Easy Oatmeal Bars with Veggies

quick oats

rolled oats

almond meal (*see substitutions in notes)

tsp baking powder

cinnamon (- optional)

overripe bananas

egg (*see substitutions in notes)

carrot (or 1 small zucchini)

tsp vanilla extract (- optional)

salt

tbsp peanut butter (*see substitutions in notes)

Preheat oven to 180C (350F) and line an 8 inch square cake tin with baking paper along base and sides.

Grate the carrot or the zucchini (whatever you&#039;re using) and set aside. If using zucchini, squeeze out excess water with paper towel or a clean tea towel.

Mash the bananas thoroughly in a large mixing bowl. Add egg, vanilla, peanut butter and milk. Whisk it all together. Add in quick oats, rolled oats, almond meal, cinnamon, baking powder, salt and the grated carrot/zucchini. It will form a very thick batter, almost like a wet dough.

Let the mixture sit for 5-10 minutes so the oats absorb some of the moisture and soften.

Press the mixture evenly into the lined cake tin. Bake for 20-25 minutes or until golden brown on top and firm to touch. Allow to cool before slicing into bars. Will keep in the fridge for around 5 days. The bars can be frozen but they tend to lose their shape a bit if you microwave them.

Soft and chewy, these healthy banana oatmeal bars are super easy to make with just a handful of pantry items. They&#39;re the perfect make-ahead, grab-n-go breakfast, snack, or dessert.

Banana Oatmeal Bars

mashed overripe bananas (240 grams), about 2 medium bananas

peanut butter (125 grams)

vanilla extract

rolled oats (175 grams)

flaxseeds

cinnamon

baking powder

carrots, chocolate chips, fruit, coconut

Preheat oven to 350 degrees Fahrenheit. Mash bananas in a large bowl using the back of a fork or a potato masher. Try to get it as smooth as possible but small lumps are fine. Measure out 1 cup. Freeze any leftovers.

Stir in peanut butter and vanilla extract. Add in the oats and the rest of the remaining ingredients, including chocolate chips, carrots, or any of the optional add-ins. Stir to combine.

Pour the batter into a lined 8 inch square baking pan. Bake for 20-22 minutes. Remove, cool completely, cut into bars.
