Indulge in the best custard bread pudding recipe! This rich, decadent, custard bread pudding is made with day old french bread and a creamy custard base!

Custard Bread Pudding with Vanilla Sauce

oz loaf of french bread (454 grams)

Bread Pudding Sauce (to serve on the side)

heavy cream

Cube your loaf of bread into 1.5 inch cubes. Make sure your bread is dry, otherwise lightly toast your cubed bread in the oven or leave it out for a day or two.

In a large bowl, combine all ingredients for the custard mixture. Using a whisk, be sure to mix this well until all the eggs are fully mixed in. You shouldn&#x27;t be able to see any separated egg whites.

Pour this mixture into a large baking dish and then add in the dried bread cubes. Gently toss until all the bread is coated. You will see a lot of extra mixture but this will be soaked up by the bread.

Cover the baking dish and leave it in the refrigerator overnight or at least 2 hours until all the custard mixture has been soaked up.

Preheat your oven to 350 degrees F

Cover your baking dish tightly with foil and place it into a large roasting pan and set it in a water bath that comes up halfway up the baking dish. Do not skip this step or the custard will curdle.

Bake for 1.5 hours covered or until a toothpick inserted in the middle comes out clean.

Uncover your baking dish and continue to bake it in the roasting pan until the crust becomes browned and crispy.

Serve with Bread Pudding Sauce and some berries or caramel sauce.

Bread Pudding with Vanilla Sauce Recipe

eggs, room temperature

(474 ml) milk, room temperature

(237 ml) heavy cream, room temperature

(30 ml) unsalted butter, melted

(250 g) granulated sugar

(5 ml) vanilla extract

nutmeg

raisins, optional

½ cup (118 ml) milk

¾ cup (177 ml) heavy cream

(100 g) granulated sugar

unsalted butter

(10 g) cornstarch

(10 ml) vanilla extract

Whisk

In a large mixing bowl, whisk the eggs together until well combined. Whisk in the milk, heavy cream, sugar, vanilla extract, cinnamon, nutmeg and salt until well combined.

Add the cubed pieces of brioche, challah or french bread into the bowl. Gently mix the bread into the spiced vanilla custard. Mix in the raisins now, if using in the bread pudding.

Soak

Allow the bread pudding mixture to rest and soak in the custard while the oven preheats to 350 F (177 C) for 20 - 30 minutes. Evenly coat the bottom and sides of the casserole dish with a tablespoon (15 ml) melted butter. Transfer the vanilla sauce bread pudding into the prepared dish.

Bake

Bake the custard bread pudding  for 50 - 60 minutes. The top should be golden brown and no custard should seep through when the center of the bread pudding is gently pressed down.While the vanilla pudding bread bakes, make the sauce for bread pudding.

Cook

Add milk, heavy cream, sugar, butter and cornstarch in a small pot or sauce pan. Heat over medium heat, stirring occasionally, until the butter melts. Once the butter melts, stir more frequently until the sauce thickens enough to fully coat the back of a spoon. This takes about 10 - 12 minutes of cooking over medium heat.

Cool

Once the vanilla sauce has thickened, remove the pan from the heat, stir in the vanilla extract and transfer the sauce to a heat safe bowl to cool slightly before serving. The sauce will continue to thicken as it cools. 

Serve

Once the bread pudding has finished baking, cool the dish for 15 - 20 minutes before serving. Right before servings, pour some of the vanilla sauce on top of the warm bread pudding, reserving more for serving on the side. Bread pudding can be enjoyed very warm from the oven, at room temperature or chilled from the fridge.
