My husband made this last week it was amazing!  This is definitely a weekly dish. No need for meat at all, it’s perfect . He adds sesame seeds and mushrooms. Thank you for this staple !

Had this with General Tso Chicken and was great. We excluded the peas as we didn’t have any and I didn’t mind. Also did not have white rice only instant brown but turned out great. My 11 month old hates scrambled eggs but ate this. I cooked the rice and put on baking sheet in shallow layer and let sit for 2 hours in the fridge while I prepared everything else for dinner.

I’ve tried so many recipes and this one really nailed it. What made the biggest difference was cooking the egg by itself and then adding it back. 
I added some pork belly and edamame beans— I could eat this all day every day!!

I made this fried rice yesterday. It was “okay”. Would I make it again?,  I really do t know. I will continue looking around for a different recipe. Thank you for sharing.

Fried Rice Is A Pantry Staple For A Reason

This quick &amp; easy Omurice recipe features savory ketchup fried rice wrapped in a soft and luscious egg omelette to give you a burst of flavor in every bite. This simple and delicious omelette rice is the ultimate comfort food for the weekdays and one that your whole family will love.

15-Minute Omurice (Japanese Omelette Rice)

vegetable oil (divided)

green onion (white parts)

onion (diced)

(30 g) carrot (diced)

100 g spam

2-3 (50 g) button mushrooms (diced)

rice (preferably day-old (see notes below))

soy sauce

tbsp ketchup

eggs (large)

tbsp milk

salt

ketchup and parsley (optional) (for garnish)

Heat oil in a large pan over medium heat, and add green onion and onion. Cook until fragrant. Add carrot, spam, and mushroom, and cook for 3-4 minutes.

Add rice, soy sauce, and ketchup and mix to combine, ensuring all grains are evenly coated. Add to a small bowl and press down to shape the rice.

Combine eggs, milk, and salt in a bowl. Heat oil in a non-stick skillet over medium heat, and pour in the egg mixture. Lightly scramble for a few seconds until the eggs are about 80% cooked through, and remove from heat.

Place a large plate over the bowl of rice, hold it in the center, and flip carefully to plate the rice in a dome shape. Cover the rice with the egg omelette, and garnish with ketchup and parsley to serve. Enjoy!

Chicken Fried Rice

chicken breast

vegetable oil

onion

carrots

peas

garlic

butter

long grain white rice

soy sauce low sodium (see notes)

sesame oil

onions

salt and pepper to taste; optional

Heat 1 tablespoon oil to large skillet over medium/medium high heat.  Cook chicken in a single layer browning on both sides; approximately 2 minutes each side. Add more oil if needed. Transfer to plate and cover to keep warm.

Heat 1 tablespoon oil to same large skillet over medium/medium high heat.  Add onion, carrots, and peas.  Cook until crisp tender stirring several times.  Reduce heat to low.  Add garlic and cook for 1 minute stirring constantly. Transfer to plate and cover to keep warm.

Whisk eggs and add 1/2 tablespoon butter to same skillet over low heat.  Add eggs and cook just until set. Remove from skillet and add to the plate with the vegetables.  Cover to keep warm.

Melt remaining butter over medium heat.  Add rice to skillet. Drizzle with soy sauce.  Increase heat to medium high and fry until lightly browned.  Stir several times but not all the time so it has time to brown.  Work in batches if your pan is crowded.

Drizzle the rice with sesame oil and sprinkle with green onions; stirring to combine. Return chicken, vegetables, and eggs to skillet and heat through.  If desired season with salt and pepper to taste.
