This is a really easy chilli con carne recipe. It has loads of flavour even though it uses mostly store cupboard ingredients.You can experiment with how hot it is by leaving the seeds in the fresh chillies or adding a pinch of dried chilli flakes. 

Each serving provides  420 kcal, 43g protein, 22g carbohydrates (of which 9.5g sugars), 12g fat (of which 4g saturates), 9.5g fibre and 1g salt.

Easy chilli con carne

lean beef mince

250 milliliters/9fl oz red wine (optional)

x 400 grams tins chopped tomatoes

tomato purée

red chillies, thinly sliced,

tsp cumin

500 grams/1lb 2 ounces good-quality beef mince

onion, finely chopped

red onion, finely chopped

celery sticks, trimmed and chopped

chipotle chilli

tbsp dried chilli flakes

½ tbsp chilli powder

500 milliliters/17fl oz beef stock

tin kidney beans, drained and rinsed

tin black-eyed beans, drained and rinsed

85 grams/3 ounces plain chocolate, minimum 70% cocoa solids, roughly chopped

spring onions, trimmed and finely sliced

Beef chilli with bitter chocolate

This slow cooker chilli is made using beef mince and simple store cupboard ingredients. It will keep well in the fridge for a couple of days and freezes beautifully – serve with rice, tacos or warmed tortilla wraps, alongside soured cream or grated cheese and a squeeze of fresh lime, if you like.
Each serving (excluding sides and rice) provides 276 kcal, 22g protein, 12g carbohydrate (of which 5.6g sugars), 14g fat (of which 5.9g saturates), 4.4g fibre and 0.54g salt.
