Hands-free yummy Baked Steel Cut Oatmeal prepared in the oven - perfect for entertaining guests at breakfast or meal prepping breakfast for the week!

Baked Steel Cut Oatmeal

steel

bananas (mashed)

almond milk

flaxseed

maple syrup

coconut oil (melted)

vanilla extract

cinnamon

salt

pecans

Preheat oven to 375ºF. Lightly coat an 9 x 9 baking dish or 8 x 11 baking pan with cooking spray.

In a medium bowl, whisk together the banana, almond milk, ground flaxseed, maple syrup, coconut oil and vanilla extract until well combined. Add the steel cut oats, cinnamon and salt and stir to combine.

Pour the mixture into the prepared pan. Cover the pan loosely with foil and bake for 30 minutes. Uncover the pan and add the pecans on top. Bake an additional 25-30 minutes until golden brown (55-60 minutes total).

Serve hot, scooped into bowls, or let cool for 10 minutes and cut into squares.

Caramelized Banana Oatmeal

bananas, sliced into rounds

coconut oil

Cook the oatmeal according to package directions. For extra awesome creamy oatmeal, cook it in milk!

Heat the oil in a skillet over medium heat. Add the maple syrup, cinnamon, and vanilla, and let it bubble around for a little bit to get incorporated. It should be lightly foamy and bubbly.

Add bananas and simmer for a few minutes on each side until soft and plump.

Remove from heat. Stir half of bananas into oatmeal, and reserve the other half for topping. Add other desired toppings, and mwah! Delicious.

Oatmeal is a household favorite in the fall and adding caramelized bananas takes it it up a notch.

I've had this bookmarked for a while now.. why in the world did I wait so long to make this?!? We were low on bananas so I used 1 1/2  and then halved the coconut oil/maple syrup combo and it was absolutely perfect! Even my hubby (not the biggest oatmeal fan) said, "This is really good babe!" -- Thanks for another fab recipe, hope you and your family are doing okay!

It was delicious! And i hate bananas! I didn't have maple syrup, so i substituted with brown sugar and original syrup. Also, I used the banana and caramel syrup for 2 cups of oatmeal, because it was too much for 1. And for topping, I used walnuts! I also mixed walnuts into the oatmeal along with the bananas. My husband loved it! He can't decide which is his favorite. This one, or a peaches and cream oatmeal I make. I can't decide either.

I made mine with butter and threw in some walnuts to caramelized with the bananas, so delicious!
I can see using this over vanilla ice cream, Greek yogurt, or crepes!
I tried to rate this recipe at 5 Stars but it would not allow above four.

I’ve had this bookmarked for ages and finally got around to making it. I make breakfast for the workweek on Sundays and it was so good.

Some comments:
- I used steel cut oats (~1 1/4 cup) because they keep and reheat well. Regular oats do not.
- I used five bananas and increased the coconut oil and maple syrup only slightly. I think the amount of oil for the servings as written would be way too much
- Somewhat counterintuitively, I think regular-ripeness bananas are perfect here. They were soft on the outside after cooking with the syrup but still have enough structure so the oatmeal didn’t taste like mush.

Am thinking about adding in almond butter to up protein.   Thoughts?

Strawberry Banana Oatmeal

Add old-fashioned oats and water to a small bowl and place in the microwave for 1 minute and 40 seconds. Remove from microwave and stir.

Stir in the brown sugar, half the strawberries, and half the bananas. Top with remaining strawberries and bananas. You can also top with more brown sugar if you want!

These are the best vegan oatmeal cookies to use up ripe bananas! They are toddler friendly, and healthy enough to eat for breakfast! Make a batch and enjoy it throughout the week as an easy grab and go snack.

Vegan Oatmeal Cookies with Banana (Vegan, Healthy, Toddler Friendly)

tbsp ground flax

vegan butter (softened)

brown sugar (packed)

banana (about 1 large banana)

tsp vanilla extract

quick cooking oats

whole wheat flour

1½ tsp baking powder

tsp hemp hearts

banana chips (optional)

Mix together the 1 tbsp flax with water in a small ramekin and sit in the fridge for 15 minutes to set as a flax egg.

Add the butter, brown sugar and maple to a medium bowl and beat until well combined. Add in the banana, vanilla and  flax egg and beat for another 30 seconds until combined.

In another bowl, mix the oats, flour, baking powder, cinnamon and salt. Add the wet to the dry ingredients and stir to combine.

Refrigerate the dough for 1 hour.

Preheat to 350 F and line a large baking sheet with parchment paper.

Roll a heaping tablespoon into balls and flatten until they're about 2 inches in diameter.

Sprinkle with hemp hearts and press a banana chip in the centre (if using).

Bake for 10-12 minutes until lightly browned on the bottom. Allow them to cool completely before transferring them to an air-tight container.

(590 ml) non-dairy milk of choice

Prep: 

Wet Ingredients

peel and finely mash 2 ripe bananas in a 9&#215;13&#8243; (or similar sized) baking dish. Add the maple syrup, non-dairy milk, and (optional) vanilla extract to the dish and mix until well-combined.

Ingredients: add in the oats, flax, cinnamon, baking powder, and salt. Mix well. Fold the walnuts into the oats if using, then use a rubber spatula to evenly distribute the mix throughout the pan. Top with additional sliced banana, if desired.

Bake &amp; Serve

bake in the middle rack of the oven for 30-35 minutes, depending on how thick you would like the oatmeal to be. For a &#8220;runnier&#8221; oatmeal, serve immediately after baking. Otherwise, let the oatmeal cool completely, then slice into bars.  Serve as desired, warm or cold; leftovers will keep in the fridge for up to 5 days or can be pre-sliced and frozen for up to two months.

This was soooooo tasty and is definitely going to be a regular breakfast staple from now on. It’s a perfect post workout meal for my son and I in the mornings and was so quick and easy to make.🥰

Transfer the pot to a stovetop and cook over medium-high heat. Frequently stir the oatmeal so it does not stick to the bottom of the pot. Cook until thick and creamy, about 7-8 minutes. The longer you cook, the thicker and creamier it will become.

Transfer oatmeal to bowl(s). Add your favorite toppings, like fresh fruit, nut butter, granola, nuts, seeds, and more. Enjoy!
