Baked Biscuit Wreath Dip

refrigerated biscuits (such as Pillsbury)

olive oil,

Parmesan

c. mozzarella

ricotta

c. spinach,

mayonnaise

garlic powder

kosher salt

red pepper flakes,

Turned out great.  My daughter-in-law liked it so much last Christmas that I'm making it again.

I used the pillsbury crescent rolls. 2 packs. Makes 16 small rolls. I would have preferred homemade rolls but I didn’t have time to make them. I cut back a little on the spinach and added some artichoke hearts to blance the mix and used cream cheese instead of ricotta as someone else suggested. These were a HIT! Amazing recipe and it can be tweaked to fit your liking.

I usually just use scissors to cut the individual biscuits & then just roll them into a ball in the palm of my hand. Such a beautiful presentation & so delicious!

Made for a holiday gathering. Excellent !!!

Pretzel Ring Beer Cheese Dip

A delicious and easy baked Cauliflower Spinach Cheese Dip made with low fat cream cheese, mozzarella and parmesan, sure to be your new chip &amp; dip go-to. Loaded with nutrition from the cauliflower and spinach, this healthy dip also has Greek Yogurt and no cream!

Easy Baked Cauliflower Spinach Cheese Dip

oz Frozen Chopped Spinach (Thawed 200

Cauliflower Florets (½ large head, 428 grams)

Reduced Fat Cream Cheese (6 oz/170 grams)

Non-fat Greek Yogurt (112 grams)

Shredded Mozzarella (56 grams)

1½ tsp Onion Powder

1½ tsp Garlic Powder

tsp Mustard

½ tsp Black Pepper

Salt

Red Chili Pepper Flakes

Tortilla Chips

Crostini bread

Preheat oven to 425°F and lightly grease a 1½ quart (5 cup) casserole/baking dish, or 8-9” cast iron skillet.

Bring water to a boil in pot, add cauliflower and boil for 10 minutes until tender and easily pierced with a fork. Set aside some cooking liquid and drain.

Transfer cauliflower and 3 Tbsp cooking liquid to a blender (or food processor) and blend until mostly smooth, about 15 seconds.

Cook Cauliflower:

In a large bowl, stir together cream cheese and yogurt.

Add spinach, cauliflower, half shredded mozzarella, parmesan, mustard, garlic powder, onion powder, salt and pepper. Mix until combined.

Transfer to cast iron skillet or casserole dish, top with remaining mozzarella, and bake for 15 minutes until cheese is melted, bubbly, and lightly browned.

I've probably made this one too many times as of now and I can proudly say no regrets. With football season coming up this is going to be perfect for watch parties with the boiiis...
