Barley water is a traditional cooling, detoxifying and hydrating Asian drink made with just 2 ingredients – barley and water. Recognized in many parts of the world as a refreshing beverage, it also offers some really great health benefits. 

Barley Water

Barley ((pot barley, hulled barley or pearl barley))

water ((4 cups for unsoaked))

rock sugar (or pink salt as needed (optional))

lemon juice (or as needed)

Add barley to a large bowl. Pick and discard any debris, hulls or stones.

Pour water and rinse them well at least 4 times in plenty of water. Rub and rinse them well. Drain the water completely.

Optional but recommended:  Soak them for at least 7 hours. Soaking the grains not only reduces the cook time but also avoids flatulence or abdominal gas, breaks down hard to digest gluten and reduces the phytic acid in the grains. After soaking drain the water and rinse them.

Cooking in pot: Add them to a large pot and pour 4 cups water. Bring to a boil on a medium high heat and then reduce to medium to low flame. Let simmer for 40 to 50 minutes until the barley is soft and slightly mushy. If required add more hot water as you cook.

Pressure cooker: Add the barley to a pressure cooker and pressure cook on a medium heat for at least 7 to 8 whistles, or until soft. When the pressure releases open the lid.

Instant pot : Add the soaked barley to the inner pot/ steel insert along with 3 cups water for soaked barley or 4 cups water for unsoaked .  Secure the lid and position the vent to sealing. Press the porridge mode &amp; set the timer to 20 mins. When the pressure drops, open the lid.

If you live in a colder country you can serve it warm or hot. But barley water in Asian countries is consumed at room temperature.

Strain barley water to serving glasses and consume it plain or sweetened with rock sugar, honey or any other sweetener you wish. You can also squeeze some lemon juice and relish.

Some of the cooked barley can be eaten along with the water or add it to salads. It can also be added to yogurt and mixed. Then topped with pomegranate arils.

Barley Water Recipe (Stove-top and Instant Pot)

First take the barley grains in a plate and pick, discard if any stones in them.

Rinse/Soak

Rinse the grains in a strainer for a couple of times. Next, there is the option to soak the grains for 4 to 5 hours or overnight. (See notes)

Next, proceed based on your cooking method:1. Instant Pot: Add the prepared grains to the steel pot of the IP. Pour in 5 cups of drinking water. Barley grains increase in volume a lot, so you may need to add more water while cooking. If you prefer a more concentrated barley water, only add 4 cups.2. Pan on a stove top: Add barley grains to a large pot with a tight fitting lid. Add 4 cups water. 3. Stove-top Pressure Cooker: Use at least a 3 to 4-litre pressure cooker as the water bubbles and froths while cooking. Add 4 to 4.5 cups water.

Cook Grains

Cook the soaked pearl barley.1. Instant Pot: Seal the lid and position the pressure release valve to sealing position. Press the pressure cook/manual button and pressure cook on high pressure for 20 minutes. When you hear the beep sound after the cooking is complete, wait for 10 minutes and then do a quick pressure release. After all the pressure and steam is released then only remove the lid. 2. Pan on a Stove top: Place the cover on the pot and cook for 30 to 35 minutes. 3. Stove-top Pressure Cooker: Cook for 12 to 15 minutes (or for 8 to 9 whistles) on medium-heat. After the cooking is complete, when the pressure falls naturally in the cooker, then only open the lid.

You will see a cloudy, opaque water and the barley grains all plumped and softened.

Strain

Let the water cool enough to handle. Strain the grains from the water using a mesh strainer. Lightly press the grains with the back of a spoon to extract the most water.

Flavor

Add lemon juice according to your taste preferences. Finally, add your sweetener of choice or omit the sweetener. Stir to combine. (For more flavoring ideas, read the notes below)

Serve

Pour in glasses and serve. You can serve barley water warm or cool depending on your preference. Feel free to garnish with some mint leaves if you like. Refrigerate any leftovers for a day only.

Pressure cooker method:

Add 4 cups water to a sauce pan - add 1/4 cup rinsed, soaked barley to it.

Let it boil.

Once it starts to boil, cook it partially covered for 20-25 mins. Open and stor in between.

After 20 mins, if you check the barley grains will be soft and slightly sticky. I usually have it as a snack as I love the texture. You can even add it to barley water while drinking.

Pour this into a strainer and press well to extract barley water completely.

Add lemon juice to it. Ther is no accurate measure for this, you can add it as per your taste. For 1 cup barley water you can add 1 teaspoon lemon juice which would be perfect.

Now add little cooked barley to it.

Mix it well and consume. You can even add icecubes and make it a chilled drink.

Stove top method:

Add soaked barley and add to instant pot inner pot along with water.

Secure the lid and position the vent to sealing.

Use manual pressure cook and set time to 20 mins.

Once it is done, let the pressure release manually, wait for it and open to check.
