Baked Penne Pasta

olive oil

onion,

garlic,

(28 ounce size) whole tomatoes, with juice

(14.5 ounce) tomato sauce

Italian Seasoning

red pepper flakes

Salt and Pepper,

whole wheat penne pasta

tub (15 ounces) whole milk ricotta cheese

mozzarella cheese, grated

Parmesan cheese

Heat olive oil in a skillet over medium heat. Add diced onions and garlic and saute for several minutes, or until starting to soften.

Add ground beef and cook until browned. Drain off fat, leaving a bit behind for flavor and moisture.

Add tomatoes, tomato sauce, Italian seasoning, red pepper flakes, salt, and pepper. Stir and simmer for 25 to 30 minutes.

After that time, remove 3 to 4 cups of the sauce to a different bowl to cool down.

Begin to boil your pasta. Make sure to undercook it a tad&#8211;especially if freezing!

In a separate bowl, mix together the ricotta cheese, 2 cups of the grated mozzarella, Parmesan, egg, and a dash of salt and pepper.

Drain the pasta and rinse under cool water to stop the cooking. Pour it into the bowl with the cheese mixture and barely mix it together.

Add the cooled meat sauce that you set aside earlier and toss to combine.

Dump the pasta mixture into a large greased casserole dish or lasagna dish. (NOTE: I ended up using a 9&#215;13 AND a 9&#215;9 dish to fit all of it!) Spoon the remaining sauce over the top, then top with remaining mozzarella cheese. (Freezing instructions begin here.)

Bake for 20 minutes, or until bubbling. Remove from oven and let stand 5 minutes before serving. Hint: Sprinkle chopped parsley over the pasta before serving!

Make It Now:

Thawed

Thaw in the fridge (may take up to 48 hours) or thaw in the microwave on defrost setting. Bake at 375 degrees F according to Step 11 in the recipe.

Frozen

If cooking directly from frozen state, cover with foil. Bake in a 375°F oven for about 1 hour and 20 minutes or so, until heated through and bubbly. Remove the foil the last 20 minutes.

This was easy as pie and SO DELICIOUS. It took a little time, but wasn't complicated, and for my small family it made three meals! I feel so productive!! Love love love this.

When you use a glass container with lid, as pictured, do you still need to wrap the food in plastic before freezing?

If cooking directly from frozen state, cover with foil. Place the frozen casserole in the oven. Preheat the oven to 375°F. Once it comes to temperature, bake for about 1 hour and 20-40 minutes, until heated through and bubbly. Remove the foil the last 20 minutes.

Pasta Bake Recipe

penne pasta, (about 3 cups)

milk

unsalted butter

all-purpose flour

nutmeg

salt and black pepper, (to taste)

heavy cream

Parmesan cheese, (divided)

shredded Swiss cheese, (divided)

ground nutmeg

Preheat oven to 400 degrees F. Butter a 9x13 inch baking dish and set aside.

Cook pasta according to package directions until al dente, or slightly underdone. Drain and set aside.

While pasta is cooking, heat milk in a small saucepan over low heat to warm, but do not let it simmer.

In a large saucepan, melt butter over medium heat. Add flour and stir for 1–2 minutes, until mixture is golden. Slowly whisk in warm milk. Add nutmeg, salt, and pepper. Cook, whisking often, until thickened, about 10 minutes, then remove from the heat.

Add cream, ½ cup shredded Parmesan, and ½ cup Swiss cheese. Stir until cheese is melted.

Combine pasta with cheese sauce and pour into the prepared pan. Top with remaining ½ cup shredded Parmesan, ½ cup Swiss cheese and the grated Parmesan. Cover with aluminium foil and bake for 10-15 minutes.

Remove foil and continue baking until cheese is golden brown, about 5 minutes.

Remove from the oven and let cool for at least 5-10 minutes before serving.

Love this recipe! I added shredded rotisserie chicken and cooked bacon cut into pieces as per suggestions and it was absolutely delicious! Just served it with a side salad and had a delicious dinner in no time!

My kids love your "homemade mac and cheese" recipe so I had high hoped they'd love this one too. My 3 daughters loved it. I found that if you reheat it on the stovetop and add a bit more milk, it becomes creamy again.
