Bihun Goreng Fried Vermicelli, also known as Bee Hoon Goreng. A popular stir fried vermicelli noodle dish that originates from Indonesia and is commonly eaten in South East Asia. Bihun Goreng consists of chewy springy vermicelli noodles fried with leafy greens, tender chicken, egg, bean sprouts, and garlic. Seasoned with a sweet soy sauce for the perfect flavour.

Bihun Goreng (Bee Hoon Goreng) (30-min. Recipe)

tbsp cooking oil

chicken thighs (sliced thinly)

garlic

eggs (whisked)

bean sprouts (rinsed in cold water)

green onions (finely chopped)

rice vermicelli (soaked in warm water

bok choy

cornstarch

soy sauce

tsp sesame oil

tsp sugar

tbsp sugar

tbsp kecap manis (or sweet soy sauce)

tbsp regular Soy sauce

tbsp sesame oil

water

First, marinate your sliced chicken thighs in cornstarch, soy sauce, sesame oil and sugar. Set aside. In another bowl, whisk together your noodle sauce ingredients.

Then in a hot pan set over medium high heat, add cooking oil and marinated chicken. Fry until 75% cooked. Then add garlic and green onions and mix with chicken. Allow this to fry for 30 seconds until fragrant.

Pour in your whisked egg and scramble it with the other ingredients.

Next add your leafy greens and bean sprouts. Incorporate with other ingredients and allow this to cook until the vegetables have wilted.

Toss in your strained noodles. Use a pair of scissors to cut them if they are too long to mix with the other ingredients. Pour in your noodle sauce.

Give everything a thorough mix until every noodle is coated brown and the ingredients are well incorporated. Serve immediately and enjoy!

This recipe shows you how to make Singapore street noodles (also called mee hoon goreng). It is a healthy version of Singapore fried bee hoon with chicken and red rice vermicelli, high in protein and low in fat. Never again suffer through rice noodles that&#039;s drowned in oil and fat!

Healthy fried bee hoon recipe (Singapore street noodles)

rice vermicelli (7 ounces) ((See note 1))

cooking oil, divided ((peanut oil or vegetable oil))

onion (finely chopped)

garlic (finely chopped)

cabbage (shredded)

carrots (julienned)

chicken breast (boneless, skinless)

dried prawns ((note 2))

eggs

bean sprouts

green onions (finely chopped for garnish)

oyster sauce

chilli sauce

chilli flakes ((reduce according to spice level))

sesame oil

white or black pepper

mushroom powder ((optional- see note 3))

salt

whisk

Whisk together all the ingredients listed under the sauce.

The sauce

Soak the dried prawns in hot water for 15 minutes. Meanwhile prep the other ingredients.

Clean and chop the chicken breast into bite-sized pieces. Marinate the chicken with 2 teaspoons of the prepared sauce. Keep aside.

Beat the eggs with a pinch of salt and pepper.

Preparation for fried bee hoon

Boil 6 cups of water with 1 tablespoon of cooking oil in a large pot or wok. Add the rice vermicelli to boiling water and cook for 2 minutes. Drain in a colander and immediately transfer to a bowl of room temperature water. Mix well, drain and keep aside.

Heat 2 tablespoons of oil in a large wok or pan. Once the oil becomes hot, add garlic and toss for a few seconds. Add onions and stir-fry for about 1 to 2 minutes.

fry chicken and vegetables

Add the marinated chicken and toss for 2 minutes. Drain the soaked prawns and add. Fry for 1 minute. Next stir-fry the carrots and cabbage for a minute.

scramble eggs

Create some space in the middle of the wok by pushing the ingredients to the sides. (As you can see in step-by-step pictures in the post above.)Add the beaten eggs and scramble until half-cooked. Toss with the rest of the ingredients.

fry vermicelli

Mix in the blanched vermicelli, add sauce and toss with tongs or chopsticks until all ingredients come together. Do not toss for more than 2 minutes or else you risk overcooking and breaking the vermicelli.

fry bean sprouts

Add bean sprouts, toss for a minute and remove from heat.

serve

Garnish with green onions and transfer to a serving bowl. Enjoy!
