Beef Kofta Recipe

Medium Onion

Cloves Garlic

Cup of Fresh Parsley

Lbs Ground Beef (can use lamb or even a combination of both)

Teaspoons Cumin

Salt

Teaspoon Pepper

In a small food processor chop up the onion, garlic, and parsley.

Place the ground beef into a large bowl and top with the rest of the ingredients.

Mix the beef mixture until combined.

Shape the mixture into beef kofta kebab shapes and grill as is or place on a skewer then grill.

Grill or pan fry until cooked thoroughly, about 4-6 minutes per side depending on the size and thickness. We cook until well done,&nbsp;160 to 165 degrees F.

This baked kofta kebab is so easy, convenient, and delicious. It is a fantastic main dish alongside salad, rice, and/or pita!

Baked Kofta Kebab

1.5 lb Ground Beef (I use 90/10 ratio ground beef)

tbsp Tomato Paste

tbsp Allspice, ground

Garlic powder

tsp Smoked Paprika

Salt & Pepper

Parsley

Red Bell Pepper

Jalapeno

Yellow onion, small-medium

Garlic cloves

Tomato, sliced

Yellow onion, sliced

Preheat the oven to 375F.

In the food processor, pulse all the ingredients for the salsa until fine. You don&#039;t want to over pulse to where the mixture is wet but just enough until it is fine.

Add this to the ground beef. Season the beef with salt, pepper, allspice, garlic powder, tomato paste, and smoked paprika.

Mix together just enough to where the components are well combined.

Add the beef to an 8 x 8 baking dish and spread out evenly.

Top this off with a flat layer of tomatoes and onions. Season with salt and pepper.

Bake in a preheated 375F oven for 40 min covered with foil. At this point, the kofta will have released excess liquid. You can pour that into the sink by tilting the baking pan or keeping it. I prefer to get rid of it. Bake uncovered for another 10 min then broil for 1 minute.

Cut into 4 squares. Enjoy a piece with a side of rice, salad, and yogurt.

Season the kofta meat:

Season the kofta meat: Add the meat, diced onion, minced garlic, chopped fresh herbs, and spices to a large bowl and mix until combined well. 

Chill the kofta mixture:

Chill the kofta mixture: Cover the bowl with plastic wrap and then place it in the fridge for at least 30 minutes or up to overnight.

Form the koftas:

Form the kofta kebabs: Measure out about ½ cup of the kofta mixture. Now, with damp hands form it into the shape of a cylinder and then skewer it making sure to fit the ground meat cylinder tightly around the skewer. Then repeat this process until there is no remaining kofta mixture. The ground meat really needs to be molded to the skewer for the best results.   

Prepare The Kofta Kebabs

Preheat the grill:

Preheat the grill: Oil the grates of your grill and then heat it to around 450°F (230°C). If you are using a grill pan instead, you will want to add about a tablespoon of oil to it and heat it to medium-high.

Grill the kofta kebabs:

Grill the kofta kebabs: Place the skewered kofta kebabs on the grill to cook for about 5 minutes turning them from time to time so that they evenly brown on all sides. If necessary you will want to cook the kebabs in batches rather than crowd your grill or grill pan.

Grilling Option

Preheat air fryer:

Preheat air fryer: Preheat your air fryer to 380°F (195°C).

Air fry the kofta kebabs:

Air fry the kofta kebabs: Place a few kofta kebabs in the air fryer basket, do not over-crowd, and air fry for 7 to 8 minutes, shaking the basket halfway through.

Serve the koftas:

Serve the kofta kebabs: For a delicious authentic Middle Eastern meal serve the kofta on warm pita bread with the tzatziki sauce, hummus, Greed salad, and feta cheese.

Koftas (Beef Or Lamb)

This kafta kabob (or “kofta” or “kefta”) is so simple and delicious. Made usingground beef that’s skewered and perfectly seasoned with Arabic spices, thisrecipe is versatile and comes together in under 30 minutes!

Juicy Beef Kafta Kabobs (Skewers or Patties)

beef

parsley (approx. 2 cups packed)

garlic

1.5 tsp 7 spice (middle eastern spice mix)

tsp cumin

paprika

tsp black pepper

onion powder

tbsp olive oil

tbsp flour (see notes)

Using a food processor, add the garlic, onions and parsley and process for a few seconds until finely chopped

Add the mixture to the ground beef in a bowl, and add all the seasoning and olive oil. Mix well using your hands, then add the flour (see notes) and continue to mix until you form a dough (if dough does not feel firm, add slightly more flour)

Form the Kafta into approximately 3-4 inch long pieces about 1 inch in thickness

Heat up your BBQ or a grill pan on the stove and add a dash of olive oil (I recommend cast iron)

Grill each Kafta for 2-3 minutes on each side (test a piece to ensure it is cooked to your liking) for a total of 6-8 minutes (see notes for baking)

Serve with a yogurt tahini sauce (see Eggplant Fatteh for sauce recipe) over rice, salad, or in a wrap

Hello Amina! I have noticed when making kafta either in pan with batata or on the skewer that it comes out with a metallic taste.  I am assuming it is from the parsley.  Do you know how to avoid this?  I usually use curly, but would flat leaf fix this? I love Kafta, I have eaten it since I was a child, but since now I am grown my family is no longer around to make this, so I have to recreate from memory.  I never remember it tasting metallic growing up.
