Had this with General Tso Chicken and was great. We excluded the peas as we didn’t have any and I didn’t mind. Also did not have white rice only instant brown but turned out great. My 11 month old hates scrambled eggs but ate this. I cooked the rice and put on baking sheet in shallow layer and let sit for 2 hours in the fridge while I prepared everything else for dinner.

I’ve tried so many recipes and this one really nailed it. What made the biggest difference was cooking the egg by itself and then adding it back. 
I added some pork belly and edamame beans— I could eat this all day every day!!

Fried Rice Is A Pantry Staple For A Reason

This quick &amp; easy Omurice recipe features savory ketchup fried rice wrapped in a soft and luscious egg omelette to give you a burst of flavor in every bite. This simple and delicious omelette rice is the ultimate comfort food for the weekdays and one that your whole family will love.

15-Minute Omurice (Japanese Omelette Rice)

vegetable oil (divided)

green onion (white parts)

onion (diced)

(30 g) carrot (diced)

100 g spam

2-3 (50 g) button mushrooms (diced)

rice (preferably day-old (see notes below))

soy sauce

tbsp ketchup

eggs (large)

tbsp milk

salt

ketchup and parsley (optional) (for garnish)

Heat oil in a large pan over medium heat, and add green onion and onion. Cook until fragrant. Add carrot, spam, and mushroom, and cook for 3-4 minutes.

Add rice, soy sauce, and ketchup and mix to combine, ensuring all grains are evenly coated. Add to a small bowl and press down to shape the rice.

Combine eggs, milk, and salt in a bowl. Heat oil in a non-stick skillet over medium heat, and pour in the egg mixture. Lightly scramble for a few seconds until the eggs are about 80% cooked through, and remove from heat.

Place a large plate over the bowl of rice, hold it in the center, and flip carefully to plate the rice in a dome shape. Cover the rice with the egg omelette, and garnish with ketchup and parsley to serve. Enjoy!

Chicken Fried Rice

chicken breast

vegetable oil

Heat 1 tablespoon oil to large skillet over medium/medium high heat.  Cook chicken in a single layer browning on both sides; approximately 2 minutes each side. Add more oil if needed. Transfer to plate and cover to keep warm.

Heat 1 tablespoon oil to same large skillet over medium/medium high heat.  Add onion, carrots, and peas.  Cook until crisp tender stirring several times.  Reduce heat to low.  Add garlic and cook for 1 minute stirring constantly. Transfer to plate and cover to keep warm.

Whisk eggs and add 1/2 tablespoon butter to same skillet over low heat.  Add eggs and cook just until set. Remove from skillet and add to the plate with the vegetables.  Cover to keep warm.

Melt remaining butter over medium heat.  Add rice to skillet. Drizzle with soy sauce.  Increase heat to medium high and fry until lightly browned.  Stir several times but not all the time so it has time to brown.  Work in batches if your pan is crowded.

Drizzle the rice with sesame oil and sprinkle with green onions; stirring to combine. Return chicken, vegetables, and eggs to skillet and heat through.  If desired season with salt and pepper to taste.

This easy Chicken Fried Rice is loaded with golden brown chicken, sweet onions, carrots, peas, eggs, green onions and tastes so much better than carry-out. You don’t know how good fried rice can be till you make it in your own kitchen. 

This restaurant-style Chinese Fried Rice recipe is the best ever! It tastes even better than takeout and is ready to eat in just 15 minutes.

The BEST Chinese Fried Rice (Easy 15-Minute Recipe)

butter, (divided)

yellow onion, (diced)

carrots, (diced)

garlic, (minced)

ginger

eggs, (beaten)

rice

Sriracha

green onions, (thinly sliced)

Melt 1 tablespoon of butter in a wok or large skillet set over medium heat.

Add the onion, carrots, and peas. Cook for 4 minutes, until the onions and carrots are softened.

Add the garlic and ginger. Cook for 1 minute further until fragrant.

Push the vegetables to one side of the pan. Melt the remaining tablespoon of butter on the other side.

Add the eggs to the empty buttered side of the pan. Scramble the eggs until they are cooked through. Stir to combine them with the vegetables.

Add the cooked rice, soy sauce, and Sriracha to the pan. Stir-fry the mixture for about 2 minutes.

Sprinkle with green onions and serve warm.

Recreate the restaurant takeout classic at home.

Restaurant Style Chicken Fried Rice

Rice, 200 g

Water, 240 g

Cooking oil, for stir frying

Chicken Thighs, 170 g

Cooking oil, 5 g

Eggs, 2

cloves

Onions, 60 g

Carrots, 80 g

Mushrooms, 80 g

Peas, 80 g

MSG, 3 g

Steam the rice

Add the rice to a metal strainer and rinse the starches under water. Ensure the water has completely drained to minimize excess moisture. Add the rinsed rice in a saucepan with the measured amount of water and cover with a lid.

Bring to a boil over medium heat. Once boiled, turn off the heat, remove the lid, place a kitchen towel over top, and place the lid back on. Let the rice steam off the heat for 15 to 20 minutes. If the water hasn't fully absorbed, you can put it back on low heat for a few minutes to finish cooking.

Once done, spread on a plate to let excess steam escape.

Note: Rice can be made ahead of time and stored in the fridge, which also improves its texture during stir-frying.

Marinade the chicken

Chop the chicken into small cubes and place into a bowl on a scale. Add the salt, sugar, soy sauce, and oil. Mix together. Let the chicken marinate for 15 minutes.

Meanwhile, use this time to gather the remaining ingredients or prep vegetables.

Stir fry the chicken

Heat a wok or skillet over high heat. Add about 20 g of the oil to the wok and swirl it around to establish a nonstick surface. Add the marinated chicken and stir fry until done, about 2-3 minutes depending on the size of the pieces. Take the chicken out and set aside in a bowl.

Stir fry the vegetables

Add another 20 grams of the oil to the wok and bring back to high heat. Add the minced garlic and bloom for 10-15 seconds until just fragrant. Add the onions and carrots and stir fry until browned while mixing constantly about 60-90 seconds. Add in the mushrooms and stir fry for another 30 seconds. Remove the vegetables and add to the bowl with the chicken.

Fry the egg and rice; add seasoning

Add the final 20 grams of the oil to the wok, swirl to coat the surface, and set the heat to high. Add the beaten egg and cook until the curds start to set.

Add in the cooked rice. Stirring constantly, fry the rice for 2-3 minutes. It should toast some and become dryer without clumps, and the egg should become dispersed into small pieces.

 Add the sugar, soy sauce, and MSG to the rice and stir it in.

Combine & finish the stir fry

Return the cooked shrimp and vegetables to the wok. Add the peas to the rice and stir fry for another 15-20 seconds. Shut off the heat and add the scallions, then mix to combine.

Taste it! Adjust the soy sauce, msg, or sugar as you see fit.
