Great recipe and combination of spices. Very hot but manageable for the adults with pickles and ranch on the side. I served with sweet potato pancakes and syrup, weird combo but it works.

This was SO delicious ! 
l only used the oil recipe as i made a keto version . I substituted swerve brown sugar replacement  in place of regular brown sugar . Next time i am making the whole recipe .

Taste was amazing and skin came out great, but the cooking time listed was way too short for bone-in chicken Or my chicken was too thick and the temperature of the oil was a bit too hot, mine were undercooked And needed to be finished in the oven.

Szechuan Chicken

Only my opinion BUT this is too salty. Even with low sodium soy sauce and I’m a salt lover. I suggest cut back on soy sauce and add oyster sauce along with a touch of sugar to make more Szechuan.

Not szechuan, but a very good Asian flavor!

A mix of garlic and crushed red pepper flakes that get all sizzly together for about a minute, then soy sauce, hoisin, honey, and lime juice. The result is tangy and perfectly sweet. I'm but a young lad of 20 years of age. I've been cooking for a while now but mostly just for myself or whatever. Occasionally I cook for my family or my girlfriend's. I decided to make this for my mom and pops one night and I'm telling you that it slammed. I added mushrooms (and planned to add zucchini and asparagus among other greens but forgot to because of a time crunch) during the same step of adding in the tomatoes to the pan and the entire dish turned out absolutely amazing. It took me a bit longer than an hour to make it, but that's because I also cooked rice. Serving the chicken on a bed of rice and pouring some of that sauzzz over it really was the right move. Everything was super flavorful and I swear this was the juiciest and most tender chicken I've ever had in my life. As an aside, I suppose I had thicker chicken breasts because my cook time in the sauce was closer to 10-20 minutes rather than the 5-7 that they said. Could've also been that I didn't cook the chicken long enough prior to that. Either way, Wich thicker breasts be prepared for a longer cook time in either stage. Another aside, my father said that I should open up a restaurant after I made this for him. Another aside, I did take some liberties in seasoning, but I made this a while ago and don't really remember what I changed or added.

I used fish, because I didn't have chicken. I substituted Mrs Dash for salt, because of my high blood pressure. I'm on a low fat diet so I used water instead of cream. I then ran out of minced garlic, so I used garlic powder. I don't like pepper, oregano, tomatoes and spinach, so I just skipped that. Finally, I used saltines instead of cheese to throw in a wild card. Not sure what went wrong, but it tasted disgusting. I wouldn't recommend it, at all. I almost left a bad review, but decided to maybe try the actual recipe. Surprisingly, it was incredible. Yummmm! Maybe there's something to using the listed ingredients.

Hahahaaa. All kidding aside, here's a piece of advice to achieve excellent recipes (that others have already taste tested):
1) If you're looking for keto, low fat, low cal, etc, there's plenty of speciality sites that have tons of similar recipes, just for you. 
2) If you don't have an ingredient, go to the store and get it, or find a recipe that calls for ingredients that you do have. 
3) Finally, if you don't like things in it, move on.

I have to agree with the other reviews, this is fantastic! I've made it 3 times in the last month alone. I used grape tomatoes, quartered portabella mushrooms and served it on spaghetti. When I didn't have spinach on hand I used spring mix. My daughter said "you WILL make this for me!"

This was absolutely delicious! The chicken needed a bit more cooking and I added wayyyyyyyyyyy more parm. I mean who doesn't like parm?!

I used sun-dried tomatoes instead of fresh tomatoes.  For the oil, I used the oil that the tomatoes come in.  It was super delicious.  Served with spaghetti noodles.  SO GOOD.

Great recipe!  I substitute sun dried tomatoes for fresh, they hold up better and give a more intense tomato flavour.  I have done it with both coconut milk & cream, can’t decide which I like better.

Made this today, really good. Added a bit of chopped onion with the garlic. Chopped up just a regular tomato, used less butter and a bit more cream and parm, reduced a little bit longer and then added Capers when I put the chicken back in to simmer.

I am so in love with this Southwestern Fiesta Chicken! It's so good, quick and easy. It's perfect for throwing together on a weeknight, and it's a million times better than anything you'll get at a restaurant!

Southwestern Fiesta Chicken

long grain white rice

water

salt

juice of 1 lime

cilantro, chopped

(3 tablespoons) taco seasoning

onion (about 1 onion)

diced bell peppers (about 3 bell peppers)

corn (fresh

(14.5 ounce) can black beans, drained

Ro-Tel

avocado, diced

Add the rice, water, salt, lime juice, and cilantro to a medium pot. Stir well. Bring to a boil, then cover, reduce heat to low, and simmer for 14 minutes. Set aside and keep covered.

Meanwhile, cut the chicken into bite-sized pieces. Season with half of taco seasoning. In a very large skillet or dutch oven, heat the olive oil over medium-high heat. Add the chicken in a single layer and cook for 5 minutes, until golden brown, flipping once halfway through. Remove to a plate and set aside.

In the same skillet, increase the heat to high, and add the onions, bell peppers, corn, and remaining taco seasoning. Cook, stirring occasionally, until veggies are slightly blackened. Decrease heat to low, add garlic, and stir until combined and fragrant, about 30 seconds.

Add the drained black beans and tomatoes, rice, and chicken. Stir all to combine. Garnish with extra chopped cilantro and top with diced avocado. Serve and enjoy!! :)

Absolutely delicious!  The marinade is so good and you can’t go wrong with a topping of fresh mozzarella, avocado and tomatoes.

I’ve made this a few times - I love it with pepper jack cheese.  So quick and easy.

I eat this at least twice a week.  I wish I could replace the chicken w/ something though );

We really enjoyed this recipe! Flavors melded together nicely, along with some added dry rub for a spicy kick to go along with the sweet. Pepper Jack cheese works well with this recipe.

This recipe is very excellent though doing it indoors on a grill pan takes a little less cook time and trying to keep the mozz, avocado, and tomato from slipping off was quite challenging. I think I need flatter chicken breasts but the taste is outstanding. My expertise is less so.

I made it exactly as the recipe called WITH the avocado.  It was a nice change.  Thus the recipe name "California Grilled Chicken".    I sprinkled see salt and dried Italian seasoning on each tomato before adding the fresh basil and drizzling with a balsamic reduction.  It was a hit!!  This also made for a very pretty presentation on the plate

Hint... I  pounded out the chicken before marinating and grilling.  The chicken cooked evenly and quickly and was very tender with no overcooked/undercooked areas.  Will definitely make again.

Served with Strawberry Spinach Salad with roasted pecans & feta cheese tossed in a light balsamic/honey dressing AND baked fingerling potatoes lightly seasoned with dried rosemary and italian seasoning.

I baked it at 350 in a baking dish with some of the marinade poured over. Cover with foil. Bake for 45 to one hour, depending on the thickness. Uncover and place cheese, tomatoes, (avocado—didn’t use), and basil on top.  Keep in oven for about 5 minutes. Serve. Delicious!

California Grilled Chicken Is A Primo Summer Dinner

Our Instant Pot chicken gyros recipe are such a flavorful Greek dish that is an easy and healthy meal, not to mention a crowd pleaser.

Instant Pot Chicken Gyros Recipe

garlic

lemon juice

onion (finely diced)

Tablespoons red wine vinegar

allspice

lemon pepper

chicken broth

cucumber

plain greek yogurt

red wine vinegar

dill weed

cucumber (sliced)

lettuce

roma tomatoes (diced)

pita breads

In a gallon-sized resealable bag, add chicken, garlic, lemon juice, onion, olive oil, red wine vinegar, oregano, allspice, and lemon pepper.

Mix well so that all the chicken is covered in marinade.

Let marinate in fridge for at least 2-3 hours (6-8 is ideal for best flavor).

When chicken is finished marinating, pour 1 cup of chicken broth into the bottom of the Instant Pot.

Dump the entire contents of the bag (chicken and marinade) into the Instant Pot.

Place lid on pot and press MANUAL (or PRESSURE COOK) and set timer for 10 minutes.

Allow 10-15 minutes to come to pressure before it starts the countdown cook timer.

Once it is finished cooking, do a natural release of the pressure for 5-10 minutes and then a quick release of the remaining pressure. Remove the lid.

Shred cooked chicken using 2 forks.

Shred or grate the cucumber and blot with a paper towel to get rid of as much moisture as possible.

Mix together the yogurt, shredded cucumbers, garlic, vinegar and lemon juice. Add dill and salt and pepper to taste.

Keep in the fridge until serving (it&#039;s best if you let the flavors come together for about 30 minutes before serving).

Serve on pita bread topped with cooked chicken, cucumbers, lettuce, tomato, and homemade tzatziki sauce.

I substituted chive cream cheese for sour cream and chives, used chopped Costco rotisserie chicken and pico de gallo for our company  picnic.  It was well received.

3 instead of 4 stars only because per previous reviews, it really does need some additions or it would be bland.  But I really, really like it with my fixes & it will be on my permanent rotation!  I added 1/2 tsp each salt & cumin, 1/4 tsp each garlic powder & pepper, & a couple shakes Cayenne.  To reviewer Red Butterfly--the chicken is cooked before shredding.  Raw chicken won't shred.
