Duck Fat Potatoes - the world's crispiest, BEST Roast Potatoes!

1.75-2kg/ 3.5-4lb potatoes (, medium to large, Sebago

salt

tbsp semolina ((Note 2))

salt kosher salt)

Duck Fat ((or Goose Fat, Note 3))

tsp rosemary (, roughly chopped)

Sea salt flakes

Peel the potatoes, then cut into 7.5cm / 3&quot; pieces (Note 4).

Preheat oven to 230°C/450°F (230°C fan).

Add 1 tbsp salt then potatoes in a large pot of boiling water. Boil 10 minutes.

Drain potatoes well.

Shake excess water out of pot, return turned off stove. Tip potatoes in then stand for 5 minutes to steam out excess water.

Add 1.5 tsp salt and the semolina. Place lid on then shake the pot up and down vigorously 5 to 7 times to rough up the surface.

Par Boiling &amp; Roughing up:

Pour duck fat into heavy based metal roasting pan (not glass or ceramic, Note 5).

Heat in oven for 5 to 7 minutes until it&#x27;s shimmering and very hot with little wisps of smoke (Note 6)

Working quickly and carefully, remove pan from oven.

Transfer potato in (be CAREFUL!), turn to coat in fat then arrange cut face down.

Roast for 25 minutes. Turn potatoes, roast 15 minutes. Turn again, then roast 10 to 15 minutes until deep golden and super crunchy.

Transfer to warm serving bowl. Sprinkle with sea salt flakes and rosemary, serve immediately!

Prepare Ahead Roast Potatoes

lb potatoes (see note 1)

tbsp flour

tbsp oil

Peel your potatoes and then cut them into quarters (if your potatoes are small only cut them in half)

Place a large pan of water in the hob and bring it to the boil. Add your salt and potatoes.

Cook the potatoes for 10 minutes.

Drain the potatoes. You want to ensure they are really dry, so leave them to stand for a while.

Dry out your pan.

Return the potatoes to the plan.

Sprinkle over the flour.

Place on the lid and give the pan a good shake. You want the edges of the potatoes to get a slight bashed up fluffy look.

At this point you can freeze your potatoes (AND cook them later from frozen!) To do this line two large baking sheets with cooking paper and spread the potatoes out in a single layer. Ensure they aren't touching.

Place the trays into the freezer until the potatoes are frozen. Now you can transfer them to a ziplock bag until needed.

To cook heat the oven to 180ºC and pour the oil (or fat) into a large deep baking tray. (See Notes)

Place the baking tray and oil in the oven for 6 minutes.

Carefully remove it from the oven and tip in the potatoes.

Cook for 30 minutes (if frozen) or 20 minutes if making fresh.

Then turn the oven up to 220ºC and roast them for a further 30 minutes until they are all crispy and golden.
