This easy Italian recipe for Roasted Cauliflower Parmesan is simple enough to make for a weeknight, low carb dinner but tastes special enough for a dinner party!

Roasted Cauliflower Parmesan

cauliflower florets ((1 medium cauliflower))

eggs, (lightly beaten)

breadcrumbs

all-purpose flour

salt

Cooking spray

(28 ounce) can San Marzano tomatoes

Italian seasoning

olive oil

garlic

pepper

mozzarella

Parmesan cheese

Preheat oven to 400℉. Line a baking sheet with parchment paper and set aside.

Set up an area for breading the florets. You will need the cauliflower florets, a bowl with the beaten eggs, and a bowl with the seasoned breadcrumbs, Panko bread crumbs, flour, and salt combined in it, and the prepared baking sheet.

Dip each floret in the eggs, then in the breadcrumb mixture, and place it on the baking sheet. Repeat until all of the florets have been breaded. Lightly spray all of the florets with a coat of cooking spray.

Roast the cauliflower for 20-25 min until golden and crispy. Remove from oven and cool slightly.

While the cauliflower is cooking, make the tomato sauce. In a large bowl, combine the canned tomatoes (with juices), Italian seasoning, olive oil, garlic, salt, and pepper. Use a fork or clean hands to break apart the tomatoes into small pieces. For a smooth sauce, you can combine everything in a blender, if desired.

Prepare a 9x11’’ casserole dish by spraying with cooking spray. Reduce oven heat to 375℉.

Place half of the tomato mixture in the bottom of the baking dish, followed by ½ of the Parmesan, all of the cauliflower florets, then the mozzarella, the remaining ½ of the tomato mixture, and topped with remaining ½ of the Parmesan cheese. Bake for 20-25 minutes until the sauce is bubbling and the cheese has melted. Serve hot!

Baked Cauliflower Parmesan

Throw together this comforting and creamy cauliflower soup for lunch or a light supper. It's perfect topped with parsley and served with crusty bread

Cauliflower soup

cauliflower (1.5kg),

cumin

thyme

onion

celery stick, finely chopped

stock

milliliters single cream

parsley

Heat the oven to 220C/200C fan/gas 7. Toss the cauliflower florets in a <a href="https://www.bbcgoodfood.com/review/test-five-best-roasting-tins">roasting tin</a> with 1 tbsp olive oil, the cumin and the thyme. Roast for 15 mins or until golden and tender. Discard the thyme.&nbsp;

Heat the remaining oil in a <a href="https://www.bbcgoodfood.com/content/five-best-saucepans">saucepan</a> with the onion and celery and fry over a medium heat for 10 mins or until softened. Add the garlic and cook for 1 min. Stir through most of the cauliflower, reserving some to top the soup with later. Add 750ml of the stock to the pan and bring to a simmer. Cook for 10 mins.&nbsp;

<a href="https://www.bbcgoodfood.com/content/top-five-hand-blenders">Blitz</a> the soup until smooth using a hand blender or food processor.&nbsp;Stir through the cream and season to taste. Add extra stock if&nbsp;you like your soup a little thinner. Ladle into bowls and top with the parsley, reserved cauliflower and an extra drizzle of olive oil.&nbsp;

Serve with Tahini Sauce or Green Tahini Sauce

Trim the cauliflower &#8211; either cutting off the stem (easier) to create a flat base, or leaving it intact, trimming and slicing the bottom so it stands up straight ( like a tree trunk).

Place it in an ovenproof skillet or dutch oven. Drizzle 1 tablespoon oil all over the cauliflower, sprinkle with salt and Zaatar spice.  Pour 1/2 cup of water into the bottom of the pan. 

Bake

Cover tightly with the lid or foil and bake for 25-45 minutes&#8211; depending on size &#8211; or until just tender when pierced with a knife. Smaller cauliflower heads may only take 25 minutes, larger ones can take up to 60.

Uncover

Very carefully take the lid or foil off, minding the hot steam (it will burn!). Drizzle with a little more olive oil, place back in the oven for 30 minutes uncovered, perhaps rotating halfway through. At this point it should be deeply golden, but if not, continue roasting until it is&#8230; please no pale cauliflowers here!

Remove from the oven and sprinkle more zaatar if you like, fresh herbs, and optional aleppo chili flakes,  and either drizzle the tahini sauce over the whole thing right in the pan, or cut it up, like a cake, into wedges and serve the tahini sauce on the side. Enjoy!
