This baked fish is our absolute favorite baked white fish recipe. It's cooked in a delicious lemon garlic butter sauce until tender and flaky. It's a 20-minute dinner recipe you don't want to miss!

Lemon Garlic Butter Baked Fish

butter

garlic cloves,

lemon

½ fish

EACH: sea salt and pepper

parsley,

Preheat your oven to 425 degrees Fahrenheit. 

Melt the butter in a small frying pan over medium heat. Add the garlic and let it cook for 1 minute. Zest the lemon (preferably with a Microplane) and add it to the butter. 

Thinly slice the zested lemon and place the slices in the bottom of a baking dish. If there are extras, save them for the top of the fish. 

Dry the fish with paper towels, season both sides with salt and pepper, then lay the fish on top of the lemon slices. Spoon or brush the garlic butter over the fish.

Bake the fish for 10-12 minutes, or until it flakes easily with a fork. Serve with a little parsley sprinkled over the top for color.

I made this Baked Fish recipe using Cod and followed the recipe except I add a sprinkle of Italian Spice mix and toasted sliced almonds. My family loved it!

Super easy way to prepare haddock! Came out delicious. Served over farro with roasted asparagus, and drizzled some of the leftover butter sauce over the top. Yum!

Delicious with just lemon and salt and pepper and garlic.  I served with steamed rice and fresh microwaved buttered carrots. It was a fast and delicious recipe for cod fish.

This looks quick and easy. Most importantly, I think my son will actually eat it. He is not a fish lover. Fish was a staple when I grew up. We lived very close the Baltic Sea and a fish monger would come around once a week with fresh caught fish. The grocery stores of course had fish as well.

So quick and easy to make. Came out delicious! My kids loved it! I'll be making this again.

Baked Fish 

Loaded with bright Mediterranean flavors, this baked white fish takes is seasoned with oregano and garlic and topped with a mixture of tomatoes, olives, and red onions. Ready in about 25 minutes! Be sure to check out my fish tips and the video for how to make this recipe below!

Mediterranean Baked White Fish

½ lb white fish fillet

Kosher salt and ground black pepper

Extra virgin olive oil

cherry tomatoes, (halved)

red onion

garlic cloves, (minced)

thyme leaves

oregano

Heat the oven to 425 degrees F.

Pat the fish dry and season with salt and pepper on both sides. Brush a 9 ½ x 13-inch baking dish with a little extra virgin olive oil and put the fish in it. Squeeze ½ lemon juice all over the top of the fish.

In a medium mixing bowl, combine the tomatoes, olives, onions, garlic and spices. Add a very small pinch of salt and ground pepper. Add a generous drizzle (about 3 tablespoons extra virgin olive oil) toss to combine.

Pour the tomato and olive mixture over the fish.

Bake in the heated oven for 15 to 20 minutes (this will depend on the thickness of your fish).

Remove from the heat and serve.

Tender, Flaky Mediterranean Baked Cod Recipe

1½ tsp Kosher salt (divided)

¼ tsp Freshly ground black pepper

extra virgin olive oil (divided)

cherry or grape tomatoes (halved, about 1½-2 cups)

olives

onion

garlic (thinly sliced)

Tbsp red wine vinegar

parsley (for serving)

Lemon wedges (for serving, optional)

Season the cod fillet. Preheat an oven to 425F. Pat the fish dry with paper towels, then season on both sides with 1 tsp Kosher salt and ¼ tsp freshly ground black pepper. Place the seasoned fillet inside a baking dish, then drizzle with 2 Tbsp of olive oil. Sprinkle on the reserved lemon zest.

Make the tomato and olive relish. In a medium bowl, combine halved tomatoes, olives, thinly sliced red onion, and garlic cloves. Drizzle with remaining 2 Tbsp olive oil and 1 Tbsp red wine vinegar, then season with 1 tsp dried oregano and ½ tsp Kosher salt. Toss well, then pour on top of the cod.

Bake the cod. Bake the fish for 15-18 minutes, or until the internal temperature reaches around 140F (this will continue to rise as it rests). Serve immediately with fresh parsley and lemon wedges on the side.
