Make the cabbage slaw: Combine the cabbage, onion, tomato, cilantro, jalapeño, lime juice, and salt in a large bowl. Toss well, then set aside.

Make the crispy fish: In a large bowl, combine the flour, Old Bay, and baking powder. Add the beer and whisk until smooth. Let sit for 15 minutes.

Heat the vegetable oil in a large pot until it reaches 350°F (180°C).

Coat the fish in the batter, then transfer to the oil and fry until golden on the outside and cooked through, 5-7 minutes. Drain the fish on a wire rack set over a baking sheet lined with paper towels.

Make the avocado crema: Add the avocados, sour cream, lime juice, and salt to a blender and blend until smooth.

To assemble the tacos, add a bit of the cabbage slaw to a warmed tortilla. Top with a piece of fried fish, avocado crema, and sliced radish.

Add the potatoes to a bowl of cold water to remove excess starch and prevent discoloration.

Pour oil to a depth of 6 inches (15 cm) in a large heavy pot. Heat over medium-high heat until oil reaches 325˚F (160˚C).

Drain the potatoes and blot dry thoroughly with paper towels.

Working in batches, fry the potatoes in the hot oil for about 5 minutes, or until pale golden. With a slotted spoon or spider, transfer to a wire rack to drain. Season with salt.

Increase the heat to high. When the oil temperature reaches 375˚F (190˚C), return the fries to the pot and fry until golden brown. Transfer to the rack to drain again and season with more salt.

Reduce the heat to medium-high to let the oil temperature reduce to 350˚F (180˚C).

Pat the cod fillets dry with a paper towel. Season all over with salt and pepper.

Add 1 cup (125 G) of flour to a plate. Dredge the cod in the flour, shaking off any excess.

In a large bowl, whisk to combine the remaining 1½ cups (185 G) of flour, 1 teaspoon salt, and baking powder. Gradually add the beer, whisking until smooth.

Dip the dredged cod in the batter, turning to coat completely.

Fry the cod in the hot oil until golden brown on all sides, 3-5 minutes. Transfer to a wire rack to drain for 3 minutes. Season with salt.

Garnish the fish and chips with parsley and serve with lemon wedges, tartar sauce, ketchup, and malt vinegar.

In a large pot over medium-high heat, bring 3 inches (8 cm) of oil to 375˚F (190˚C).

Peel and cut onions crosswise into ½ (1 ⅓ cm) inch slices.

Separate into rings and place in a large bowl with ice water while you prepare the batter.

In a medium mixing bowl, whisk together 1 cup flour (125 g), salt, white pepper, and baking powder.

Whisk in beer and 2 tablespoons of ice water until just combined.

In a separate bowl, add the remaining 1 cup (125 g) of flour.

Remove the rings from the ice water bath and pat dry. Coat the rings first in the flour then in the batter, allowing any excess to drip off.

Working in batches, transfer battered rings to hot oil to cook for 2 to 3 minutes, or until golden brown.

Transfer to a paper towel lined rack to drain. Sprinkle with salt.

This version of the classic British food has an extra crispy exterior since it’s fried with a combination of all-purpose flour, rice flour, beer and a bit of vodka.

Crispy Battered Fish and Chips Recipe

large Russet potatoes ((about 2½ pounds, scrubbed and peeled))

white vinegar

Vegetable oil, (as needed, for frying)

Kosher salt, (as needed)

black pepper, (as needed)

white rice flour

turmeric

vodka

Sliced lemon, (for garnish)

Malt vinegar, (as needed)

Tartar sauce, (as needed)

Slice the peeled potatoes into ½” (1.3cm) thick planks and cut each plank into ½” (1.3cm) fries. Add the cut fries to a large bowl filled with cold water and the vinegar and let sit for 30 minutes.

In a heavy-bottomed pot add enough oil to reach 2” (5cm)  up the pan. Heat the oil to 250ºF (130ºC). While the oil heats, drain the fries and pat completely dry. Working in batches, add a handful of the fries to the oil and fry, stirring occasionally, until cooked through, about 5 minutes.

Increase the heat. Use tongs to remove the potatoes to a paper towel-lined baking sheet. Repeat with the remaining fries. Let all the fries cool to room temperature then increase the temperature of the oil to 350ºF (180ºC).

Fry for a second time and season. Working in batches again, add fries to the oil and fry until golden brown and crispy, about 3 minutes. Remove to a paper towel-lined baking sheet once more to drain and season with salt.

For the fries:

Cut the fish into filets. Pat dry with paper towels to remove any excess moisture. Season with salt and pepper and set aside.

Return the oil to heat, adding additional oil to the pan if needed. Heat the oil to 400ºF (200ºC).

In a large mixing bowl, whisk together the all-purpose flour, rice flour, baking powder and turmeric. Stir in the vodka followed by the lager until just combined.

Working a few pieces of fish at a time, add to the batter and turn to coat completely. Remove the fish from the batter one piece at a time, making sure any excess batter drips off.

Add to the hot oil and fry, turning once, until crispy, golden brown and just cooked through, about 3 minutes total. Remove from the oil and let drain on a wire rack set over a paper-towel lined baking sheet. Repeat with the remaining fish.

For the battered fish:

Divide the fish and fries among serving plates. Serve with a lemon wedge, tartar sauce and malt vinegar.

For serving:

We had these fish and chips last night. They were as good or better than the ones we had in our multiple trips to England!  Loved both the “fish” and the “chips”!
