best macaroni salad

A super easy creamy pasta salad with sweet bell peppers, sun ripened tomatoes, red onion and crunchy fresh celery.  Serve it with all your favorite grilled meats or in the winter with my oven baked ribs.

Creamy Macaroni Salad

macaroni noodles

mayo

Dijon mustard

cider vinegar

sour cream

orange pepper chopped finely

grape tomatoes halved

red onion

celery

parsley

Salt & Pepper

Cook noodles according to instructions on box. Drain well.

In large bowl whisk together mayo, mustard, cider vinegar and sour cream. Add the cooked macaroni, peppers, tomatoes, red onion, celery and parsley. Stir gently to combine. Season with salt and fresh cracked pepper to taste.

I don't make my macaroni salad like this. I use elbow macaroni, lots of hard boiled egg (yolks only) I don't like the whites. Green onion, celery, large chunk sweet pickle relish, tuna, mayonnaise, a touch of mustard, a touch of vinegar, a touch of sugar. Have to have the egg yolks they give great taste.

Classic Macaroni Salad

elbow macaroni (uncooked (approx. 2 cups dry),

celery (diced)

carrots (shredded)

red pepper (diced)

red onion (diced, or green onion)

mayonnaise

apple cider vinegar (or white vinegar)

sugar

sweet relish

yellow mustard

salt & pepper

Cook elbow macaroni according to package instructions. Drain and rinse under cold water.

Combine dressing ingredients in a small bowl.

Add macaroni, dressing, and remaining ingredients to a large bowl.

Mix well to combine and refrigerate at least 1 hour before serving.

Homemade Macaroni Salad with Shrimp

elbow macaroni, cooked and cooled

dill pickle juice,

can medium deveined shrimp, drained

bell pepper, chopped

carrot, shredded

celery,

green onion, green only, sliced

salt

black pepper

Boil macaroni according to package directions.

When straining rinse with cold water until cool and refrigerate until ready to use.

In a large bowl stir the macaroni with the remaining ingredients.

This macaroni salad is so good that I find myself looking forward to certain events just because I know this dish will be served. The problem is trying to not eat too much because I'm always going for seconds and possibly thirds! Highly recommend this recipe.

dry elbow macaroni noodles

dill pickles

Bring a large pot of salted water to a boil. Prepare the macaroni according to the package instructions, cooking until slightly past al dente. Drain and toss with a drizzle of olive oil to prevent sticking, then set aside to cool.

Make the dressing: In a large bowl, whisk together the mayonnaise, pickle juice, vinegar, sugar, mustard, garlic, salt, and several grinds of pepper.

Add the macaroni, red pepper, celery, pickles, and red onion to the bowl with the dressing and stir to combine. Season to taste and chill until ready to serve.
