A delicious and easy layered Taco Casserole with chips, refried beans, taco seasoned ground beef, oodles of cheese, cilantro, and Pico de Gallo.  

Easy Taco Casserole Recipe

½ lbs ground beef

onion

taco seasoning

water

broken tortilla chips

can refried beans

sour cream

hot sauce

cheddar cheese

Monterey Jack cheese

cilantro

Pico de Gallo (optional)

Sour cream (optional)

Preheat oven to 375 degrees.  Lightly grease a 11x7 inch baking dish.  

Brown the ground beef in a large skillet over medium heat. About halfway through the browning process, add the onions and cook until the beef is browned and the onions are soft. Add the taco seasoning and water and bring the mixture to a boil. Reduce the heat and simmer for 8-10 minutes.

Layer the tortilla chips in the bottom of a casserole dish. Warm the refried beans in the microwave for 2 minutes at 60% power.  Add the sour cream and the hot sauce to the beans.  Stir to combine. 

Smooth the refried beans over the chips using an offset spatula. Spoon on the cooked seasoned ground beef mixture. Sprinkle evenly with the cheddar and the Monterey Jack Cheese.  

Bake uncovered 15-20 minutes or until the cheese is melted and the casserole is heated through. Top with cilantro, Pico de Gallo, and if desired sour cream.

I feel as if you can never go wrong with tacos. It is always good no matter how it is served.

Beef Taco Casserole made with green chilis, black beans, salsa, sour cream all combined with ground beef and cheese and layered with flour tortillas!

Beef Taco Casserole Recipe

oz can diced green chilis

black beans (drained)

salsa

flour tortillas

colby jack cheese

Preheat the oven to 375°F.

Cook your ground beef in a medium skillet over medium-high heat for about 5 minutes, or until it is no longer pink in the middle. Use a spatula to break up the beef while it cooks and drain as much grease as you can once it is fully cooked.

Add the taco seasoning, green chilis, and black beans to the pan. Reduce the heat to low and slowly stir the ingredients together, letting the mixture continue cooking for 3-4 more minutes. Set aside.

Add a few spoonfuls of salsa to the bottom of a 9x13 inch baking pan. Place 2 whole tortillas on the bottom of your pan and then cut 2 additional tortillas to fill the gaps. Top your tortillas with sour cream followed by salsa, half of the beef mixture and 1 cup of cheese.

Repeat this process again. Top the second layer of beef with the remaining tortillas, a few more spoonfuls of salsa, and the remaining cheese.

Bake the casserole for 30 minutes, or until the cheese is melted and bubbly.

Let the taco lasagna rest on the counter for about 5 minutes before slicing. Serve and enjoy topped with shredded lettuce and additional salsa, if desired.
