Healthy Sheet Pan Fajitas

Lane's Fiesta Rub

Chicken Breast

Bell Peppers (yellow, orange, red)

yellow Onions

Avocado Oil

Tortillas

Slice chicken breast into strips, bell peppers, onions (Fajita style) and place in a large bowl. 

Drizzle about 2 tablespoons avocado oil over the ingredients in the bowl and mix.&amp;nbsp;Season with Fiesta Rub mix and pour over a large sheet pan

Place in oven at 400 degrees for 25 minutes. Internal temp of chicken should be 160 to 165.

Grab your tortillas, salsa, and guacamole and enjoy

Vegans Fajitas with Cauliflower Rice- a fast weeknight meal that is vegan and gluten-free. Or feel free to add chicken!

Vegan Fajitas with Cauliflower Rice

olive oil

garlic- garlic

apple cider vinegar

salt

chili powder

cumin

oregano

bell peppers

red onion

portobello mushrooms (or sub boneless skinless, chicken breasts

¼ of an onion, diced

“riced” cauliflower

coriander

lime

cilantro

Mix the marinade ingredients together with a fork in a small bowl.

Cut the bell peppers and portobellos into 1 inch thick slices. Cut the onions into ½ inch thick wedges.

Place on a parchment-lined baking sheet, in a single layer not overlapping.  Brush with the marinade (or toss in a bowl first).

Roast in on the middle rack in the oven 25-35 minutes, tossing halfway through.

While this is roasting, make the Cilantro Cauliflower Rice. Heat oil in a large skillet over medium heat. Add onion, and saute 3-4 more minutes until tender and fragrant. Add riced cauliflower and salt. Saute over medium heat for about 10 minutes, stirring often. Add coriander, zest and lime juice. Adjust salt and lime. Turn heat off until ready to serve.

Assemble the bowls, divide cauliflower rice among bowls, top with roasted veggies (or chicken). Garnish with cilantro, chipotle mayo, avocado, limes, etc.

I topped it with avacado ans fresh salsa. Riced cauliflower is going to be my go-to over rice now.

This recipe was delicious! I doubled it for lunches for my husband and I this week. Next time, I would mix together all the veggies and marinade in a bowl because it was really tedious to brush it on each individual piece. Additionally, I checked my veggies at 20 minutes and the peppers and onions black underneath. I would either reduce the heat or check them earlier next time. The veggies were soooo good and I will definitely be using this marinade again!!

I've made this multiple times and it's a huge hit with our family! Absolutely sensational! Also a great intro to vegan food (if you make the vegan chipotle mayo and serve with tofu). We serve with your Mexican purple cabbage slaw. YUM!

Recipe video above. Here is a big Fajita dinner spread that&#39;s all cooked in the oven at the same time! Caramelised cubes of salmon heavily seasoned with a Fajita spice blend, colourful fajita vegetables and a pile of steamy warm tortillas, just add sliced avocado and make a simple taco sauce while they&#39;re in the oven. I used my new Creamy Jalapeño Sauce but if that&#39;s out of reach or you&#39;re worried about spiciness (it&#39;s got a little zing), either use my Instant Pink Taco Sauce or just plain sour cream.

12 Minute Baked Salmon Fajitas

/ 1.2lb skinless salmon

tbsp extra virgin olive oil

tsp smoked paprika ((or regular paprika))

tsp EACH garlic, onion, cumin powder

tsp cooking salt / kosher salt ((halve

tsp (tightly packed) brown sugar ((helps the salmon brown!))

tsp cayenne pepper ((optional),

capsicums

Creamy Jalapeno Sauce

Pink Taco Sauce ((2 ingredients!))

Sour cream

corn

avocado (, sliced)

tbsp coriander

Lime wedges (, optional)

Toss Vegetable ingredients on a tray. Toss salmon with Fajita Seasoning, spread on separate tray lined with wrinkled foil. Bake 12 minutes at 240°C/465°F (220°C fan) along with foil wrapped tortillas. Make sauce. Serve!

ABBREVIATED RECIPE

Preheat oven to 240°C/465°F (220°C fan-forced).

Crinkled foil trick for baking fish – Lightly scrunch up foil, then gently unfold it so it stays wrinkled. Lots of little pointing bits = good! The wrinkles lift the fish slightly, preventing sticking and soggy undersides – clever Japanese fish-cooking trick (thanks mum!). Place on one side of the tray and fold the edges over the rim to secure. Repeat with another sheet to cover the whole tray.

Fajita flavour fish - Mix the Fajita seasoning ingredients in a bowl, it should be like a thin paste. Add fish and toss to coat. Spread out on the foil so the salmon is not touching each other.

Toss veg - On a separate large tray, toss capsicum and onion with the oil, garlic and salt. Spread it out in a single layer.

Wrap stack of tortillas in foil (make 2 parcels).

Bake everything - Put the salmon on the top shelf, vegetables on the middle shelf and tortillas on the floor of the oven. Bake 12 minutes, or until the salmon flakes (don&#39;t turn or toss).

Sauce - Meanwhile, put the sauce ingredients in a small jug and blitz with stick blender until smooth.

FULL RECIPE

Lay everything out - Transfer the salmon and vegetable onto a serving platter, pour all tray juices over. Place warmed tortillas, sauce, avocado, lime wedges and coriander on the side.

Making a fajita - Take a warm tortilla. Stuff with a little vegetables, place 2 pieces of salmon on then flake into large chucks. Tuck in avocado, drizzle with sauce, lime juice, sprinkle with coriander, devour!

SERVING

Made this for supper tonite. Fantastic flavor.  Made the jalapeño sauce also. Really good. Hubby loved it.  And so quick. 
After removing the salmon from the oven I slid the veggies under the broiler for a bit of char.  Another awesome recipe  !!  Can’t wait to serve it to company.

I normally don't give stars before trying the recipe, but in this case, I will make an exception. Salmon Fajitas...are up my alley. I have to use gf-tortillas, but it will taste great. I love salmon in every form known to man. I think in a former life I was a bear and lived in Canada. :)
