These healthy oat raspberry bars are like a berry crumble in bar form. They&#039;re gluten free and made with real, fresh raspberries!

Healthy Oat Raspberry Bars

oats

almond flour

brown sugar

cinnamon

honey

almond butter (or other nut/seed butter)

raspberries

lemon juice

tsp corn starch

Preheat oven to 375F and line an 8×8 baking dish with parchment paper. In a large mixing bowl, combine rolled oats, almond flour, brown sugar and cinnamon. Add honey and almond butter and mix well to combine.

Set aside approximately 1/3 of the oat mixture (for the crumble topping) and then firmly press the remaining 2/3 of the mixture evenly into your lined baking dish.

In a separate medium mixing bowl, mash the fresh raspberries with the brown sugar, lemon juice and corn starch. Spread this evenly on top of the oat base that&#39;s already in the baking dish. Then, sprinkle the remaining oat mixture on top of this.

Bake in the preheated oven for 30-35 minutes until the crumble topping is golden brown. Remove from oven and let cool for 30-60 minutes until cutting into bars.* Serve bars on their own or with a dollop of yogurt or vanilla ice cream.

Vegan Berry Crumble Bars

oat flour

coconut oil

maple syrup

tsp vanilla extract

tsp salt

tbsp maple syrup

water

cornstarch

salt

Start with the base layer. In a mixing bowl combine the almond flour, oat flour, and salt.

Add in the maple syrup, melted coconut oil, and vanilla extract and combine.

Add the mixture to a greased or lined 8&#215;8 baking dish and evenly flatten. Set aside.

Then for the berry layer add the berries, maple syrup, and water to a pot.

Heat the berries on low to medium heat. Once the berries start to soften mash with a potato masher or fork to eliminate any large chunks. Add the corn starch and let the berries simmer and thicken for 5-10 minutes.

Once the berries have thickened, remove from the heat. I recommend transferring to a bowl and placing in the fridge to thicken further.

Lastly for the crumble topping combine the oats, oat flour, almond flour, and salt.

Then add in the melted coconut oil, maple syrup, and vanilla extract and combine. Set aside.

Remove the berry mixture from the fridge and pour on top of the base. Spread evenly.

Top with the crumble topping. It helps to squeeze chunks of the crumble topping between your fingers to combine/flatten and then place on top of the berry layer.

These are the best things ever ! I made them for a bake sale at my mums work and everyone said they were amazing . I have since made them 4 times . Highly HIGHLY recommend

These were so yummy! Perfect texture and good flavor! I might add some extra berries next time for a thicker berry layer.

Just made these for Sunday dessert. They were a huge hit.  They are a little cumbersome in they have 3 steps but well worth the effort !

Looking for something for dessert for gf, vegan, sugar free friends. This covers all the categories and is so good! How long do you think the bars will keep the fridge? I’m wanting to make my next batch ahead of time.

I made these for my vegan Son, and my non-vegan granddaughters love it. Lol 😂
