This busy day soup is a comforting bowl that comes together quickly with little effort and just a handful of hearty, easy-to-find ingredients.

Busy Day Soup

(28 ounce) can diced tomatoes, (with their juice)

(12 ounce) frozen mixed vegetables

Parmesan cheese

Heat olive oil (1 tablespoon) in a large pot. Add ground beef (1 pound) and cook, crumbling with a spoon, until beef is cooked through and there is no longer any pink. Remove and discard any excess fat. Sprinkle onion soup (1 (1-ounce)package) over beef and stir.

Stir in broth (4 cups), tomatoes (1 can), and vegetables (12 ounces). Bring to a boil. Add pasta (1 cup); boil for 10 minutes. Remove from heat and serve. Pass a bowl of Parmesan cheese to sprinkle on top.

This simple but satisfying, hearty Beef and Tomato Macaroni Soup will be a repeat visitor to your dining table when the temperatures drop and appetites grow.

Beef and Tomato Macaroni Soup

green bell pepper, (finely chopped)

garlic, (minced)

chili powder

oregano

salt

black pepper

condensed cream of tomato soup

(15-ounces) can diced tomatoes (undrained)

water

pasta

Heat the vegetable oil (2 tablespoons) in a large pot over medium-high heat. Add the onions (1), green bell pepper (1), and garlic (2 cloves) and saute until the onion mixture begins to soften about 5-6 minutes. 

Add the ground beef (1 pound), crumbling with a wooden spoon, cook until there is no longer any pink. Drain off excess fat. 

Add the chili powder (2 teaspoons), oregano (2 teaspoons), salt (1 teaspoon), and pepper (1/2 teaspoon) and cook over medium heat for 1-2 minutes.

Add condensed cream of tomato soup (2 (10.75-ounce) cans), diced tomatoes with their juice (1 (15-ounces) can), beef broth (32 ounces), and water (4 cups).

Bring to a boil, add pasta (2 cups). Reduce heat and cover and simmer until the pasta is just al dente. Adjust seasoning and serve.

Love this soup so easy to make.
I use large jar of stewed tomatoes and tomato paste in place of the canned soup.
We have to watch sodium intake so can’t us canned soups.

Did you still use the 4 cups of water and all the other same amounts of ingredients?

My husband and I love this soup, especially when it’s cold outside. It’s become a staple for us year round! It’s so easy to make, yet full of flavor. Highly recommended!
