best healthy granola

Our Healthy Granola recipe yields the big crunchy granola clusters we love, and it&#39;s incredibly easy to make. At just 100 calories per serving it&#39;s a delicious snack and my favorite for my morning yogurt.

Healthy Granola

oats

raw sunflower seeds

coconut ((I like Bob's Red Mill))

almonds

raw brown sesame seeds (,

butter or coconut oil

brown sugar

honey

salt

vanilla extract

baking soda

Preheat oven to 325 degrees and spray a large sheet pan with cooking spray, or line with parchment paper.

Mix dry ingredients: Add oats, sunflower seeds, coconut, almonds, and sesame seeds to a large bowl and stir to combine.

Make Syrup by adding butter to a large saucepan over medium heat. Stir in brown sugar, honey and salt. Bring the mixture to a boil and once boiling, remove from heat and stir in baking soda and vanilla.

Combine: Pour syrup over the dry oat mixture and mix well until everything is evenly coated.

Bake: Pour mixture onto prepared pan and spread into an even layer. Bake for 8 minutes. Remove from oven and toss mixture, then gently press down on it with your spatula to flatten it back into the pan. Bake for another 8-12 minutes until golden brown.

Press and Cool: Remove pan from oven and use the back of a metal spatula to press the hot granola firmly down into the pan. Allow granola to cool completely in the pan before stirring or breaking it up (this will yield clusters that stick together).

I've tried several granola recipes and they've not been successful.  I was resigned to having to eat expensive store-bought granola until now. Oh my word this is the best granola recipe so easy and tastes perfect! It's an excellent base with so many add n possibilities. 

 The only fundamental change I'll make next time is to omit the 1/4 tsp of salt - with the baking soda in there it was a little on the salty side more than my liking.

Easy to make, delicious and very crunchy.  Love the baking soda trick and will try that with other granola recipes I will make in the future.

So good! Nervous to try; only made granola once and it was a disaster from a woman know for "pioneering" recipes. Can't afford to throw out food, had to keep adding more ingredients to make edible. Really made me angry! So I read all your reviews first. Love how versatile your recipe is. Hate coconut so used pecans, walnuts, almonds, dried pineapple and apricots and of course oats. Used up maple flavored margarine instead of butter, thought might be too sweet so only added 1/4  cup honey. Appreciate food science of baking soda in this. It came out fabulous even though I burned it a little, more brown than golden. Still yummy. Can't wait to try again with other fruits, nuts. Thanks!!!

I searched for lighter granola without boatloads of sugar, dried fruit, etc.  Just healthier, crunchy, and versatile.  This one checked all the boxes in a very delicious and gratifying way!

I've tried a lot of Granola recipes and this one has changed my world!  I didn't skimp on anything, added dried cherries, cranberries, and raisins.   I eat this as is, with chocolate chips, and in my yogurt.   Thank you for sharing this recipe!!

I’ve made this recipe for a couple years now and finally wanted to thank you for it. It has become my GoTo granola. My Son in law requests it for hunting trips, my college granddaughters NEED it for their dorms and my husband has it EVERY morning with berries and yogurt. Thank you again for making my family, and me very happy and I add piñon nuts, pepitas and cinnamon . Yummmm

A homemade healthy Granola recipe that is incredibly easy to make and perfect for a quick breakfast or snack idea. At just 100 calories per serving you can feel good adding this granola to your morning yogurt, or even eating it plain with a bowl of milk.

These fluffy &amp; healthier chocolate chip pancakes make the perfect dairy-free &amp; egg-free pancakes for brunch!

Vegan Chocolate Chip Pancakes

almond milk (or any plant-based milk- soy, rice, oat, etc)

apple cider vinegar

maple syrup

vanilla bean paste (or vanilla extract)

cup+ 2 Tablespoons whole wheat flour

cornstarch

baking powder

vegan chocolate chips (use sugar-free to keep these refined sugar-free)

First, add the milk and apple cider vinegar to a mixing bowl and let sit 5-10 minutes until milk &quot;curdles&quot; and becomes a vegan buttermilk.

Then add in the maple syrup and vanilla and whisk to combine.

Next,  add in the sifted all-purpose flour, cornstarch, baking powder, baking soda, and salt. Whisk until a smooth batter forms. Start with 1 cup flour and If the batter is too thin add in 1-2 Tbsp more of flour. Expect a semi thin batter (though it should not be watery).

Finally, use a spatula to gently fold in the chocolate chips.

Let the pancake batter rest at least 5 minutes before cooking to get truly fluffy pancakes. *DO NOT SKIP THIS STEP*. The batter may seem a little thin but this resting period thickens it up.

While the batter is resting, heat your pancake cooking surface on medium heat (I use a cast iron pan, but a griddle is also perfect). Spray with non-stick oil or use vegan butter. Then, use a soup ladle to spoon about 1/4-1/3 cup of pancake mix per pancake onto the hot surface. It's very important the surface is hot before adding any batter, or the pancakes spread too much.

Let each pancake cook until the edges look drier, bubbles begin to form on the uncooked surface, and the bottoms are golden. Then use a spatula to flip the pancakes.. Cook the next side until it is golden and the batter in the middle has completely cooked through. Each side should take around 2-3 minutes when cooked at medium heat.

Repeat until all the pancake batter has been used. Make sure to butter or oil the cooking surface between each pancake so they do not stick to the pan. This recipe makes 4-5 medium sized pancakes.

Serve topped with maple syrup or extra melted chocolate. Enjoy!
