Vegan Thai Basil Fried Rice with onion, peppers and cashews and made in the Instant Pot! This fried rice pairs well with any curry or is great on its own too!

Instant Pot Thai Basil Fried Rice

jasmine rice (260 grams)

water (300 ml)

sesame oil

garlic

ginger (chopped)

cashews (whole & raw)

onion

red bell pepper (sliced)

green chilies (sliced)

soy sauce

vegetarian oyster sauce

sriracha (or to taste)

black pepper

salt (or

thai basil (1/2 cup chopped and 1/4 cup whole)

cilantro (chopped)

Rinse rice until water turns clear and then add rice to the Instant pot along with water.

Close the lid and press the manual or pressure cook button. Cook on high pressure for 3 minutes, with the pressure valve in the sealing position.Let the pressure release naturally for 10 minutes and then do a quick pressure release.

Open the lid and fluff the rice with a fork. Then transfer the rice to another bowl and set aside.

Now, press saute the button. There&#x27;s no need to clean the pot, some rice will stick around and that&#x27;s fine.Once the pot displays hot, add the oil and then add the garlic and ginger.

Cook for 2 to 3 minutes until garlic, ginger starts changing color. Add cashews and cook for 1 minute.Then add onion, red pepper and green chili. Cook for 2 minutes.

Then push veggies to side and add soy sauce, vegetarian oyster sauce and sriracha. Mix to combine everything together.

Add the cooked rice back into the pot.

Mix well and add black pepper and salt and toss to combine.

Plug off the Instant Pot, add 1/2 cup chopped basil and chopped cilantro. Mix well until the leaves wilt.Finally add in 1/4 cup whole Thai basil leaves (not chopped).

Cook the rice: Rinse the rice until water turns clear. Bring 1.5 cups water to a boil in a saucepan. Add the rice, stir and then lower the heat. Simmer for 10-15 minutes until all water is absorbed. Follow rest of the steps as it is in a wok/pan.

Instant Pot Thai Basil Fried Rice (Vegan)

Thai Basil Chicken Fried Rice

chicken

oyster sauce

STIR-FRY SAUCE

fish sauce

Thai dark soy sauce

tbsp sugar

garlic cloves,

Thai chili peppers minced, to spice preference

tbsp. cooking oil of choice, coconut oil, oil

cooked day old jasmine rice or white rice

cup of diced onion

red pepper

lime (optional)

Marinate the thinly sliced 2 boneless, skinless chicken breasts in 3 tbsp. of oyster sauce for at least 20 minutes to overnight. 

Marinate the Chicken

In a glass measuring cup or in a bowl, mix up the stir-fry sauce of 2-3 tbsp Thai Oyster Sauce, 2-3 tbsp Fish Sauce, 2-3 tbsp Thai dark soy sauce, and 1 tbsp sugar.

In a mortar and pestle, pound up the 2-6 minced Thai chilies (totally up to you the spice level you can handle) and 4 minced garlic cloves until a paste has formed.

If you don&#8217;t have a mortar and pestle, use a mini food chopper, or use the side of a chef&#8217;s knife to smash them together some.

make the Stir-Fry Sauce

Add 2 tbsp of cooking oil of choice to a wok warmed up over medium high heat. 

Add in about half of the Thai chili garlic paste and stir-fry until it starts making you cough from the Thai chili heat! Lol!

Add in the marinated chicken and stir-fry until no longer pink and cooked through.

Take out the chicken and place it on a plate. 

Stir-Fry the chicken

To the same wok you just stir-fried your chicken in, no need to clean it out, add in 2 tbsp. of cooking oil of choice and put it over medium high heat. 

Add in the rest of the Thai chili garlic paste, 1/2 cup of diced onion, 1 red pepper that you sliced into 1/4 in. pieces, and stir-fry again until you are coughing and the onion and pepper have softened. 

Add in more cooking oil if needed, and then the 3 cups of cooked day old jasmine or white rice and stir it up until combined and is warmed through. 

Add back in the chicken, and now the the stir-fry sauce a little at a time, until you get the flavor you want without the rice getting mushy. You might have some leftover to use on another stir-fry later this week.

Turn off the heat, and add the 2-3 cups of Thai Holy Basil and mix it up until the Holy Basil has wilted. 

Make the Fried Rice

Plate it with a wedge of lime to squeeze over the serving, and if you want sprinkle with extra Thai holy basil leaves.

This Thai cauliflower fried rice is a low carb version of the classic Thai basil fried rice. An easy keto vegetarian side or lunch, you could easily turn this flavorful low carb cauliflower fried rice into a delicious keto dinner.

Thai Cauliflower Fried Rice

tbs sesame oil

carrots

bell pepper, chopped

zucchini

tsp garlic

tsp fresh ginger, grated

riced cauliflower

tbs tamari

tbs lime juice

eggs

tbs siracha

scallions

basil

peanuts

Heat sesame oil in a large skillet over medium high heat. Add the carrots, zucchini, and bell pepper. Stir and cook for 1-2 minutes until the veggies begin to soften. Add a tsp of pressed garlic and a tsp of fresh grated ginger.

When the carrots, zucchini, and bell pepper have begun to soften, add the cauliflower rice. Season with tamari and lime juice. Stir to combine. Let cook for 2 minutes.

Push the cauliflower rice and veggies over to one side of the pan and crack 2 eggs directly on the clear spot in the pan. Break the yolks and stir. As the eggs cook, stir them into the cauliflower. When all the eggs are cooked remove the pan from the heat. Stir in the siracha, chopped scallions, and torn basil leaves. Serve and top each serving with a half tbs of chopped peanuts if desired and garnish with lime wedges. Enjoy!
