Crispy Curry Beef Stir Fry

lb flank steak (,

tbsp rice vinegar

Chinese curry powder

In a bowl mix the curry powder, vinegar and soy sauce. Add the thin strips of beef and massage with hands to cover each piece of meat with marinade. Cover and place in refrigerator to rest for 30 minutes.

In a wok placed over high heat, add the oil. In small batches to ensure the meat gets seared, not steamed, quickly stir fry the meat until cooked on both sides, 2-3 minutes. Remove from wok and set aside.

Add the 1/2 cup of beef stock and scrape up bits of caramelized beef bits. Add the black bean paste and stir. Stir in the cornstarch slurry and stir to create a smooth sauce. Cook for a minute and add the meat back in and stir fry for 3-4 minutes. Season to taste with salt and white pepper if needed. Serve with steamed rice and vegetables if desired.

Coconut Beef Curry

900 g (2 lbs) braising beef (, cubed)

tbsp concentrated tomato paste

250 ml (1 cup) beef stock

400 g (13.5 oz) can unsweetened coconut milk

red chilli (, whole)

cinnamon stick

potatoes

lime juice (,

salt and pepper to season (, if needed)

sprinkling dessicated coconut ((optional))

Preheat the oven to 160C / 325F and set a rack on the lower third of the oven.

Heat oil in a large lidded casserole (Dutch Oven) and sear the beef over medium-high heat, in batches, until nicely browned on all sides.

Add the Chinese Five Spice, curry powder, sugar, salt and pepper and cook, stirring, about 3 minutes.

Add a splash of the beef stock to deglaze the pot and scrape in any browned bits.

Stir in the chopped onions, minced ginger and garlic and cook for about 5 minutes.

Stir in the tomato paste.

Add the remaining beef stock and coconut milk.

Bring to a simmer, add the cinnamon stick and whole chilli, cover and cook in the oven for 40 minutes.

Carefully remove the pot from the oven and add the potatoes. Cover and cook for a further 30-40 minutes or until the potatoes are cooked through and meat is perfectly tender.

Discard the cinnamon stick and whole chilli. Taste and add the lime juice and adjust the seasoning if needed.

Garnish with fresh basil leaves and chopped chilli. Serve on its own with lime wedges on the side or over rice for a more substantial meal.

Place onion, tomatoes, garlic, and cilantro in a blender jar. Put the tomatoes at the bottom so that they will liquefy first and you won't have to add water.

Puree until all the vegetables have turned to a smooth mush.

Add the various spice powders in and whirl it around a bit more.

Place the beef into a Instant Pot and pour the veggies on top.

Cook under pressure for 20-30minutes depending on the type of beef you've used. Confession: I used beef chuck short ribs because I wanted to be able to give my doggie the bones. Okay great idea, messy execution. The bones came right off the meat, but then I had to fish them out of the gravy with tongs, then I had to cut off the cartilage, oy veh! Get boneless meat, or prepare for a bit of a mess.

Okay that's it! Serve over rice or cauli-rice if you're watching carbs. Amazing, authentic tasting curry with no slaving over a hot stove to brown the onions and tomatoes and what not. Yummy!

Malaysian slow-cooked beef curry

British braising steak, cubed

plain flour

Rapeseed oil

For the curry paste

bird’s eye chillies,

½ tsp hot paprika

½ tsp ground turmeric

¼ tsp ground cloves

¼ tsp freshly grated nutmeg

Heat the oven to 150°C/130°C fan/gas 2. Put the curry paste ingredients in a mini food processor and pulse to combine (or pound to a paste with a pestle and mortar).

Coat the steak in the flour, then season with salt and pepper. Heat a glug of oil in a large lidded casserole, then add the curry paste and cook over a medium heat for 1-2 minutes until fragrant. Add the onion and braising steak and fry for 5-10 minutes until the meat has browned. You may need to do this in batches.

Add the lemongrass, cinnamon, star anise, cardamom pods, kaffir lime leaves, coconut milk and stock. Bring to a simmer, then put the lid on and cook in the oven for 3-4 hours until the beef is fall-apart tender.

Remove the curry from the oven and stir in the toasted coconut, kecap manis, coriander and lime juice to taste. Serve with steaming hot jasmine rice, scattered with extra chilli, toasted peanuts and coconut flakes, if you like.

Select the Saute function. Add oil to Instant Pot and working in batches, sear beef until browned on all sides, stirring frequently. Be careful not to burn. Turn off Instant Pot if it gets too hot. Remove beef with a slotted spoon and set aside.

Turn Instant Pot off and add onions, garlic, ginger, jalapenos and stir well.

Select Saute again and add 1 to 2 tablespoons of broth to deglaze Instant Pot, scraping up all the brown bits.

Saute onion mixture till golden brown, stirring often. This will take about 5 minutes. If the mixture sticks to the bottom, add a tablespoon or two of broth.

Add reserved beef, salt, black pepper, turmeric, A-1 steak sauce and saute briefly to coat the beef with spices.

Add broth and stir.

Close Instant Pot Lid and pressure cook on HIgh Pressure for 15 minutes.

Add potatoes and carrots to Instant Pot and close the lid again.

Pressure cook for 3 minutes on high pressure and do a quick release of pressure (QR).

Add coconut milk to the Instant Pot beef curry and stir to combine. Taste and season with salt to taste.

Select Saute mode and heat through.

Turn off Instant Pot, sprinkle beef curry with cilantro and stir.  Serve with crusty bread, naan or over rice.

Heat oven to 320F / 160ºc.

Toss beef in flour, salt &amp; pepper. Add oil to a large casserole, on a high heat, and fry beef in batches for a couple of minutes until browned. &nbsp;Set aside.

In the same casserole, add a splash more oil, turn heat to med-low, and add ginger, chilli, cardamom, cumin and garlic - heat for two mins until fragrant. &nbsp;Add onions, leeks and peppers. Heat for 5 mins until soft, stirring occasionally.

Add oyster, soy and fish sauces, along with lime juice, zest and coconut milk. Stir well.

Stir in beef and cook for 5 mins.

Add in beef stock, tomato puree and bring to the boil. Pop lid on and put in oven for 3hrs.

Once cooked, bring out of oven and stir in green beans&nbsp;and coriander and let sit for 10 minutes before serving.

Cut the beef into same-size small cubes. Season the beef cubes with salt, turmeric, chilli powder, garam masala, ginger, and cooking oil. Mix it well and marinate for 15 minutes.

Heat the pan to medium heat and add oil. Once the oil is hot, add cumin seeds, cinnamon, and bay leaves. Let them sizzle for a few seconds.

Next, add onions and cook until translucent. Then add the grated garlic and sauté for a few seconds until light brown. Then add the tomatoes and cook until the tomatoes are soft.

Add beef and ground spices ( chilli, turmeric, coriander powder, garam masala ). Combine everything well and cook for 1-2 minutes. Then add water and salt to taste.

Stir everything well. Bring the heat to low, close the lid and simmer for 1 hour or until the beef is tender. ( Check occasionally and add more water if necessary. )

Once the beef is tender, turn off the heat and add coriander. Transfer to a serving plate and garnish with coriander and serve with plain basmati rice, naan, or chapati.
