Almond Butter, Strawberry &amp; Banana Overnight Oats with Chia

medium ripe banana, mashed

almond milk (or milk of choice)

vanilla

gluten free rolled oats

chia seeds

strawberries, diced

Add banana, almond milk and vanilla greek yogurt to a medium bowl and stir until well combined and creamy. Stir in oats, chia seeds and strawberries. Divide evenly into two mason jars or plastic containers, then cover and place in fridge overnight.

Once ready to serve, top each overnight oat serving with 1 tablespoon of almond butter and a few extra banana slices and/or strawberries, if desired. If you like crunch, add chia seeds.

In a large bowl, mash together ripe bananas with a fork until creamy and most of the lumps are gone.

Stir in gluten-free oats, chia seeds, almond milk, cinnamon and vanilla extract. Mix until all ingredients are well combined. Cover and set in the refrigerator overnight (or a minimum of 3 hours).

To serve, dish into bowls or jars. Top with almond butter, cream, fruit, dried fruit chips, or any other favorite toppings of your choice. Optional: add in jam to the bottom of the jar for more sweet flavor.

In a medium-size bowl, mash the banana.

Add the oats, almond milk, chia, maple syrup and cinnamon to the mashed banana and mix well to combine.

Cover the bowl with clingwrap, or divide the mixture into two glasses or mason jars and cover. Refrigerate for 6 hours or overnight.

Serve with toppings of your choice and additional milk if the mixture is too thick.
