Loaded Baked Potatoes with Bacon and Cheddar

russet potatoes

butter

sour cream

c. chives

green onions, thinly sliced, white and green parts divided

c. shredded Cheddar

crispy bacon, crumbled

kosher salt

black pepper

Delicious.  First day one making stuffed potatoes 🥔. Very tasty, not over powering from chives concerned it would be too much onion taste 

I baked them longer than 5 minutes when returned for melting cheese.  More like 10-15.

This was so easy to make and was really good. I omitted the chives.

I topped the fully baked potato with cold sour cream rather adding it to the mixture bowl. I like how you slit the top of the potato to scoop and re-stuff; in the past I've cut each potato in half hoping for a good balance but I really like the simple lengthwise slit.

Chicken Pot Pie Baked Potatoes

russet

unsalted butter

carrots

celery

onion

garlic,

thyme

rosemary

all-purpose flour

chicken broth

half and half

peas

chicken,

salt and black pepper,

Rub potatoes with oil, then poke with a fork a few times. Bake until tender, at least 1 hour.

In the last 20 minutes of baking time, start to make the sauce:

In a large skillet, melt butter over medium heat. Add carrots, celery, onion, and garlic and season with thyme, rosemary, and salt and pepper. Cook, stirring frequently, until vegetables have started to soften but aren't fully tender, about 5 minutes.

Sprinkle flour over the vegetables and cook, stirring constantly, about 1 minute.

Stir in chicken broth while stirring constantly. Cook, stirring frequently, until mixture has thickened and vegetables are tender, 5-7 more minutes.

Stir in half and half, along with peas, and chicken, and let cook until chicken and peas are hot, about 3 minutes. Season to taste with salt and pepper.

Slice open potatoes and fluff insides with a fork, adding butter if desired. Spoon sauce over the open potatoes. Enjoy!
