This is the best Bolognese sauce recipe, a staple in my home. It's so easy to make, I always make a big batch for dinner and freeze the rest to use throughout the month – a huge time saver!  Making it in the pressure cooker makes this Sunday sauce a dish you can whip up any night of the week!

Instant Pot Bolognese

pancetta (or center cut bacon, chopped)

unsalted butter

onion

celery (about 3/4 cup, minced)

carrots (about 3/4 cup, minced)

lb beef

dry white wine (such as Pinot Grigio)

28 oz cans crushed tomatoes (I love Tuttorosso)

bay leaves

kosher salt and fresh black pepper (to taste)

half & half cream

parsley

Press saute on the Instant Pot, sauté the pancetta over low heat until the fat melts, about 4-5 minutes.

Add the butter, onion, celery and carrots and cook until soft, about 6 to 8 minutes.

Add the meat and season it with 3/4 teaspoons salt and black pepper to taste and sauté until browned, about 4 to 5 minutes, breaking the meat up into smaller pieces with a wooden spoon as it cooks.

Add the wine and cook until it reduces down, about 3-4 minutes.

Add crushed tomatoes, bay leaves, 3/4 teaspoon salt and fresh cracked black pepper; cover and cook high pressure 15 minutes.

Natural release, stir in the half &amp; half and garnish with parsley; serve over your favorite pasta, zucchini noodles or spaghetti squash.

Bolognese Sauce

In a deep heavy saute pan, sauté pancetta until fat melts.

Add butter, onions, celery and carrots and cook on medium-low heat until soft, about 5 minutes.

Increase flame to medium-high, add meat, season with salt and pepper and sauté until browned.

Add wine, cook until it reduces down, about 3-4 minutes.

Add tomatoes and bay leaf. Simmer covered on low, at least 1-1/2 to 2 hours, stirring occasionally.

Add half &amp; half and parsley, cook 2 minutes longer.

Rich, tasty, meaty oven baked bolognese sauce, that&#x27;s perfect tossed through freshly cooked pasta.

Giada's Bolognese Sauce Recipe

onion,

garlic cloves, chopped

celery stalk, chopped

carrot, chopped

lb chuck

28 oz can crushed tomatoes

c Italian leaf parsley, chopped

basil leaves, chopped

Salt and fresh ground pepper

c fresh grated Pecorino or Parmesan

In a large skillet, heat olive oil until almost smoking. Add the onion and garlic and turn heat down to medium and cook until the onions become very soft, about 8 minutes. Add the celery and carrot and saute for 5 minutes.

Raise heat to high and add the ground beef and cook until it is no longer pink, about 10 minutes. Add the tomatoes, parsley and basil and cook over medium-low heat until the sauce thickens &#8211; about 30 minutes. Season with salt and pepper.

Serve over pasta of your choice with more black pepper and grated cheese.

This flavorful and easy bolognese recipe is our FAVORITE pasta dish! The sauce tastes as though it has been marinating on the stove for 12 hours. (Spoiler alert... this recipe only takes 40 minutes to make, from start to finish!)

pasta water (to make the pasta more saucy at the end)

Cook meat

Heat a 12 inch skillet over medium heat. Add the olive oil and Italian sausage. Cook the meat until no longer pink, crumbling it up as you go. Once cooked, drain any excess grease.

Add seasoning

Stir in the garlic, oregano, crushed red pepper flakes and cook for 1 more minute. 

Deglaze

Add the chicken broth to the skillet to deglaze the pan, stir to scrape up any browned bits from the bottom. Cook until the broth has reduced by half.

Simmer

Stir in the crushed tomatoes, tomato paste, salt and pepper. Bring to a boil then reduce to a simmer and simmer for 10 minutes. 

Cook pasta

While that’s simmering, cook the pasta to al dente.

Simmer, again

After the sauce has simmered for 10 minutes stir in the nutmeg, fresh basil, cream, and parmesan. Simmer for another 10 minutes. 

Add pasta to sauce

Drain the pasta and reserve ½ cup of the pasta water to use at the end to make the sauce more saucy (if needs be). Add the pasta to the sauce mixing to combine. If you need the sauce to be more saucy, add a splash of reserved pasta water. 

Serve warm with a garnish of fresh basil and parmesan.
