Healthy Beef and Broccoli

lb flank, tri-tip or sirloin steak (thinly sliced against the grain)

broccoli

white onion (thinly sliced)

tbsp oil for frying (I use avocado oil)

beef broth (low sodium)

soy sauce (I use Bragg's liquid aminos)

tbsp maple syrup, honey or brown sugar

cornstarch

garlic

tbsp ginger (minced)

green onion sprig, finely chopped & for garnish (optional)

tsp sesame seeds,

Prep all ingredients for beef and broccoli and start side dish like rice on the stove.

In a small bowl, add soy sauce, maple syrup, garlic and ginger; whisk with a fork and set aside.

In a bowl, add beef, sprinkle with cornstarch and stir well to coat, using tongs.

Preheat large ceramic non-stick skillet on medium-high heat and swirl 1 tbsp oil to coat. Add half of beef and cook for about 3 minutes per side or until nicely browned. Transfer to a plate and set aside. Add remaining 1 tbsp of oil and repeat this step with remaining half of meat.

Return skillet to high heat and add broth. Deglaze pan for about 2 minutes. Add broccoli and onion, stir and cook for about 3 minutes.

Add sauce and previously cooked beef. Reduce heat to medium-low and cook for 3-5 minutes, stirring often to combine everything and until sauce has thickened. Cornstarch from beef will incorporate with the sauce and thicken it. But don&#039;t cook too long to overcook the broccoli.

Garnish with green onion and sesame seeds. Serve hot over brown rice, quinoa or noodles of choice.

Make the rice: Wash the rice in a medium bowl of water, draining and refilling until the water is clear. Pour the washed rice into a large pot and add 3 cups (720 ml) of fresh water. Let soak for 30 minutes.

Place the rice on the stove over medium-high heat and bring to a boil. Cover, reduce the heat to low, and simmer for 12 minutes, or until all of the water is absorbed by the rice. Turn off the heat and let the rice rest with the lid on for 10 minutes, then fluff the rice and set aside until ready to use.

Make the stir fry sauce: In a liquid measuring cup or medium bowl, combine the soy sauce, honey, ginger, and garlic. Whisk to combine.

Make the filling: Heat the vegetable oil in a medium pan over medium heat. Add the beef, salt, and pepper and cook until the meat is browned and cooked all the way through, 3-4 minutes. Remove the beef from the pan.

Add the onion and broccoli to the same pan. Cook for 2-3 minutes, until slightly tender. Add the stir fry sauce. Combine the cornstarch and water in a small bowl and stir until cornstarch dissolves. Pour into the pan. Cook for 2-3 minutes more, or until the sauce is thick and the broccoli is tender.

Return the beef to the pan, add the sesame seeds, and stir until thoroughly combined. Remove the pan from the heat.

Line a 5-inch (13 cm) diameter bowl with plastic wrap. Scoop two tablespoons of rice into the bowl and use the back of a spoon (or your fingers) to flatten in an even layer against the inside of the bowl.

Add a ½ tablespoon of filling and top it off with a little more rice. Use the plastic wrap to mold the rice around the filling. Unwrap and use your hands to shape the rice into a triangle. Repeat with the remaining rice and filling.

In a medium pan, heat the vegetable oil over medium-high heat. Add 2-3 rice triangles to the pan and fry on each side for 1-2 minutes, or until the rice is crispy and starting to turn golden brown.

Brush soy sauce on all sides of the triangles and fry each side for another 1-2 minutes, or until dark golden brown. Repeat with the remaining triangles.

Sprinkle the rice triangles with scallions, then serve.

Flank Steak (Cut in 1/4-inch strips agains the grain)

Soy Sauce (low sodium)

Tablespoons Sesame Oil

Black Pepper (freshly ground)

Tablespoons Light Brown Sugar

Tablespoon Garlic (minced)

Tablespoons Fresh Ginger (grated)

Red Pepper Flakes (omit if you don't like spicy)

Chinese Five Spice (optional)

Tablespoons Peanut Oil (divided (may use Vegetable oil.)

Cups Broccoli Florets

Sesame Seeds (optional for garnish)

Slice the flank steak into pieces that are about 1/4&quot;inch thick - against the grain.

Whisk the 2 Tablespoons of cornstarch into 3 Tablespoons of water and mix well.

Add the sliced flank steak to the cornstarch mix and coat evenly. Set aside.

Grate the ginger and place in a small bowl along with the soy sauce, dry sherry, sesame oil, black pepper, red pepper flakes, brown sugar, garlic, and remaining cornstarch. Mix well and set aside. (Mix in Chinese Five Spice, if desired)

Prepare the broccoli by trimming it into bite size florets.

Add 1 Tablespoon of the vegetable oil to a large skillet and add the broccoli. Cook for about 4-5 minutes over medium-high heat then set aside. (You may need to add a few Tablespoons of water if the veggies begin to stick.)
