In a small bowl, whisk together the mayonnaise, olive oil, mustard, capers, lemon juice, garlic, turmeric, salt, and several grinds of black pepper.

Mix in the eggs, then stir in the celery seed, dill, and chives. If desired, lightly mash the mixture if it&#x27;s too chunky. Chill until ready to serve.

Tamago Sando (Japanese Egg Sandwich)

eggs (plus 2 more for soft-boiled egg, if preferred)

tbsp Kewpie mayonnaise

shokupan (milk bread) or brioche (crusts removed or intact)

butter (for the bread)

Add vinegar and salt to a pot of boiling water, reduce the heat, and gently place the eggs into the water (if you plan to add the extra jammy egg in the middle, I recommend marking the shell with a permanent marker).

Prepare a large bowl of ice water. After 10 minutes (6 minutes for the extra jammy egg), immediately transfer the eggs to the ice water bath. Allow the eggs to cool completely, for at least 5 minutes.

Separate the egg yolks and whites. Mash the yolks in a bowl and dice the egg whites (you can also mash them together, but this will result in a fluffier sandwich).

Add the diced egg whites and onion to the bowl, and mix to combine. Add kewpie mayo, sugar, salt, and pepper. Mix together with a spoon until well combined.

Spread the bread slice with butter, and add a generous amount of egg salad (with the jammy egg in the middle, if preferred) and cover with the other slice of bread. Cut the sandwich in half and enjoy!

Place eggs in a saucepan in a single layer.

Fill with cold water until it covers the egg by at least 1”.

Bring water to a boil, then boil for 1 minute.

After one minute, turn off the heat and let the eggs sit covered on the warm burner for 10 minutes.

Strain eggs and let cool (I usually transfer them to a bowl of ice-cold water so they cool faster).

Store the boiled eggs in the refrigerator until completely chilled (I prefer overnight).

Hard-Boil Eggs

Remove the shells from the hardboiled eggs.

Separate the egg whites from the egg yolks.

Put the yolks in a medium bowl.

Add the mayonnaise, mustard, sea salt, pepper, lemon juice, and paprika to the yolks and stir to combine, mashing the yolks as you stir.

Chop the egg whites.

Add the egg whites and minced onion to the yolk mixture and stir to combine.

Make the Egg Salad

Chill for at least 1 hour. Serve over lettuce, as egg salad sandwiches, wraps, etc.

Simple Egg Salad Recipe

Use Instant Pot Boiled Eggs or place eggs in a pot and cover with 1 inch of water. Bring to a boil over medium-high heat. Once the water is boiling, cover with a lid. Let the eggs cook, covered, for 9 to 12 minutes, depending on your desired done-ness.

Remove eggs with tongs and place in an ice bath to cool for about 15 minutes. Once cooled, peel the eggs.

Boil Eggs

With a knife, food chopper, or mix/chop tool, dice eggs into bite-sized pieces.

In a bowl, add diced eggs and half of the mayonnaise, dill relish, mustard, salt, and pepper to taste. Stir until combined. Add in additional mayonnaise until you have your desired consistency.

Serve on a bed of lettuce, on bread as a sandwich or with crackers.
