The Best Chicken Soup You'll Ever Eat

avocado oil or olive oil

garlic, minced

yellow onion, diced

carrots,

celery stalks, roughly chopped

ginger

turmeric (or 1 teaspoon ground turmeric)

chicken broth

chicken breast

rosemary

pearl or Israeli couscous

Place a large dutch oven or pot over medium high heat and add in oil. Once oil is hot, add in garlic, onion, carrots and celery; cook for a few minutes until onion becomes translucent.

Next add in grated ginger and grated turmeric. Saute for 30 seconds to let the spices cook a bit, then add in chicken broth, chicken breast, rosemary, thyme, salt and pepper.

Bring soup to a boil, then stir in couscous. You’ll want the chicken to be covered by the broth so make sure you stir them down to the bottom.&nbsp;

Reduce heat to medium low and simmer uncovered for 20-25 minutes or until chicken is fully cooked.

Once chicken is cooked, remove with a slotted spoon and transfer to a cutting board to shred with two forks. Add chicken back to pot then stir in frozen peas. If you find that you don&#x27;t have enough broth, feel free to add in another cup. Everyone likes their soup differently. Taste and adjust seasonings, if necessary. Enjoy.

Mediterranean-Style Turmeric Lemon Chicken Soup

In a large Dutch oven or pot, combine the chicken with 6 cups of water. Season generously with salt and pepper. Add the onion and 2 whole garlic cloves. Bring to a boil over medium-high heat, then lower the heat and let simmer gently for 15 to 20 minutes or until the chicken is cooked.

When ready, remove the chicken from the pot and carefully shred it using two forks. Strain the broth using a mesh strainer over a large bowl. Discard the onion and garlic. Set the broth in its bowl aside for now.

Carefully wipe the pot and return to the heat. Add a couple tablespoons extra virgin olive oil and warm over medium heat. Add the minced garlic, carrots, and spices.

Return the shredded chicken to the pot. Stir to combine. Season with kosher salt.

Add the cooking broth and bring to a boil, then lower the heat to medium-low, and cover partly. Cook for another 15 to 20 minutes (the carrots should be tender and cooked through).

Stir in the spinach, herbs, and lemon juice and zest. Transfer to serving bowls. Enjoy!

Hearty Slow Cooker Chimichurri Chicken Lentil Soup. A light and healthy meal with lentils, chicken, vegetables, and fresh tangy chimichurri sauce.

Chimichurri Chicken Lentil Soup

dried brown lentils

onion, (peeled and chopped (about 2 cups))

carrots

red bell pepper

garlic, (peeled and minced)

Salt (and pepper)

punch fresh parsley, (stems removed)

garlic

Dijon mustard

red wine vinegar

oregano

red pepper

Preheat a skillet to medium and add 1 tablespoon olive oil. Once hot, sauté the onions and garlic until soft, 3-5 minutes.

Pour the onions and garlic into the crock of a large 6-quart crockpot. Add the carrots, peppers, whole chicken breasts, dried lentils, rosemary, chicken broth, 1 1/2 teaspoons salt, and 1/2 teaspoon cracked pepper. Stir and cover. Then set the slow cooker on low for 10-12 hours (or high for at least 6 hours).

Anytime during the slow cooking process, place the chimichurri ingredients in a food processor. Puree the ingredients until mostly smooth. Then salt and pepper to taste. Set aside until ready to serve.

Once the lentils are soft and the broth has thickened. Remove the chicken breasts with tongs and shred the meat with two forks. Stir the shredded chicken back into the soup. Taste and add salt as needed. Then ladle the soup into bowls and allow each person to stir in as much chimichurri as desired.
