Favorite Chopped Salad

recipe Homemade Italian Dressing

Romaine heart (3 cups)

lettuce

shallot

English cucumber (2 cups chopped)

cherry tomatoes

green olives, halved

jarred sliced pepperoncini

Parmesan shavings

red pepper flakes, optional

Chop romaine and lettuce. Thinly slice the shallot. Peel and chop cucumber. Slice tomatoes and olives in half.

Mix together all the ingredients for the salad, including the dressing, and toss to combine. If making in advance, refrigerate the components separately; bring the dressing to room temperature before serving.

I just want to thank you for sharing this recipe - THANK YOU! I take a salad to work for lunch most days and was in dire need of something new. I'm not sure how I stumbled onto this recipe, but I am so thrilled I did. I just ate it for lunch and it is DELICIOUS!!! (I prepped all ingredients and will enjoy it the rest of the week!) I love the crunchy, the salty, the tangy tastes, etc. And, the Homemade Italian Dressing is the BOMB, and was the perfect compliment.

I'm not usually a big salad eater, but I made this salad with the homemade dressing for lunch &amp; I can concur that it is PHENOMENAL. I added chicken &amp; hard-boiled eggs to make it a main meal, and served with a side of cornbread. I'll definitely be making this again in the future!

I made this yummy salad for a luncheon at work. I’m making it again tomorrow for my grandson’s 18th birthday family dinner. I’m serving it with homemade Stromboli and coconut cake. I know the salad will be a hit!

Easy Mediterranean chopped salad with romaine, chickpeas, tomatoes, cucumbers, feta, olives, and a simple lemon dressing.

Mediterranean Chopped Salad Recipe

romaine lettuce (chopped, about 6 cups)

grape tomatoes (quartered)

Persian cucumbers (chopped)

chickpeas

red onions (finely chopped)

Kalamata olives (sliced)

feta cheese

parsley (chopped)

olive oil

lemon juice

Dijon mustard

garlic

oregano

salt

black pepper

Assemble the salad in a large bowl by placing the chopped lettuce first, then arranging lines of the remaining ingredients on top of the chopped lettuce.

To prepare the dressing, whisk together all the ingredients for the dressing in a small mason jar until emulsified.

When ready to serve, pour the dressing on top of the salad. Garnish with parsley. Toss if you prefer to keep the salad untossed for best presentation.

Some folks don’t like olives or cucumbers in our family -so- used cooked Orzo and slivered almonds in their place and WOW was this a hit!!!! May have to make this every gathering! I like avocados also but they may get brown 😞
