Beef barley soup is loaded with chuck roast, carrots, celery, onion, and pearl barley.  Fresh thyme adds tremendous flavor to this hearty and comforting soup.

Beef Barley Soup

beef chuck (cubed)

olive oil

onion

celery

carrots

garlic (minced)

dry red wine

low-sodium beef broth

Worcestershire sauce

thyme

pearl barley

salt and pepper (to taste)

parsley (minced)

Heat a large heavy pot to medium heat and add the olive oil.  Pat the beef dry with paper towels and season with salt and pepper on all sides.  Sear the beef on all sides until well browned.  Work in batches if required.  Do not overcrowd the pan.

Set all the beef to the side and add the onions, celery, and carrots.  Saute for 5 minutes then add in the garlic and cook for 1 minute longer.

Add the red wine and turn the heat to high.  Reduce by half (about 2 minutes) and scrape the bottom of the pot with a wooden spoon to remove all of the flavor bits.

Add the beef broth, Worcestershire sauce, thyme, and the beef back to the pot.  Once boiling turn the heat down to a simmer.  Simmer for 45 minutes with the lid partially covered.

Next, add the barley and cook at a simmer until tender (about 45-60 minutes).  Taste test along the way and once the barley is tender, remove the pot from the heat.

Taste test and adjust salt and pepper to taste.  If the soup is too thick, add water or extra low-sodium beef broth to thin it to personal preference.  Add the parsley before serving. Enjoy!

2 (907 grams) pounds beef chuck - cubed

6 (1440 grams) cups low-sodium beef broth
1 (17 grams) tablespoon Worcestershire sauce
3 sprigs thyme
1 (180 grams) cup pearl barley
salt and pepper - to taste

Beef Barley Soup: The Best Comfort Food You'll Ever Taste

This hearty and satisfying Keto Beef Barley Soup has all the flavors and textures of the classic favorite, but in a keto and Whole 30 friendly package!

Keto Beef Barley Soup - Instant Pot, Whole 30

lbs stew beef

salt

black pepper

avocado oil

garlic

tomatoes

beef broth

walnuts (or sunflower seeds

raw riced cauliflower

thyme leaves

xanthan gum (optional thickener)

red wine vinegar

parsley

Heat oil in Instant Pot on saute function.

Add the tomatoes, onions, celery, garlic, and beef broth.

Seal and cook on manual / high pressure for 30 minutes.

Release pressure using natural release and then carefully remove cover.

Remove any bones (if applicable) and cut the meat into bite sized pieces if necessary.

Return meat to the pot and add the walnuts, cauliflower rice, fresh thyme, and xanthan gum if using.

Seal the pot and set to low pressure for 15 minutes.

Quick release pressure, then remove the cover, add vinegar and parsley, and season with additional salt and pepper as desired.

Instant Pot Instructions:

Heat oil in a large (5 &#8211; 6 quart) heavy bottomed pot.

Cover and simmer over medium low heat for 1 &#8211; 2 hours, or until the beef is fork tender.

Simmer for an additional 30 minutes, or until the walnuts reach the desired texture.

Add vinegar and parsley, and season with additional salt and pepper to taste.

Stove Top Instructions:

Transfer the beef to your slow cooker and add the tomatoes, onions, celery, garlic, and beef broth.

Cover and cook on high for 4 hours or low for 6 hours.

Cook on high for an additional 30 minutes, or until the walnuts reach the desired texture.

Slow Cooker Instructions:

Ingenius idea!   One of my favorite soups is mushroom-beef barley.  I added mushrooms to your recipe, but had only half the amount of tomato on hand.  Worked wonderfully.  This recipe is a keeper!!!!

This soup is delicious! I am anemic, so I left out the walnuts, as I have read that walnuts block iron absorption. I used twice the cauliflower rice, a little more oil, and a little more celery instead. Still fell into the Keto macro margins, I think. Thanks for another fantastic recipe!

Oh. Also... I started the cooking process in my Instant Pot and the ingredients didn't all fit. Moved to a big pot on the stove top. NBD. But if you are planning to make this recipe in an Instant pot, it needs to be a big one!
