baked shrimp toast

Vietnamese Shrimp Toast, also known as Bánh Mì Nướng Tôm is so easy to make and great for a snack or appetizer. A flavorful mixture of shrimp, mayo, green onion, and cheese is spread onto crusty baguette and baked to perfection. They&#39;re little bites of deliciousness!

Vietnamese Shrimp Toast (Bánh Mì Chiên Tôm)

baguette

½ lb raw shrimp ( peeled, deveined, and tails removed)

tbsp cooking oil

shallot (finely diced; about 2 tbsp)

fish sauce (I use Red Boat)

onion

¼ cup + 2 tbsp mayonnaise

cheese (I use half cheddar, half mozzarella)

Salt and pepper (to taste)

Preheat oven to 300°F.

Use a food processor to pulse shrimp until finely chopped but be careful to not turn it into a paste. If you don&#39;t have a food processor, you can finely chop it with your knife into small bits. Set aside.

Heat oil in a pan over medium heat. Add shallots and cook until soft and translucent, about 2-3 minutes. Add shrimp and season with ¼ tsp salt and pepper each. Use your wooden spoon to break the shrimp into little pieces and cook until opaque, about 2-3 minutes. When shrimp is 75% cooked, turn off the heat and stir in the fish sauce and green onion. Cook for 1 minute more.

Take the pan off the heat and let cool for about 5 minutes. Add in mayonnaise and cheese and stir to combine. Season to taste.

Schmear each slice of bread with a thin coating of the shrimp mixture and top with a little more cheese, if desired. Continue until all the shrimp has been used. Place toast in a single layer on the baking sheet about ½ inch apart.

Bake for 8-12 minutes or until baguette is lightly toasted and cheese has melted. Serve warm or at room temperature.

Baked Shrimp Toast

olive oil

lb shrimp peeled, deveined and minced

celery

garlic

Cajun seasoning

black pepper

cream cheese

Parmesan cheese

Fontina cheese

kosher salt and fresh ground black pepper

Turn the broiler on low. Put bread slices on a baking sheet in a single layer. Place under the broiler for 3-5 minutes or until lightly browned.  Turn slices over and put them back under the broiler to lightly brown the other side.

Heat olive oil in a skillet over medium heat. Add shrimp, onion, and celery. Cook for 1 minute, stirring frequently.  Add the garlic and sprinkle the skillet with the Cajun seasoning and black pepper. Cook for 1 minute, stirring constantly.  Reduce heat to very low.  Add cream cheese, Parmesan, and Fontina. Stir until the cheese is blended and almost fully melted. Season with kosher salt and fresh ground black pepper

Top the toasted baguette crusts evenly with the shrimp mixture.  Sprinkle with crushed red pepper and place in a 400-degree oven for 10 minutes or until lightly browned and bubbly.  Sprinkle with green onions. Serve immediately.

Easy Baked Shrimp Toast

oz shrimp, peeled and deveined ((I use raw shrimps))

mayonnaise

butter, melted

scallions ((about 2 stalks of scallions))

baguette or ciabatta ((see notes))

basil, thinly sliced

Preheat oven to 400F.

Chop shrimps or process in a food chopper into small pieces. Don&#39;t process into a paste. Mix shrimp with mayonnaise, melted butter, grated garlic, scallions and a generous amount of black pepper.

Slice ciabatta or baguette in half horizontally, or cut baguette into thin slices. Each slice/half should not be thicker than 1 inch.

Spread the shrimp mixture on the cut side of the bread. Place into the oven and bake for 15-18 minutes or until the top is golden and bread is crispy.

Remove bread from the oven. Sprinkle fresh basil and serve immediately.

Rather bland tasting. I did add some Old Bay and Parmesan on the top which did add some flavor. Fresh shrimp also helped. As suggested, it is a must to eat right away so not appropriate for a buffet of appeizers.

So very simple and decadent for seafood lovers like myself!!! The second time I made this I added chive cream to the bread before the topping.. yummy!! Also added Italian style cheese for extra flavor!!!!!!

Try this on mini bagel halves. Also good with chopped cooked bacon instead of shrimp. I would imagine tuna or salmon in place of shrimp would also be good.
