until they are cool to touch. In two two shallow bowls, melt butter in one and in the other mix the granulated sugar and cinnamon with a fork or whisk. One at at time, dip donut in bowl with melted butter, turn over, and then toss in sugar and cinnamon. Place on wire rack until ready to eat!

Indian Pudding Recipe with Cranberries and Maple Syrup

cornmeal

Heat milk in large saucepan. Slowly add in cornmeal, whisking to blend thoroughly. Maintain heat at medium high and continue to whisk for about 10 minutes, or until mixture begins to thicken. (Course grind cornmeal will take longer to thicken.)

Lower heat and add remaining ingredients. Cook for a few more minutes, stirring continuously, until all ingredients are heated through.

Pour mixture into buttered 9″x13″ baking dish. Bake at 300°F for two hours, until pudding is set.

Serve warm with whipped cream or ice cream, or allow to cool and slice and serve with milk (or topping of your choice).

Preheat your oven to 350&deg;F (175&deg;C). Grease a 9x9-inch baking dish or a similar sized casserole dish with butter or non-stick cooking spray.

In a large mixing bowl, combine the pumpkin puree, granulated sugar, and brown sugar. Whisk together until the mixture is smooth and the sugars are fully dissolved.

Add the eggs one at a time to the pumpkin mixture, whisking well after each addition until fully incorporated.

Pour in the whole milk, heavy cream, and vanilla extract. Stir until the mixture is smooth and well blended.

Sprinkle the ground cinnamon, ground ginger, ground nutmeg, ground cloves, and salt over the pumpkin mixture. Whisk together until all the spices are evenly distributed throughout the batter.

Carefully pour the melted butter into the pumpkin mixture and stir until it is fully incorporated.

Pour the pumpkin mixture into the prepared baking dish, smoothing out the top with a spatula.

Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the pudding is set in the center and a knife inserted comes out clean.

Remove the pudding from the oven and let it cool slightly before serving.

Serve warm or at room temperature with a dollop of whipped cream or a scoop of ice cream, if desired.
