This Beef Tamale Casserole will certainly make your dinner time easy. We&#x27;re talking comfort food to the max: layers of cornbread, enchilada sauce, spiced ground beef, all loaded with cheese then baked to perfection!

Beef Tamale Casserole

cornmeal

4.5 oz diced green chiles ((1 can))

Preheat your oven to 400 F degrees.

Add the cornmeal, sugar, salt, baking powder to a medium size bowl and whisk together. Add the egg, butter, and buttermilk and whisk well. Stir in the creamed corn and the green chiles.&nbsp;

Pour the cornbread mixture into a large skillet or a 9x9 inch baking pan. Bake for 20 to 25 minutes or until the edges are golden and the cornbread is done. Insert a toothpick in the center of the cornbread, if it comes out clean, it's done.

While the cornbread is cooking, prepare the beef. In another large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until no longer pink, about 5 minutes. Add the onion, garlic, cumin, chipotle powder, chili powder, salt, pepper and stir. Cook until the onion has softened, another 3 to 5 minutes.

Add half of the enchilada sauce to the meat mixture and stir. Set aside.

When the cornbread is done, poke holes into it with a fork, or I used the end of a wooden spoon. Pour the remaining enchilada sauce over the top of the cornbread and spread.&nbsp;

Top with the ground beef and the shredded cheese.&nbsp;

Bake the casserole for another 15 minutes or until the cheese has melted and has started to lightly brown on top.&nbsp;

Let cool for about 5 minutes, then top the casserole with cilantro and your favorite toppings.

Easy Tamale Pie Recipe with Cornmeal Crust

black beans (drained, rinsed)

green chiles (drained)

black olives (sliced, drained)

chile powder (use Jalapeno or Chipotle chile powder

cumin

garlic powder

onion powder

salt

yellow corn meal (or corn flour)

whole milk (other percentages may be used)

granulated sugar (may omit if desired)

eggs

cheddar cheese (mild, Mexican or Sharp)

Preheat oven and prepare skillet or baking dish.

Preheat oven to 350 degrees F and grease a 9x9 baking dish (or 10x7) or make the whole thing in a 10 inch oven safe skillet such as a cast iron pan.

Heat large skillet and cook ground beef, drain excess grease.

Heat a large skillet (10-12 inch) over medium-high heat. Cook ground beef and onion until beef is browned, breaking apart, stirring often. Drain any grease from the skillet.

Add remaining ingredients, simmer 10 minutes.

Stir in the tomatoes, corn, black beans, olives, chiles, chili powder, cumin, onion powder, garlic powder and salt. Bring to a simmer, reduce heat and simmer until thickened; about 10 minutes. Pour mixture into prepared baking dish, or if using the same pan, remove from heat.

Mix corn meal and liquids until just combined. Allow to sit.

This is so much better for you and tastier than Jiffy Mix. In a medium bowl combine cornmeal, milk, sugar, corn, and eggs just until moistened and combined. Stir in cheese and allow to sit while the tamale pie mixture simmers. It will thicken as it sits.

Spread cornbread mix on top of ground beef mixture.

Once ground beef casserole mixture is done, spoon cornbread topping on top, spreading evenly.

Bake uncovered in a preheated oven for 40-50 minutes until the top is golden brown and tamale pie is bubbly.

Remove from the oven and allow to cool for about 10 minutes before serving. Serve with a little sour cream, avocado slices, salsa if desired.
