How To Cook Green Beans

lb. green beans,

extra virgin olive oil

Kosher salt

black pepper

garlic cloves, minced (optional)

lemon (optional)

Preheat oven to 425°.&nbsp; Toss green beans with olive oil and season with salt and pepper.&nbsp; Spread beans into an even layer on a large baking sheet and roast until golden and tender, 12 to 15 minutes.

ROASTED GREEN BEANS

In a large skillet over medium heat, heat oil. Add garlic and cook until fragrant, 1 minute. Add green beans and season with salt and pepper. If using, squeeze lemon over beans.&nbsp;Cook, stirring occasionally, until beans are tender, 6 to 8 minutes.

SAUTEED GREEN BEANS

Bring a large pot of salted water to a boil. Meanwhile, prep an ice bath by filling a large bowl with ice and water. Boil green beans for 6 to 7 minutes, until tender. Transfer beans immediately to ice bath with a slotted spoon to stop cooking.

Drain beans and transfer to serving dish.&nbsp;Season with salt and pepper and serve.

BLANCHED GREEN BEANS

Preheat a large grill pan over medium-high heat or a grill pan to high. In a large bowl, toss green beans with olive oil and garlic and season with salt and pepper.

Place green beans on grill pan and cook until charred all over, about 7 minutes total. (If you’re using a grill, lay a thick piece of foil over grates and place green beans on top. Grill as instructed.)

Grilled Green Beans Are Seriously Underrated

Green Beans with Hazelnuts and Lemon Zest -an easy, delicious, vegan, gluten-free side dish that can be made in 15 minutes flat!

 Green Beans with Hazelnuts and Lemon! 

shallots,

olive oil

green beans

broth or stock

salt

pepper

hazelnuts

lemon

truffle oil (optional but amazing)

Heat oil in a 10-12 inch saute pan over medium heat. Add sliced shallots and saute 4-5 minutes, until golden and fragrant, stirring often, careful to not burn.

Add green beans, stock and salt and pepper.

Bring to a simmer, cover with lid or foil, for 7-8 minutes to steam.
&nbsp;

Remove lid, bring the liquid to a boil and reduce just a little. Mix beans and top with lemon zest, hazelnuts and a drizzle of optional truffle oil.

Taste, adding more salt if needed! Serve immediately.

I discovered I didn't have a lemon, but still went ahead with it.  We all loved it, the truffle oil &amp; hazelnuts made it very special!

This is a late post. I first made these for Thanksgiving last year and they were absolutely delicious - a really great alternative to green bean casserole. I have since made them several times.
