Bellini cocktails are perfect for summertime! For this simple and delicious recipe, you'll only need ripe, juicy peaches and Prosecco. Recipe yields 5 bellinis; multiply for a crowd.

First, make peach purée: Peel your peaches, slice them in half, and remove the pits. Place the halved peaches in a blender or food processor, and blend until the purée is completely smooth. Peach purée is best served chilled, so place it in the refrigerator for at least 30 minutes to cool.

When you&#8217;re ready to serve, pour 2 ounces (1/4 cup) chilled peach purée into a Champagne flute. Pour in some chilled Prosecco, being careful not to overflow the glass. Gently stir with a spoon to combine.

Top off the drink with another splash of Prosecco and garnish with a peach slice, if desired. Serve at once!

Made these last night for my husband and I after the kids went to bed. My husband isn't really a fan of sweet drinks, nor wine for that matter, but we both really enjoyed these. Real, whole peaches definitely make the difference between a light, fresh sweetness and that sickly sweet syrup in most standard cocktails. These were fantastic and I'm definitely making them at our giant family Christmas breakfast instead of our usual mimosas.

I had trouble blending my defrosted frozen peaches. I made a 1/2 batch. There wasn’t enough liquid. I might advise those without a high quality blender to wait till your peaches are room temp. This also brings out the peach flavor more. Otherwise, great recipe.

Make iced tea either by cold brewing it by putting the tea bags in 4 cups of cold water for 12-15 hours or by hot brewing it (my preferred method) by bring 4 cups of water to a boil and then brewing the tea for about 10 minutes before removing the tea bags and refrigerating it until it is cold.

This Peach Bellini is an easy and refreshing cocktail made with fresh peach puree, a little honey for sweetness, and Prosecco.

Peel the skin off the peaches before blending. Ripe peaches are very easy to peel the skin off with your hands but you can also use a vegetable peeler.&nbsp;

Place peeled peaches in the blender and add honey. Blend until completely smooth.&nbsp;

If not using right away, pour peach puree into a  food storage container with an air-tight lid and refrigerate. (I do not recommend storing fresh peach puree for more that a day.)

Peach puree:

Divide puree among champagne flutes, adding about 1 1/2 oz of puree per flute.

Fill the flute with Prosecco about half way and gently stir to mix puree and Prosecco. Fill the flute with Prosecco the rest of the way.

Garnish with a slice of peach is desired and enjoy right away.

Bellini:

This refreshing drink takes advantage of delicious spring strawberries and fresh thyme. Enjoy it with a sparkling wine such as Prosecco or in an alcohol-free version with sparkling cider or water.

Fresh Strawberry Thyme Bellini

Put 1/4 pint (3 ounces) strawberries (about 3 large/6 medium/9 small) into a small pot with the cup of superfine sugar, the thyme sprigs, and 6 ounces of water. Bring to a boil. Immediately lower the heat to a simmer and cook the mixture for 10-15 minutes until the strawberries are quite soft.

Once it is cooked, take the pot off the stove and cool the mixture for 30 minutes. Then take out the sprigs of thyme and strain the mixture into a measuring up or container. Chill it well, for at least 1 hour.

Simple Syrup

Put the rest of the strawberries into a blender and crush them. Then strain the mixture to remove the seeds.

Strawberry puree

Mix 1 ounce of the puree and 1 ounce of simple syrup. Top with about 4 ounces of Prosecco, other sparkling wine or a non-alcoholic alternative such as sparkling apple cider or sparkling water. If desired garnish with a half or quarter of a hulled strawberry, sliced partway up so you can slide it onto the glass. If you want to intensify the thyme aroma, rub a sprig of fresh between your fingers (to release the aroma), and put it in the glass. Although it&#x27;s not as sturdy as a celery stick in a Bloody Mary and therefore can&#x27;t be twirled around, it&#x27;s a nice touch and adds to the festive quality of the drink.

To serve

Invented at Harry&#039;s Bar in Venice during the 1930&#039;s, this cocktail was originally made using sparkling Italian white wine, and in many parts of Italy it still is made that way. Popular tradition however has switched the wine for champagne. A simple classic.
