Like all banana cookies these are quite soft and cakey, but the dark chocolate and chopped nuts give tons of great flavour without being overly sweet.


Banana cookies

grams/5½oz unsalted butter,

golden caster sugar

egg,

flour

½ teaspoon bicarbonate of soda

cinnamon

salt

75 grams/2½oz pecans (or walnuts), roughly chopped

75 grams/2½oz dark chocolate chips

bananas (200 grams/7 ounces peeled weight), mashed

ripe banana (about 150 grams/5½oz)

grams/1¾oz jumbo porridge oats

grams/¾oz chocolate (any type)

sea salt

¼ tsp ground ginger

Banana and oat cookies

These healthy, whole-grain, blueberry banana muffins are oil-free and filled with juicy blueberries. Easy to make and fantastic for breakfast!

Healthy Vegan Blueberry Banana Muffins

white whole wheat flour (See Notes.)

baking soda

baking powder

fine sea salt

overripe banana (about 2 large bananas)

maple syrup

non-dairy milk

almond butter butter

apple cider vinegar

Locate a standard non-stick muffin pan. Arrange oven rack so that the muffins will be in the center of the oven. Preheat oven to 375 degrees F (190 C). 

In a large mixing bowl whisk together the dry ingredients. In a smaller bowl mash the bananas and make sure you have 1 cup. Add the remaining wet ingredients to the bananas and mix very well.

Pour wet ingredients into dry, and stir until just combined, careful not overmix. The batter will be very thick. Fold in the blueberries.

Divide the batter evenly among the muffin cups, only filling them about 2/3 full. If desired, lightly press 2 or 3 extra blueberries onto the top of each muffin. Bake for 18 to 20 minutes or until a toothpick inserted into the center comes out clean.

Allow muffins to cool in the pan for 10 minutes, then transfer to a cooling rack.

High-Protein, Low-Carb Chocolate Chip Banana Bread

banana, ripe

eggs

peanut butter (smooth)

cottage cheese

tsp baking powder

chocolate

tbsp unsweetened shredded coconut

walnuts

vanilla

Preheat your oven to 350°F and line a loaf pan with parchment paper. Lightly grease the parchment to prevent sticking.

Place the banana, eggs, peanut butter, cottage cheese, and baking powder in a blender or food processor.

Blend on high until you have a smooth, creamy batter with no visible lumps.

Carefully pour the batter into your prepared loaf pan.

Evenly sprinkle the sugar-free chocolate chips over the top of the batter.

Place the pan in the preheated oven and bake for 50–55 minutes. Check for doneness by inserting a toothpick into the center; if it comes out mostly clean (melted chocolate is fine), your banana bread is ready.

Remove the loaf pan from the oven and let the bread cool for at least 15 minutes before slicing to help it set.

Slice into 8 portions and enjoy warm or at room temperature.
